Here's a recipe that's anything but taxing! Uncle Sam's Pulled Pork is a budget-friendly, weeknight winner. In this recipe, we slow cook boneless pork butt to perfection with some chopped onions and a can of cola. A little BBQ sauce and it's ready to go! Just pile it onto a roll along with some of our homemade coleslaw and you're set for lots of "yum!"

4 pounds boneless pork butt
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, chopped
1 (12-ounce) can cola
1 (28-ounce) jar barbecue sauce
10 hamburger rolls
1 (16-ounce) package coleslaw mix
1/4 cup apple cider vinegar
1 tablespoon vegetable oil
1 tablespoon sugar

Steps:

  • Place pork in a 6-quart slow cooker and sprinkle with salt and pepper. Top with onion then pour cola over meat. Cover and cook on high setting 6 to 6-1/2 hours, or until pork is very tender and falls apart easily.
  • Remove pork to a large cutting board and shred with two forks. Using a slotted spoon, remove onion. Drain liquid from slow cooker, reserving 1 cup. Return meat to slow cooker, add reserved liquid, the barbecue sauce, and onion; mix well. Heat 20 minutes or keep on low until ready to serve.
  • When ready to serve, in a medium bowl, combine coleslaw mix, vinegar, oil, and sugar; mix well. Spoon pork mixture evenly onto bottom of rolls, top with coleslaw and top of roll, and serve.

From Family Fun, this looks like it would be a hit on the 4th of July. Recipe is for one cone, but can easily be increased for a crowd since almost everything is done ahead. The picture on this is adorable.

1 scoop French vanilla ice cream or 1 scoop vanilla ice cream
1 wafer ice cream cones
white frosting
blue fruit leather
red and blue decorating gels
red and blue M&M'
6 1/2 ounces canister of ready-made whipped cream

Steps:

  • Place a scoop of vanilla ice cream on a plate and return it to the freezer to harden.
  • Meanwhile, construct an Uncle Sam hat out of a wafer ice cream cone.
  • Invert the cone so it's upside down.
  • Use frosting to attach a blue band of fruit leather around the bottom of the cone. (Which is actually the top of the cone turned upside down).
  • Squirt 6 vertical stripes of red decorating gel down the sides and blue gel on the top.
  • Using a star tip, squirt on white frosting stars around the blue fruit leather, if desired.
  • TIP: To avoid smudging the Uncle Sam hat design, hold the cone from the inside while decorating it with fruit leather and icing.
  • Remove the ice cream-scoop "head" from the freezer and top with the Uncle Sam hat.
  • Working quickly so the ice cream doesn't melt, add 2 blue M&M's eyes and a red M&M's nose. Finally, add a whipped cream beard.
  • Serve up your Uncle Sam ice cream cone immediately; he goes over well at July 4th celebrations. Makes 1.

My Grandfather (Sam) was famous for this cake. Everyone who knew him, knows of his famous carrot cake. He would always have some available for anyone who wanted it. We'll miss him, but his carrot cake legacy will always live on! Enjoy!

3 eggs
¾ cup buttermilk
¾ cup vegetable oil
1 ½ cups white sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
¼ teaspoon salt
2 cups all-purpose flour
2 teaspoons baking soda
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple with juice
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x12 inch pan.
  • In a medium bowl, sift together flour, baking soda, salt and cinnamon. Set aside.
  • In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well.
  • In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins.
  • Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well.
  • Pour into prepared 8x12 inch pan, and bake at 350 degrees F (175 degrees C) for 1 hour. Check with toothpick.
  • Allow to cool for at least 20 minutes before serving.

6 large eggs
Splash or two of Tabasco or other hot pepper sauce
1 teaspoon salt or more to taste
1/2 teaspoon dried basil or oregano
1/2 teaspoon freshly milled black pepper or more to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium yellow onion, diced
1/2 pound lean freshly ground beef, preferably chili grind (a bit coarser than hamburger grind)
3/4 to 1 pound fresh spinach, preferably the crinkly savoy variety, trimmed of stems and chopped, or one 10-ounce package frozen chopped spinach, thawed and drained

Steps:

  • Crack the eggs into a small bowl and add the Tabasco, salt, basil, and pepper. Whisk just enough to combine; you should still see large bubbles. Set aside.
  • Warm the oil and butter in a large skillet over medium heat until the butter melts. Add the onion and sauté until soft but not beginning to brown, about 4 minutes. Add the ground beef and continue cooking until uniformly brown, breaking the meat into small pieces as it cooks. Cover with the spinach, place a lid over the mixture, and cook for about 3 minutes, just until the spinach wilts. (If using frozen spinach, cook, covered, for 1 minute, just to take off its raw edge.)
  • Stir the spinach into the meat, cooking briefly to eliminate excess liquid if the mixture seems watery. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set. Remove from the heat and stir a few more times, as the eggs cook through from the residual heat. Serve immediately.
