BLUEBERRY POPOVERS



Blueberry Popovers image

A special popover recipe to serve at your next brunch. Eggy and rich but not too sweet and quite impressive, but simple. Please try the lemon juice and powdered sugar on the top. It really adds to the total flavor!

3 tablespoons butter, cut into 6 equal-sized pieces
1 cup whole milk
3 eggs, beaten
¼ cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup fresh blueberries
1 tablespoon white sugar
1 teaspoon ground cinnamon
¼ cup confectioners' sugar, or to taste
1 lemon, halved

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Put a piece of butter into each of 6 large muffin cups.
  • Put muffin tin in preheated oven until butter melts, about 5 minutes. Set aside.
  • Beat milk, eggs, 1/4 cup sugar, and vanilla together in a large bowl. Whisk flour into the milk mixture until you have a batter. Divide batter between muffin cups. Drop even amounts of blueberries into each batter portion. Stir 1 tablespoon sugar and cinnamon together in a small bowl; sprinkle evenly over the batter portions.
  • Bake in preheated oven for 5 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until popovers are no longer moist in the center, about 25 minutes. Dust tops of popovers with confectioners' sugar. Squeeze lemon juice over popovers. Serve warm.

Family members have been making these since the 1980's when we found the recipe from Pilsbury Hungry Jack Biscuits. If you love fried pies, this is better as it is baked and not fried. Made these today (12/25/13) with apple and cranberry filling! :)

1 can(s) refrigerated big flaky biscuits
2/3 c sugar
3/4 tsp cinnamon
1/4 tsp nutmeg
1 1/4 c chopped, peeled apples
1/4 c margarine or butter, melted

Steps:

  • 1. Heat oven to 375. Separate dough into 10 biscuits. Press or roll each to a 4 inch circle.
  • 2. In a small bowl, combine sugar, cinnamon and nutmeg. Spoon about 2 tablespoons apples onto center of each flattened biscuit. Spoon 1 teaspoon sugar mixture over apples. Fold dough in half over filling: press edges with fork to seal.
  • 3. Dip both sides of each in margarine, then in remaining sugar mixture. Place in ungreased 13 x9 inch pan or jelly roll pan. Bake for 15-20 minutes or until golden brown. Remove from pan to cool. Serve warm or cool.

RASPBERRY-ALMOND FOLDOVERS

Enjoy these cheesy baked foldovers filled with raspberry jam and sprinkled with almonds - a perfect dessert.

1 cup Gold Medal™ all-purpose flour
1/2 cup butter or margarine, softened
4 oz (half of 8-oz package) cream cheese, softened
1/2 teaspoon almond extract
1/4 cup seedless raspberry jam
1 egg white, beaten
2 tablespoons sliced almonds
2 teaspoons sugar

Steps:

  • In medium bowl, beat flour, butter, cream cheese and almond extract with electric mixer on medium speed until well blended and crumbly. Press dough into ball; flatten slightly, wrap in plastic wrap and refrigerate about 1 hour 30 minutes or until firm.
  • Heat oven to 375°F (if using dark or nonstick cookie sheet, heat oven to 350°F). Divide dough in half (refrigerate half of dough until needed). On lightly floured surface, roll half of dough 1/4 inch thick. Cut into 2 1/2-inch rounds. On ungreased cookie sheet, place rounds 1/2 inch apart. Reroll any remaining dough.
  • Place 1/4 teaspoon of the jam off center on each cookie to within 1/4 inch of edge. Fold cookies in half over jam; press edges firmly with fingers. Seal edges with tines of fork. Brush cookies with egg white. Sprinkle with almonds and sugar.
  • Bake 11 to 15 minutes or until edges are golden brown and tops are lightly browned. Immediately remove from cookie sheet to wire rack. Cool completely, about 15 minutes.

1/2 c butter or margarine, softened
1/4 c packed brown sugar
1/2 tsp baking soda
1/2 tsp ground coriander
1/4 tsp salt
1 medium egg
1 tsp pure vanilla extract
2 1/4 c all purpose flour
1/4 c apple or red currant jelly
1/2 c chopped, mixed dried fruit
1/3 c finely chopped pecans or walnuts
sifted confectioner's sugar

Steps:

  • 1. Preheat oven to 375 degrees Fahrenheit (190 C/Gas Mark 4)
  • 2. In a mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, baking soda, coriander, and salt; beat until combined. Beat in egg and vanilla. Beat in as much of the flour as you can with mixer. Stir in any remaining flour with a wooden spoon. Divide dough in half. Cover and chill for 3 hours, or until easy to handle.
  • 3. Meanwhile in a small sauce pan heat apple or red currant jelly until melted. Remove from the heat. Stir in the dried fruit and pecans or walnuts.
  • 4. On a lightly floured surface roll each half of the dough between two sheets of parchment paper to an 1/8 inch thickness. Using a 2 1/2-inch round cookie cutter cut into rounds. Place cookies 1/2 inches apart on ungreased baking sheet. Spoon 1 teaspoon of dried fruit mixture onto the center of each round and fold in half. Seal cut edges of each round with a fork.
  • 5. Bake 7-9 minutes or until bottoms are lightly browned. Transfer cookies to a wire rack to cool. Sprinkle lightly with sifted confectioners' sugar.

