Number Of Ingredients 8

4 slice ham steaks, 1 inch thick
1/4 c minced white onion
4 Tbsp dark brown sugar, packed
4 Tbsp irish whiskey
2 Tbsp flour
2 Tbsp butter
3/4 c ham stock (better than bouillon)
pepper to taste

Steps:

  • 1. Heat grill.
  • 2. In a medium sauce pan melt butter.
  • 3. Brush ham steaks with butter-reserve the rest.
  • 4. Saute onions in remainder of butter until cooked.
  • 5. Remove from heat and whisk in flour gradually.
  • 6. Slowly whisk in stock, return to heat.
  • 7. Add sugar and bring to the boil.
  • 8. Reduce heat and simmer for 3 minutes.
  • 9. Add Whiskey and season with pepper.
  • 10. If sauce is to thick, add a little bit more whiskey from your glass. Stop whining and just do it.
  • 11. Take your glass and ham steaks to the grill.
  • 12. Grill steaks for 3-4 minutes per side-you want nice golden grill marks, not grilled steak black grill marks.
  • 13. Plate and serve with sauce.

4 ham steaks
2 teaspoons finely chopped onions
1 teaspoon brown sugar
2 teaspoons whiskey
2 tablespoons flour
2 tablespoons butter
3/4 cup water or 3/4 cup stock
salt or pepper

Steps:

  • Brush steaks with melted butter.
  • Snip fat to prevent curling, and grill for 7-8 minutes each side.
  • To make sauce, gently fry onions in remainder of butter until cooked.
  • Remove from heat and stir in flour gradually.
  • Add stock and return to heat.
  • Add sugar and bring to the boil.
  • Simmer gently for about 2 minutes to cook flour.
  • If sauce seems a little thick, add more water.
  • Add whiskey and season to taste.
  • Place gammon steaks on a warmed serving platter and pour on sauce.

1 small onion, finely chopped
1 tablespoon brown sugar
2 tablespoons whiskey
1 teaspoon Dijon mustard
1 teaspoon cider vinegar
2 tablespoons flour
2 tablespoons butter
1 -1 3/4 cup water or 1 -1 3/4 cup stock
salt or pepper

Steps:

  • Brush steaks with melted butter.

4 steaks, sliced (1-inch thick)
1 tablespoon black peppercorns, coarsely crushed
2 -3 garlic cloves, finely chopped
1/2 teaspoon kosher salt
1/4 lb unsalted butter
2 tablespoons chopped onions
1 garlic clove, finely chopped
2 tablespoons whiskey (I like Jack Daniels)
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1 dash Tabasco sauce, if desired but recommended (optional)

Steps:

  • Trim away any excess fat from the steak or steaks.
  • Press the crushed peppercorns and garlic onto both sides of the steak and let it stand at room temperature 1 hour.
  • Heat a heavy iron skillet over high heat.
  • Grease the skillet with a piece of the fat trimmed from the steak.
  • Toss in about half the salt.
  • Sear the steaks quickly on one side, then lift out; add the remaining salt to the skillet, turn the steak and sear the other side.
  • Reduce the heat to moderate and cook the steaks as desired.
  • Remove to a warmed platter.
  • Make the sauce.
  • Pour off fat from the skillet.
  • Melt the butter in the skillet over low heat.
  • Add the onion and garlic and cook slowly until soft, stirring often.
  • Add the remaining ingredients and simmer for 1 to 2 minutes.
  • Pour over the steak or steaks and serve.

4 ounces butter
4 ounces flour
1 1/4 cups milk, warmed
1 teaspoon nutmeg, grated
4 ounces cheddar cheese, grated
4 eggs, hard-boiled, quartered
2 ham steaks
1 teaspoon cayenne pepper
4 tablespoons parmesan cheese, grated

Steps:

  • Heat the butter in a heavy-based saucepan.
  • Stir in the flour and cook gently, stirring, for 1-2 minutes.
  • Gradually add in the warmed milk, stirring well as you do so. Cook, stirring, until the mixture has thickened into a white sauce.
  • Add the nutmeg and Cheddar cheese, stirring well. Cook gently until the cheese has melted.
  • Preheat the broiler.
  • Broil the ham steaks until cooked on one side. Turn over the steaks.
  • Top the uncooked side of the ham steaks with the hard-boiled egg quarters. Spoon over the cheese sauce, sprinkle with the cayenne and Parmesan and cook briefly under the broiler until glazed. Serve at once.
  • Excess sauce can be stored away in a air-tight container for up to two days.
