My husband's adviser fixed this salad as a side dish one evening when we went to her house for dinner. After I took the first bite, I asked her if she would give me a copy of the recipe. I feel that the salad is best eaten fresh.

1 1/4 cups basmati rice
1/4 teaspoon turmeric
2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, crushed
1 cup blanched almond
1/2 cup pine nuts
1 lemon, juice of
2/3 cup apricot, sliced
1/3 cup sultana
3 tablespoons coriander, chopped

Steps:

  • Half fill a large saucepan with water and bring to a boil.
  • Rinse rice in a sieve until water runs clear, then add rice and turmeric to the pan and boil, uncovered for 10-12 minutes, until rice is tender.
  • Drain in strainer and place in a bowl.
  • Meanwhile, heat the oil in a saucepan, add onion and garlic and cook gently for 5 minutes.
  • Turn up the heat, add the almonds and pine nuts and cook for 5 minutes longer, stirring often, until onion and nuts are golden brown.
  • Add the onion mixture to the rice, along with 1 tablespoon of lemon juice (which will immediately turn the rice bright primrose yellow), the apricots, coriander, salt, and pepper.
  • Taste and add more lemon juice if necessary. Serve.

1 cup uncooked instant rice
1/2 cup Yoplait® Original 99% Fat Free pineapple or piña colada yogurt (from two 6-oz containers)
1/4 teaspoon ground cinnamon
1 cup frozen (thawed) whipped topping
1 medium unpeeled eating apple, coarsely chopped
1 medium unpeeled pear, coarsely chopped
1 cup seedless grape halves

Steps:

  • Cook rice as directed on package. Place cooked rice in wire mesh strainer or colander with small holes. Rinse with cold water to chill; drain well.
  • In large bowl, mix yogurt and cinnamon. Fold in whipped topping. Gently stir in rice and remaining ingredients.

1 2/3 cups water
1 container (8 oz) lemon or orange low-fat yogurt
1 tablespoon honey
1 cup fresh strawberries, cut in half
1/2 cup seedless green grapes, cut in half
1 kiwifruit, peeled, cut into 1/4-inch slices, slices cut into quarters
1 medium seedless orange, cut into 1-inch pieces (1 cup)
1 teaspoon chopped fresh or 1/4 teaspoon dried mint leaves

Steps:

  • Cook wild rice in water as directed on package. Place cooked wild rice in colander or strainer; rinse with cold water 5 minutes to chill.
  • In medium bowl, mix yogurt and honey. Add cooked wild rice and remaining ingredients; toss.

I am 55 and it seems like ahundred years ago that my whole family was at my grandmother's house for a week in summer. My cousin was in high school home economics and this was a recipe she made. I loved it although I have almost completely changed the fruits in it. It has become a holiday tradition.

1 15.5 ounce can crushed pineapple, save liquid
1 can del monte tropical fruit salad, save liquid
1 c minute rice
2 tsp lemon juice
1 1/2 c miniature marshmallows
1 ripe banana sliced
1 pomegranate cleaned (optional)
1 c heavy whipping cream
1 small jar marashino cherries, drained and lightly rinsed
1/2 tsp salt

Steps:

  • 1. Drain pineapple and fruit salad, reserving syrup in saucepan, combine uncooked rice, 1 cup reserved mixed fruit syrup and 1/2 teaspoon salt. Stir to moisten rice. Bring to a boil; cover; simmer 5 minutes.
  • 2. Remove from heat and let stand 5 minutes. Cool completely.
  • 3. Add pineapple and fruit, cool.
  • 4. Stir in marshmallows and sliced banana that has sprinkled with lemon juice. Beat the cream till stiff peaks form. Fold in cream and cherries. Chill.
  • 5. Notes: I had never seen a pomegranate until I was 35 years old. I have since found the very best way in the world to clean a pomegranate I think. Get a big deep bowl and put in the sink and fill with cold water and let the water stay on at a slow run. As you break apart the fruit the heavy juice laden seeds drop to the bottom, the juice from the seeds you burst floats away as does the much lighter empty seed and fruit pith.

3/4 cup uncooked instant brown rice
2/3 cup Yoplait® Fat Free plain yogurt or Yoplait® 99% Fat Free creamy vanilla yogurt (from 2-lb container)
1 can (8 oz) pineapple tidbits in juice, drained, 1 teaspoon juice reserved
2 kiwifruit, peeled, sliced
1 medium mango, peeled, seeded and chopped (about 1 cup)
1 can (5 oz) white tuna in water, drained, flaked
1 tablespoon coconut, toasted*

Steps:

  • In 1-quart saucepan, heat water to boiling. Stir in rice. Reduce heat to low; cover and simmer 10 minutes. Uncover; cool 15 minutes. Refrigerate at least 1 hour or until cold.
  • In medium bowl, mix rice, yogurt and reserved pineapple juice. Cover; refrigerate 1 to 2 hours to blend flavors.
  • Cut kiwifruit slices into fourths. Gently stir kiwifruit, pineapple, mango and tuna into rice mixture. Sprinkle with coconut. Store covered in refrigerator.

4 medium bananas

2 tablespoons chopped pimiento
