SPIKED SUMMER FRUIT SALAD



Spiked Summer Fruit Salad image

Sneak a bit of coconut-flavored rum into this honey-ginger fruit salad.

Number Of Ingredients 6

2 navel oranges
3 cups mixed blueberries and blackberries
3 ripe peaches or nectarines, pitted and chopped
1/4 cup honey
One 1-inch piece ginger, thinly sliced
2 tablespoons coconut-flavored rum

Steps:

  • Trim off all the peel and white pith from the oranges. Halve lengthwise and then slice crosswise into half-moons. Transfer to a large bowl and add the mixed berries and peaches.
  • Combine the honey, 1/4 cup water and ginger slices in a small saucepan and bring to a simmer over medium heat, about 3 minutes. Remove from the heat, stir in the rum and strain over the fruit and toss well. Set aside to cool and allow the flavors to blend, at least 30 minutes. Serve at room temperature or refrigerate until cold.

A light honey and lime dressing brings out the flavor of canned and fresh fruits. This is a colorful addition to any early-morning meal.

1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) pineapple chunks, drained
1 cup green grapes
1 cup halved fresh strawberries
1 medium firm banana, sliced
3 tablespoons honey
2 teaspoons lime juice
1/4 teaspoon grated lime zest
1/4 teaspoon vanilla extract
1/4 teaspoon poppy seeds
Fresh mint, optional

Steps:

  • In a large bowl, combine fruit. In a small bowl, combine the honey, lime juice, zest and vanilla. Pour over fruit; gently toss to coat. Sprinkle with poppy seeds. Garnish with mint if desired.

3 tablespoons dark rum
1 teaspoon Angostura bitters (optional)
1 large orange
1 large golden delicious apple, unpeeled, cored, diced
1 pear, unpeeled, cored, diced (Fuji can be substituted)
1 banana, peeled, sliced
1 cup seedless grapes (red and green)
1 cup strawberry, hulled, halved
1 cup raspberries (and or or blueberries)

Steps:

  • Whisk honey and rum in large bowl to blend. Cut away peel and pith from orange. Working over same bowl, cut between membranes to release orange segments and juice into bowl. Mix in remaining fruit. Chill at least 30 minutes and up to 4 hours.

1 honeydew melon - peeled, seeded, and cubed
4 large fresh peaches - peeled, pitted, and sliced

2 large mangoes - peeled, seeded, and chopped
4 kiwis, peeled and sliced
1 pint blueberries
1 pint fresh raspberries
1 cup heavy whipping cream
½ cup confectioners' sugar
½ cup coconut-flavored rum (such as Malibu®)
1 cup miniature marshmallows
½ cup shredded coconut

Steps:

  • Combine cantaloupe, honeydew melon, peaches, oranges, strawberries, mangoes, kiwis, blueberries, and raspberries in a large bowl.
  • Whisk cream, confectioners' sugar, and rum together in a bowl until smooth; fold in marshmallows. Pour cream mixture over fruit and toss to coat. Cover bowl and refrigerate, stirring frequently, until chilled and flavors soak into fruit, 8 hours to overnight.
