1/2 cup plain yogurt
1/2 cup mayonnaise
1 tablespoon honey
1-1/2 teaspoons curry powder
1/4 teaspoon salt
Dash pepper
4 cups cubed cooked turkey
1/2 cup chopped apple
1/3 cup chopped celery
1/3 cup chopped walnuts, toasted
1/3 cup dried cranberries
5 cups torn mixed salad greens

Steps:

  • In a large bowl, combine the first six ingredients. Stir in the turkey, apple, celery, walnuts and cranberries. Divide salad greens among five serving plates; top with turkey mixture.

1/2 cup Yoplait® Original fat-free plain yogurt or fat-free sour cream
1/4 cup fat-free mayonnaise
2 teaspoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves, crushed
1/2 teaspoon grated lemon peel
2 teaspoons lemon juice
1 lb cooked skinless turkey breast, cut into 1/2-inch cubes
2 medium celery stalks, chopped
1 apple, cut into 1/2-inch cubes
1/3 cup dried apricots, sliced
3 tablespoons coarsely chopped walnuts, toasted

Steps:

  • In large bowl, stir together yogurt, mayonnaise, thyme, lemon peel and lemon juice. Add turkey, celery, apple and apricots. Toss gently to coat.
  • Sprinkle with walnuts.

½ cup mayonnaise (such as Duke's)
2 tablespoons sour cream
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
¾ cup finely chopped celery (¼-inch cubes) (about 2 medium stalks)
¼ cup finely chopped shallot (from 1 shallot)
4 cups shredded (2-inch pieces) cooked turkey breast (1 lb.)

Steps:

  • Stir together mayonnaise, sour cream, parsley, vinegar, mustard, salt, and pepper in a bowl. Fold in celery and shallot until well combined.
  • Fold together turkey and mayonnaise mixture in a large bowl until fully coated. Store in an airtight container in refrigerator up to 4 days.

THANKSGIVING FRUIT SALAD



Thanksgiving Fruit Salad image

Seasonal fall fruits marinated in a bright citrus, herb and spice syrup make a fresh way to finish off your Thanksgiving dinner. The longer the fruits marinate, the deeper the flavors of the dish.

1/2 cup sugar
1/2 cup dried cranberries
2 sprigs rosemary
1 cinnamon stick
2 navel oranges
1 cup seedless red grapes, halved
1 cup seedless green grapes, halved
1 cup pomegranate seeds
2 ripe pears, preferably Bartlett or Comice, cored and cut into bite-size pieces
2 sweet, crisp apples, such as Honeycrisp or Pink Lady, cored and cut into bite-size pieces

Steps:

  • Add the sugar, dried cranberries, rosemary, cinnamon stick and 1/2 cup water to a small pot. Using a vegetable peeler, peel 1 large strip of zest from one of the oranges and add to the pot. Set over medium heat, bring to a simmer and cook, stirring to dissolve the sugar and pressing the solids down into the mixture, until slightly thickened, about 5 minutes. Turn off the heat and cool the syrup to room temperature.
  • Discard the rosemary, cinnamon and orange zest. Strain the syrup through a sieve into a small bowl; set aside. Add the cranberries to a large bowl.
  • Remove the remaining zest from the oranges using a paring knife, following the shape of the fruit. Carefully cut between the sections to release whole segments and add to the bowl with the cranberries. Add the red and green grapes, pomegranate seeds, pears and apples to the bowl and toss together.
  • Pour half the reserved syrup over top of the fruit and toss to coat. Cover the bowl with plastic wrap and refrigerate, tossing occasionally, for at le1 hour and up to 4 to let the fruit marinate in the syrup. Before serving, taste and add additional syrup as desired.

Although it is not too easy to come up with leftover turkey, this recipe is worth it. I use turkey breasts for this recipe. It is very refreshing, especially served with a small salad and french bread.

1 can(s) pineapple tidbits, drained, juice reserved
3 tablespoon(s) orange juice, thawed concentrate
1/2 cup(s) pineapple juice
1/2 to 3/4 cup(s) mayonnaise or miracle whip
1/4 to 1/2 teaspoon(s) ginger (powdered
1/8 to 1/4 teaspoon(s) pepper
1 - apple (large) i prefer jonagold, choped into 1/2 in cubes
1/2 - 3/4 cup(s) pecans, in pieces or walnuts in pieces
TO MAKE IT EASIER - I FOUND TURKEY CHUNKS IN THE REFRIGERATED SECTION

Steps:

  • Pour apples, pineapple into a bowl.
  • Mix together the mayonnaise, orange juice concentrate, pineapple juice, ginger and pepper.
  • Add turkey to the fruit.
  • Pour sauce over the mixture. Refrigerate and allow salad to marry tastes for about an hour
  • Serve over chopped salad or chopped lettuce, adding 1 TB pecans over the top. Add warmed french bread, veggie tray, iced tea or iced herbal tea for a nice lunch or dinner

4 cups mixed salad greens
10 oz cooked turkey or chicken
2 medium stalks celery
1 medium green onion with top
1 can (11 oz) mandarin orange segments
1 can (8 oz) sliced water chestnuts
1 container (6 oz) peach, orange or lemon yogurt (2/3 cup)
1/4 teaspoon ground ginger
1 cup seedless green grapes

Steps:

  • Wash the salad greens, let drain and refrigerate.
  • Cut the turkey into 1/2-inch pieces to measure 2 cups. Thinly slice the celery to measure 1 cup. Peel and cut the green onion into 1/8-inch slices. Drain the orange segments and water chestnuts in a strainer.
  • In a large bowl, mix the yogurt and ginger. Stir in the turkey, celery, onion, orange segments, water chestnuts and grapes. Cover with plastic wrap; refrigerate at least 2 hours.
  • On 4 plates, arrange the salad greens. Top greens with turkey salad.
