Spring Coleslaw with Fresh Herbs and Light Honey Citrus Vinaigrette image

Slaw
1/2 head green cabbage (about 1 1/2 pounds), cored and very thinly sliced
2 cups arugula, washed and drained
2 cups pea shoots, washed and drained
1 bunch small multicolored carrots or 2 large carrots, julienned
Vinaigrette
1/2 cup extra-virgin olive oil
1/4 cup chopped mixed fresh spring herbs, such as chives, mint, cilantro, parsley, and dill
Zest and juice of 1 lime
Zest and juice of 1 lemon
1 shallot, minced
2 tablespoons sherry vinegar
1 tablespoon honey
Sea salt and freshly ground black pepper

Steps:

  • Slaw
  • Combine the cabbage, arugula, pea shoots, and carrots in a large bowl and toss gently to mix.
  • Vinaigrette
  • Combine the olive oil, herbs, lime zest and juice, lemon zest and juice, shallot, vinegar, and honey in a bowl and whisk to mix.
  • Pour the vinaigrette over the cabbage mixture, season with salt and pepper to taste, and toss gently to mix. Serve at room temperature or refrigerate in an airtight container until ready to serve. (If making ahead of time, wait to add the pea shoots until just before serving.)
  • On the Side
  • The bright mixture of honey and citrus in the vinaigrette makes this slaw the perfect accompaniment for mild fish, like Grilled Grouper with Heirloom Tomato Salsa (page 102) or Chicken Under a Skillet (page 139).

1/2 cup roasted peanuts, roughly chopped, plus more for serving
1/3 cup fresh cilantro leaves, chopped, plus extra leaves for serving
1 serrano chile, julienned
1 large mango, julienned (2 cups)
1/2 medium green papaya, julienned (4 cups)
1/2 bunch scallions (about 4), julienned
2 tablespoons rice vinegar
1 tablespoon plus 1 teaspoon honey
1 teaspoon fish sauce
1/2 teaspoon chili powder
1/4 teaspoon Dijon mustard
Zest and juice of 1 lime
1/4 cup vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • For the slaw: Toss together the peanuts, cilantro, chiles, mango, papaya and scallions in a large mixing bowl.
  • For the vinaigrette: Whisk together the vinegar, honey, fish sauce, chili powder, mustard, lime zest and lime juice in a small mixing bowl. Continue whisking while slowly adding the oil until combined. Season with salt and pepper. Drizzle the vinaigrette over the slaw and toss to combine. Garnish with additional peanuts and cilantro, with a dash of chili powder on top.

1/2 cup honey
1/4 cup white vinegar
3 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (15 ounces) reduced-sugar fruit cocktail, drained
2 cups blueberries
1 cup sliced fresh strawberries
1 medium ripe banana, sliced
1 package (14 ounces) coleslaw mix

Steps:

  • Ia large bowl, combine the yogurt, honey, vinegar, lemon juice, salt and pepper. Add the fruit cocktail, blueberries, strawberries and banana. Stir in coleslaw mix. Serve immediately.
