FROZEN MOCHA MOUSSE

7 ounces bittersweet chocolate, divided, plus extra for decorating
3 tablespoons coffee liqueur
3 tablespoons water
2 teaspoons instant espresso granules
6 extra-large eggs, at room temperature, separated
3/4 cup sugar
1/4 cup cocoa powder
1 teaspoon pure vanilla extract
Pinch of kosher salt
2 cups cold heavy cream
1 cup cold heavy cream
1 tablespoon sugar
1/2 teaspoon pure vanilla extract

Steps:

  • Break 3 ounces of the chocolate into pieces and place the pieces in a bowl set over a pan of simmering water. Whisk in the coffee liqueur, water and espresso granules and heat the mixture until the chocolate just melts. Remove from the heat and set aside to cool.
  • Place the egg yolks and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 3 minutes, until the mixture is the texture of mayonnaise. Add the cocoa powder and vanilla, and slowly pour in the cooled chocolate mixture.
  • Put the egg whites and salt in the clean bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the whites form soft (not dry!) peaks. Fold them carefully into the chocolate mixture. In the same bowl (no need to clean it) beat the heavy cream until it forms soft peaks and fold it carefully into the chocolate mixture. Grate the remaining 4 ounces of chocolate and fold it into the mixture.
  • Pour the mixture into a 10-cup souffle dish, cover with plastic wrap and freeze for several hours or overnight.
  • For the whipped cream, place the heavy cream, sugar and vanilla in the bowl of an electric mixer fitted with the whisk attachment, and whip on medium and then high speed until it reach stiff peaks. Spoon the whipped cream into a pastry bag fitted with a large star tip. Pipe the edge of the mousse with the whipped cream, and sprinkle extra chocolate shavings over the center of the mousse for decoration. Serve frozen.

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 375°F. Lightly butter two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottom of pans with parchment paper. Combine chocolate and 2 tablespoons water in top of double boiler set over simmering water. Stir until chocolate is smooth. Remove from over water. Transfer chocolate to large bowl; cool 5 minutes. Whisk egg yolks into chocolate. Beat whites in medium bowl until soft peaks form. Add sugar 1 tablespoon at a time, beating until stiff and glossy. Fold 1/4 of whites into chocolate to lighten. Gently fold in remaining whites in 2 additions just until combined and being careful not to deflate batter.
  • Divide batter between prepared pans (layers will be very thin). Bake until cakes begin to pull away from sides of pans and tester inserted into center comes out clean, about 10 minutes. Cool cakes in pans on rack 1 hour. Carefully invert cakes onto 9-inch-diameter cardboard rounds or tart pan bottoms. Cool cakes completely. Peel off parchment paper.
  • For filling:
  • Line 9-inch-diameter cake pan with 1 1/2-inch-high sides with plastic wrap, leaving 5-inch overhang. Whisk egg yolks, 1/4 cup sugar, and Kahlúa in medium metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Using electric mixer, beat until yolk mixture is thick and instant-read thermometer inserted into mixture registers 140°F for 3 minutes, about 9 minutes total. Remove bowl from over water. Continue to beat mixture until cool to touch, about 3 minutes. Beat whipping cream and espresso powder in another medium bowl until firm peaks form. Fold cream mixture into yolk mixture in 2 additions. Using clean dry beaters, beat egg whites in large bowl until soft peaks form. Gradually add remaining 1/4 cup sugar and beat until stiff and glossy. Gently fold whites into yolk mixture in 2 additions. Fold in chopped chocolate. Carefully place 1 cake layer in prepared pan (cake layer is very delicate). Spread filling evenly over cake (filling layer will be thick). Top with second cake layer; press gently to adhere. Fold plastic overhang over cake, then cover with foil. Freeze cake overnight. (Can be made 3 days ahead. Keep frozen.)
  • For glaze:
  • Bring first 3 ingredients to simmer in small saucepan. Remove from heat. Add chocolate; whisk until smooth. Transfer 1/2 cup glaze to small bowl; chill until cool and very slightly thickened but easily spreadable (if too thick, glaze will not spread smoothly on frozen cake), about 10 minutes.
  • Remove foil and plastic wrap from top of cake. Invert cake onto 9-inch-diameter cardboard round or tart pan bottom; place on rack set over rimmed baking sheet. Working quickly, spread thin layer of chilled glaze over top and sides of cake. Freeze until glaze is set, about 1 hour.
  • Rewarm remaining glaze over low heat until just warm and pourable. Transfer to 1-cup measuring cup. Pour half of glaze over top of cake. Working quickly and using offset spatula, spread glaze over top, allowing excess to run down sides of cake; spread quickly over sides (glaze will harden quickly on frozen cake). Pour remaining glaze over top of cake; spread quickly and smoothly over top and sides. Sprinkle coffee beans around top edge of cake. Freeze until firm and glaze is set, at least 4 hours. (Can be made 3 days ahead. Cover; keep frozen.)
  • To serve, dip long thin sharp knife into hot water, then wipe dry and cut cake into wedges, pulling knife out at bottom of cake to avoid tearing glaze and repeating for each slice.

