Grilled Cheese and Fruit Sandwich image

A sturdy bread, such as ciabatta, holds up well on the grill. The cheese melts over pears or apple slices for a crispy sweet sensation.

8 slices white or egg bread, cut 1/2 inch thick
2 tablespoon softened butter
0.25 cup fig or plum jam
4 ounce thinly sliced Havarti or Monterey Jack cheese
1 small pear or apple, thinly sliced
2 tablespoon sliced almonds or chopped pecans, toasted

Steps:

  • Spread one side of each bread slice lightly with softened butter. Spread other side of 4 of the bread slices with jam. Top jam side of bread with cheese. Top cheese with pear and almonds or pecans. Top with remaining bread slices, butter side up.
  • Preheat an indoor electric grill. Place sandwiches on grill rack. If using a covered grill, close lid. Grill sandwiches until bread is golden and cheese is melted. (For a covered grill, allow 3 to 4 minutes. For an uncovered grill, allow about 6 minutes, turning once halfway through grilling.) Or, place sandwiches on a griddle over medium heat. Cook 5 to 6 minutes or until golden and cheese is melted, turning once. Makes 4 sandwiches.

Fiddling around in the kitchen, I was looking for a protein rich snack prior to working out. This sandwich was the result and seemed worth posting. If you think it sounds strange consider the delicious and popular appetizer of baked brie in puff pastry and dried fruit. This is a deconstructed and reconstructed version for one. My version used reduced fat ingredients, but you can use the full fat versions if you like.

2 slices reduced-calorie whole wheat bread
1 1/2 ounces part-skim mozzarella cheese, thinly sliced (another mild flavored semi-soft cheese such as provolone would also work)
1 tablespoon apricot fruit spread or 1 tablespoon apricot preserves
butter-flavored cooking spray or 1 teaspoon butter

Steps:

  • Spread apricot spread on top of one slice of bread, top with cheese and the second slice of bread.
  • Apply light coat of cooking spray to the exterior of bread slices.
  • Place on indoor grill or panini press for 2-3 minutes until bread is crispy and cheese is melted. Serve.
