EASY FRUIT JUICE TAPIOCA PUDDING



Easy Fruit Juice Tapioca Pudding image

This is my version of the fruit juice pudding recipe on the Minute Tapioca box. I omitted the sugar from the original recipe which I think is rather unnecessary. Topping the pudding with corn flakes adds a great crunch. Also add chopped nuts and dried fruit if you like. Note: Prep. time includes time taken for cooling.

2 1/4 teaspoons minute tapioca
1 pinch salt
1/2 cup pure unsweetened apple juice or 1/2 cup unsweetened orange juice (or any other fruit juice)
1/2 cup corn flakes
sliced fruit, for topping (optional)

Steps:

  • Mix tapioca, salt and fruit juice in a small saucepan.
  • Let it stand for 5 minutes.
  • Cook on medium heat stirring constantly until mixture comes to a full boil.
  • Remove from heat (The pudding thickens as it cools).
  • Cool 20 minutes, and stir.
  • Top with corn flakes and fresh fruit for a yummy, healthy snack.
  • You can have this warm or chilled-- I like it chilled!

This is the traditional dessert at my community's Swedish smorgasbord. It's a sweet thin-set pudding served with milk or cream. I like this made with grape or any dark red berry juice. From my Grandma's "Swedish Food" cookbook.

1 1/2 cups fruit juice or 1 1/2 cups berry juice
2 1/2 cups water
3/4 cup sugar (to taste)
3 tablespoons cornstarch
slivered almonds, garnish

Steps:

  • Bring juice, water and sugar to boil.
  • Mix cornstarch with a small amount of cold water.
  • Remove saucepan from heat and whisk in cornstarch.
  • Return to heat and bring to boiling point.
  • Simmer 3-5 minutes, stirring occasionally.
  • Remove to serving bowl, cover and chill.
  • Garnish with almonds if desired and serve with cream or milk.

1/3 c sugar
3 Tbsp minute tapioca
1 dash(es) salt
2 c fruit juice (i used orange juice)

Steps:

  • 1. Mix all ingredients in a medium saucepan. Let stand for 5 minutes.
  • 2. Cook on medium heat, stirring constantly, until mixture comes to a full boil. (Pudding thickens as it cools.) Remove from heat.
  • 3. Cool 20 minutes; stir. Stir before serving. Serve warm or chilled.
  • 4. Variation: Grape juice, pineapple juice, apple juice, grapefruit juice, cranberry juice, juice blends or mango nectar can be substituted for orange juice.

This is an "authentic" swedish recipe that comes from a wonderful cookbook from our local nebraska "swedish capital" of Oakland. Great recipes in this book, I cherish it.

1 medium orange
1 quart apple cider
2 cups currant juice or 2 cups cranberry-raspberry juice
1/4 cup sugar
1 cinnamon stick (3 inch)
8 whole cloves
2/3 cup raisins
2/3 cup blanched slivered almonds

Steps:

  • Using a vegetable peeler, cut colored portion from orange in single spiral.
  • Reserve orange for another purpose.
  • In a large pot combine orange peel and the next five ingredients.
  • Let stand 4 hours.
  • Bring to a boil over medium heat.
  • Reduce to low; simmer 30 minutes.
  • Serve hot or cold in punch cups with a few raisins and almonds in each serving.