1/2 teaspoon (scant) vanilla extract
3/4 cup Kahlúa or other coffee-flavored liqueur
Even easier: Instead of making whipped cream, try and organic all-natural aerosol whipped cream, like Clover Farms.
Special Equipment
Ice cube trays (enough to make about forty-five 1 3/4 x 1 3/4 x 1 1/4-inch ice cubes)

Steps:

  • Whisk first 3 ingredients and pinch of salt in medium saucepan. Gradually whisk in 1 cup water, whisking until smooth. Cook over medium-high heat until sugar dissolves and mixture just begins to boil, whisking often, about 3 minutes. Remove pan from heat. Add 1 1/2 cups water and half and half; whisk to blend. Transfer to pitcher. Pour espresso mixture into ice cube trays, filling cubes almost to top (mixture will make about 45 ice cubes). Freeze espresso mixture in trays. DO AHEAD: Can be made 1 month ahead. Store espresso ice cubes in resealable plastic bag and keep frozen.
  • Using electric mixer, beat cream, brown sugar, vanilla, and pinch of salt in medium bowl until peaks form. Cover; chill.
  • Place 6 glass coffee mugs or other glasses in freezer 15 minutes. Working in 3 batches, place 14 espresso ice cubes and 1/4 cup Kahl&eucate;a in processor. Blend until thick and smooth, about 30 seconds. Divide between 2 chilled mugs; place in freezer. Repeat 2 more times with espresso ice cubes, Kahlúa, and chilled mugs. 1/2 cup (unsifted) unsweetened Dutch Process Cocoa
3/4 cup sugar
3/4 cup plus 1/4 cup water
4 teaspoons instant espresso powder or freeze dried instant coffee
2 cups low fat (2 percent) milk

Steps:

  • Combine cocoa and sugar in a medium saucepan. Whisk in 3/4 cup of the water, a little at a time. Bring the mixture to a simmer. Simmer for 2 minutes, stirring constantly. Remove from heat and stir espresso powder and milk. Strain into a shallow pan. Freeze several hours until hard.
  • Break the frozen mixture up with a fork and place the chunks in the bowl of a food processor. Add the remaining 1/4 cup of water and process until no lumps remain and the mixture is thick and slushy and lightened in color. Serve at once in goblets to be eaten with a spoon, or refreeze overnight and scoop like sherbet to serve.

For one serving, halve the ingredients; for four servings, simply double the ingredients. I would presume this can also be made in a regular blender, so I've included directions for either.

2 -3 tablespoons chocolate syrup or 2 -3 tablespoons cocoa powder
1/4 cup milk
1 -2 teaspoon sugar (optional)
1 cup ice

Steps:

  • Fill a blender with a cup of ice or The Magic Bullet's Tall Cup halfway with ice.
  • Add chocolate syrup, milk, and sugar.
  • Add a cup of coffee to the blender and mix until smooth or fill The Magic Bullet's Tall Cup ¾ full with coffee and mix with the Cross Blade until smooth.
  • Pour mixture into 2 coffee cups.
  • If desired, add whipping cream to the Short Cup and blend with the Flat Blade for about 5 seconds or use store-bought whipping cream in the can or make homemade whipping cream (I do this by chilling hand mixer beaters and bowl in the freezer for about 10-15 minutes; then I whip cream and some sugar or Grand Marnier until soft peaks form).
  • Add whipped cream to the top of the coffee mixtures and serve.

1/3 cup semisweet chocolate chips, melted and cooled
1 tablespoon unsweetened cocoa powder
2 tablespoons instant-coffee granules

Steps:

  • Line a 9-by-5-inch loaf pan with 2 sheets of plastic wrap, with long sides overhanging by about 3 inches. Arrange 3 wafers, flat side up, in a row in the bottom of the pan.
  • In a large bowl, beat mascarpone and sugar until light and fluffy. Stir in vanilla. In another bowl, beat cream until it holds soft peaks. In three additions, fold the whipped cream into the sweetened mascarpone with a rubber spatula.
  • In a bowl, mix 1 1/3 cups mascarpone mixture with toffee bits. In a separate bowl, mix another 1 1/3 cups mascarpone mixture with chocolate and cocoa powder. Dissolve the coffee in 1 teaspoon hot water; stir into the remaining mascarpone mixture.

