1 head romaine, torn
1 can (11 ounces) mandarin oranges, drained
1 cup seedless red grapes, halved
1/2 cup slivered almonds, toasted
DRESSING:
1/4 cup vegetable oil
3 tablespoons sugar
3 tablespoons lemon juice
1/4 teaspoon grated lemon zest
Dash salt and pepper

Steps:

  • In a large bowl, gently toss the romaine, oranges, grapes and almonds. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.

SALAD:
1/4 cup olive oil
2 tablespoons plus 2 teaspoons sugar
2 tablespoons white vinegar
1 tablespoon minced fresh parsley
1/4 teaspoon salt
Dash hot pepper sauce
1/3 cup sugar
1 cup pecan halves
2 tablespoons butter
4 cups torn fresh spinach
4 cups torn romaine
1 can (15 ounces) mandarin oranges, drained
2 celery ribs, chopped
1 cup sliced fresh strawberries
4 green onions, chopped

Steps:

  • 1. For dressing, in a small bowl, whisk the oil, sugar, vinegar, parsley, salt and pepper sauce until blended. Cover and refrigerate. 2. In a large heavy skillet, melt sugar over medium-low heat without stirring until golden brown, about 30 minutes. Add pecans and butter; stir constantly until butter is melted and pecans are coated. Remove from the heat. Pour onto a foil-lined baking sheet; cool completely. Break pecans apart if necessary. 3. In a salad bowl, combine the spinach, romaine, oranges, celery, strawberries and onions. Just before serving, drizzle with dressing; toss to coat. Top with sugared pecans.

¾ cup diced tomato
¾ cup dried cranberries
½ cup sunflower seeds
⅓ cup almonds
2 tablespoons flax seeds
⅓ teaspoon sea salt
¼ teaspoon chopped garlic
2 tablespoons grated Parmesan cheese, or to taste

Steps:

2 c romaine lettuce, torn (or your favorite)
1 c spinach, torn
1 small pear (or apple) diced
1 celery stalk, sliced
2 Tbsp dried blueberries (or cranberries or raisins)
2 Tbsp chopped walnuts (or favorite nuts)
1 Tbsp mixed seeds (shown; raw pumpkin seeds and raw sunflower seeds)
SIMPLE WALNUT OIL VINAIGRETTE
2 Tbsp walnut oil (or grapeseed or olive oil)
2 tsp lemon juice (or apple cider vinegar)
2 tsp chopped fresh parsley
salt and coarse ground black pepper, to taste

  • 1. Combine all salad ingredients and toss.