FETA CHEESE FOLDOVERS

Golden puffed pastries are filled with a feta cheese mixture. These can be made ahead, and popped into the oven after your guests arrive.

3 tablespoons finely chopped green onions
1 egg, beaten
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg yolk, beaten with 1 teaspoon water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a small bowl, blend feta cheese, green onions, and egg. Cut pastry into 12 (3 inch) squares. Place a mounded tablespoon of feta mixture in the center of each square. Moisten edges with water, and fold pastry over filling to form a triangle. Press edges together firmly with a fork to seal. Lightly brush pastries with the egg yolk mixture.
  • Bake for 20 minutes in the preheated oven, or until golden brown. Serve warm or at room temperature.

1 1/2 cups thinly sliced peeled apples (1 1/2 medium)
1/4 cup packed brown sugar
2 tablespoons water
1 teaspoon lemon juice
1 tablespoon all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
1 tablespoon butter or 1 tablespoon margarine
1/2 teaspoon vanilla
1 refrigerated pie crust (from 15-oz box)
1 egg

Steps:

  • In 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and the lemon juice.
  • Cook over medium heat, stirring occasionally, until bubbly.
  • Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender.
  • In small bowl, mix flour, granulated sugar and salt.
  • Gradually stir into apple mixture, cooking and stirring until mixture thickens.
  • Remove from heat; stir in butter and vanilla.
  • Cool 15 minutes.
  • Meanwhile, heat oven to 375°F
  • Let pie crust pouch stand at room temperature for 15 minutes.
  • Remove pie crust from pouch; unroll crust on ungreased cookie sheet.
  • Spoon cooled fruit mixture evenly onto half of crust to within 1/2 inch of edge.
  • In small bowl, beat egg and 1 tablespoon water; brush over edge of crust.
  • Fold untopped half of crust over apple mixture; firmly press edge to seal.
  • Flute edge; cut small slits in several places in top crust. Brush top with remaining egg mixture.
  • Bake 25 to 35 minutes or until crust is golden brown. Serve warm or cool.

1/2 cup butter
4 oz sharp American cheese
1 1/3 cups flour
2 Tbsp water
1 cup dried apricots
1 cup sugar

Steps:

  • Cream butter and cheese till light. Blend flour into the creamed mixture. Add water and mix well. Chill 4 to 5 hours.
  • Meanwhile, cook dried apricots according to the package directions. Drain well. Stir sugar into hot fruit; cook and stir till mixture boils and becomes smooth; cool.
  • Divide chilled dough in half. Roll each half to 10-inch squares; cut 2 1/2 inch squares. Place 1 tsp. apricot filling in each 2 1/2 inch square. Bring up diagonal corners and seal.
  • Bake on ungreased sheets at 375 degrees F for 8 to 10 minutes.

Original Bisquick® mix provides a simple addition to these foldovers featuring broccoli, ham and cheese - a flavorful dinner.

1 cup boiling water
1 box (10 oz) frozen broccoli & cheese flavored sauce
2 cups finely diced cooked ham
1/2 cup cheese-flavored French-fried onions
1/2 cup shredded Cheddar cheese (2 oz)
1 egg
1 tablespoon water
1 tablespoon grated Parmesan cheese, if desired

Steps:

  • Heat oven to 375°F. Spray 2 cookie sheets with cooking spray. In large bowl, stir Bisquick mix and boiling water until dough forms. Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Knead 20 times. Divide dough into 6 balls. Return balls to bowl; cover with plastic wrap.
  • Cook broccoli & cheese sauce as directed on box; empty into medium bowl. Stir in ham, onions and Cheddar cheese; set aside. In small bowl, beat egg and water with fork or wire whisk until blended; set aside.
  • Pat or roll 1 ball of dough into 7-inch round. Spoon about 1/2 cup ham mixture onto half of the round; moisten edge of round with water. Fold other half of dough round over filling; press edge with fork to seal. Place on cookie sheet. Repeat with remaining dough and filling.
  • Brush tops of foldovers with egg mixture; sprinkle each with 1/2 teaspoon Parmesan cheese. Cut 3 slits in top of each for steam to escape. Bake 25 to 30 minutes or until golden brown.

2 cups all-purpose flour
¼ cup white sugar
⅛ teaspoon salt
1 (8 ounce) package cream cheese
1 cup butter
1 cup crushed pineapple pie filling
1 cup confectioners' sugar
½ teaspoon rum flavored extract
1 ½ tablespoons water
2 teaspoons light corn syrup

Steps:

  • In a large bowl mix the flour, white sugar and salt. Cut in the cream cheese and the butter until the mixture resembles coarse crumbs. Work dough with hands until it holds together. Divide dough into four balls, wrap in wax paper and refrigerate for 2 hours or until dough is firm
  • Preheat oven to 350 degrees F (175 degrees C).
  • On a lightly floured surface roll one of the dough balls into a 10 inch circle. Use a 3 inch cutter to cut the dough into circles. Place 1/2 teaspoon of pie filling in the center of each circle. Moisten edge of dough and fold over. Seal edge by pressing with the tines of a fork dipped in flour. Place on an ungreased baking sheet. Repeat with remaining dough.
  • Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes or until golden. Once cool drizzle with glaze.
  • To Make Glaze: Combine the confectioners' sugar, rum flavoring, water and corn syrup. Mix until smooth. Keep covered until ready to use.
