CHERRY FRUIT CHEWS

These are rich , moist bars. They travel well. So they are good for gifts you need to send.

Number Of Ingredients 7

1/4 c butter or margarine, softened
1 c granulated sugar
2 large eggs
1 1/4 c bisquick baking mix
1 c chopped walnuts
1 c cut up dates
4 oz jar maraschino cherries, drained and chopped (about 1/3 c.)

Steps:

  • 1. Mix butter, sugar and eggs; stir in bisquick. Gently fold in nuts, dates and cherries. Spread dough in a greased 13x9-inch baking pan. Bake at 350^, for 30 minutes; cool slightly and cut into 1 1/2- inch squares.

This sounds like a good recipe to try out after buying a big package of Bisquick to make Annette's 7-Up Biscuits. Pilfering through my typed recipes today in the Goodies section.

1 c sugar
1 c bisquick
2 eggs, beaten
1 c pecans, chopped
1/4 c butter, melted
1/2 c maraschino cherries, chopped
1 c plumped raisens or dates
confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degrees F. Butter an 13" x" 9" pan.
  • 2. Combine the Sugar, Bisquick, Eggs, & Pecans, the melted Butter, Cherries, Raisins or Dates. Pour into the buttered pan.
  • 3. Bake for 20 minutes. Sprinkle with the Confectioner's Sugar while still warm. Cool in pan for 10 minutes. Loosen edges with spatula & cut into bars.
  • 4. NOTE: The plumped raisins I suppose means if you buy them & they are too dry. You could plump them in some water, maybe hot water. OR one better, maybe the day before plump them in some brandy or some other spirit that suits your fancy.

Number Of Ingredients 6

1 bag (12 oz) white vanilla baking chips (2 cups)
1 bag (7 oz) flaked coconut (about 2 2/3 cups)
1 bag (6 oz) dried cherries or cranberries, coarsely chopped (about 1 1/2 cups)
1 bag (7 oz) dried apricots, chopped (about 1 1/2 cups)
1 bag (6 oz) roasted, salted and shelled pistachio nuts, chopped (about 1 1/2 cups)
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 325°F. Spray 2 large cookie sheets with cooking spray.
  • In large bowl, mix all ingredients except milk with spoon to combine. Pour milk over dry ingredients; stir gently to evenly coat.
  • Spoon heaping teaspoonfuls mixture onto cookie sheets. Moisten fingers with water, and gently form cookies into tighter mounds on cookie sheets.
  • Bake 10 to 12 minutes or until cookies just begin to brown. Cool 1 minute; remove from cookie sheets to waxed paper. Cool completely, about 10 minutes.
