4 cups peeled diced rutabagas
1/2 cup apple cider or 1/2 cup juice
3/4 cup halved cranberries
2 apples, cored and diced
1/4 cup dark brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter

Steps:

  • Cover the rutabaga with water and boil until just tender.
  • Drain well, and add all the remaining ingredients to the rutabaga.
  • Simmer, stirring frequently, until well amalgamated.

8 tablespoons (1 stick) butter
1 3/4 pounds onions, halved, thinly sliced
2 1/4 pounds rutabagas, peeled, cut into 1/2- to 3/4-inch pieces
2 tablespoons honey

Steps:

  • Melt 5 tablespoons butter in heavy large skillet over medium-low heat. Add onions and sauté until brown, 40 minutes.
  • Meanwhile, cook rutabagas in large pot of boiling salted water until tender, about 20 minutes. Drain well.
  • Melt 3 tablespoons butter in large skillet over medium-low heat. Add rutabagas; sauté until heated through, about 10 minutes. Drizzle honey over. Gently stir in onions. Season with salt and pepper. (Can be made 3 hours ahead. Let stand at room temperature. Rewarm over medium-low heat.)

3 cups diced peeled rutabagas
2 cups diced peeled potatoes
1 pound ground beef
1/2 cup chopped onion
1/2 cup sliced celery
1/4 cup steak sauce
1 teaspoon salt
1/4 teaspoon pepper
Pastry for double-crust pie (9 inches)

Steps:

  • In a large saucepan, cook rutabagas and potatoes in boiling salted water just until tender; drain and set aside. , In a skillet over medium heat, cook beef, onion and celery until meat is browned and vegetables are tender; drain. Add rutabagas, potatoes, steak sauce, salt and pepper. , Line a 9-in. pie pan with bottom pastry. Fill with rutabaga mixture. Top with remaining pastry; flute edges and cut slits in top., Bake at 425° for 10 minutes. Reduce heat to 350°; bake 35-40 minutes longer or until crust is golden.

This is a very intriguing dish. The flavours blend so well it is hard to identify any one of the componants; instead it seems like some new, mysterious veggie.

1 lb white potato
1 lb carrot
1 lb rutabaga
3 tablespoons butter
1 teaspoon salt
pepper
1 egg (optional)

Steps:

  • Peel the rutabaga and cut it in thin slices.
  • Put it in a large pot with plenty of water and bring it to a boil.
  • Meanwhile, peel the carrots and cut them in thick slices.
  • When the rutabaga has been cooking for about 10 minutes, add the carrots.
  • Meanwhile, peel the potatoes, and cut them into large chunks.
  • When the rutabaga has been cooking for 20 minutes (total) add the potatoes, and cook for about another 20 minutes.
  • When all the vegetables are tender, drain them and mash them with the butter, salt and pepper.
  • These are delicious mashed somewhat coarsely and served as-is.
  • You can also purée them very well, beat in the egg, and turn them into a buttered casserole dish, then bake them until lightly toasted on top.