1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1 tablespoon vanilla extract
2 cups heavy whipping cream, whipped
2 tablespoons instant coffee granules
1 tablespoon hot water
1/2 cup chocolate syrup

Steps:

  • Line a 9x5-in. loaf pan with heavy-duty foil. In a small bowl, combine cookie crumbs and butter. Press firmly onto the bottom and 1-1/2 in. up the sides of prepared pan. , In a large bowl, beat cream cheese until light and fluffy. Add milk and vanilla; mix well. Fold in whipped cream. Spoon half of the mixture into another bowl and set aside. Dissolve coffee granules in hot water; fold into remaining cream cheese mixture. Fold in chocolate syrup. , Spoon half of the chocolate mixture over crust. Top with half of the reserved cream cheese mixture. Repeat layers (pan will be full). Freeze, uncovered, for 6 hours or until set. Cover and freeze until serving. Use foil to lift out of pan; cut into slices.

1 cup iced coffee concentrate
1/3 cup half-and-half or milk of choice
1/4 cup chocolate syrup
1/2 - 1 teaspoon ground cinnamon
Pinch cayenne pepper
3/4 cup ice
Whipped cream and additional ground cinnamon for topping

Steps:

  • Place all ingredients in a blender and puree until smooth. Taste and add additional cinnamon if desired (cinnamon can vary in strength, so I suggest you start with 1/2 teaspoon and go from there.) Pour into a large glass and top with whipped cream and sprinkle with additional cinnamon. Plop in a straw and serve.

1 1/4 cups finely crushed Oreo cookies (regular or double stuff)
1/4 cup granulated sugar
1/4 cup melted butter
8 ounces cream cheese
14 ounces sweetened condensed milk
2/3 cup chocolate syrup
2 tablespoons instant coffee
1 tablespoon hot water
1 cup whipping cream, whipped

Steps:

  • Crust: In a small bowl, combine cookie crumbs, sugar & butter. Mix well. Press mixture in a 9in. spring-form or a 13x9 inch pan. Pat evenly to cover all sides and bottom. Place in freezer.
  • Filling: In a large bowl, beat cream cheese until fluffy. Add milk & chocolate syrup. Beat until smooth. In small bowl, dissolve coffee in water. Add to cream cheese mixture & stir well. Fold in whipped cream. Pour filling into chilled pan. Cover & freeze for 6 hours. Sprinkle with additional cookie crumbs.

2 teaspoons instant coffee granules
1 tablespoon hot water
1 1/2 cups crushed cream-filled Oreo cookies (measure after crushing)
1 cup chopped pecans, divided
1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons butter or 2 tablespoons margarine, melted
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup chocolate flavored syrup (I use Hershey's and also homemade)
1 (8 ounce) carton frozen Cool Whip Topping, thawed

Steps:

  • Prepare a 13 x 9-inch baking pan.
  • In a small bowl, dissolve the coffee granules in hot water; set aside.
  • In another bowl, combine cookie crumbs, 1/2 cup chopped pecans and melted butter.
  • Press into the bottom of the pan.
  • In a mixing bowl, beat the softened cream cheese until light and fluffy.
  • Blend in the coffee mixture, sweetened condensed milk and the chocolate syrup; mix to combine.
  • FOLD (do not beat) in the thawed whipped topping.
  • Spread over the crust in pan.
  • Sprinkle the remaining pecans on top.
  • Freeze.

1 1/2 cups sugar
5 tablespoons sifted powdered sugar
7 egg whites, room temperature
2 pints coffee ice cream, softened
1 cup chopped unsalted macadamia nuts
2 pints chocolate chip ice cream, softened
2 cups whipping cream

Steps:

  • Preheat oven to 150 degrees Grease baking sheets, dust lightly with flour. Trace 4 12 inch circles on sheets. Combine sugar, and 4 tablespoons powdered sugar. Using electric mixer, beat whites until soft peaks form. Gradually add sugar mixture and beat until stiff and shiny. Spoon into pastry bag fitted with plan tip. Starting in center of each circle, pile 1 inch thick layer of meringue in spiral pattern. Transfer sheets to oven. Bake 2 hours. Turn off oven and let cooked meringues stand until light in c olor and dry to touch, about 5 hours. Trim 3 meringue rounds to 12 inch spring form pan. Set 1 round in bottom of pan. Spread coffee ice cream. Sprinkle with 1/4 cup nuts. Top with second meringue. Spread with chocolate chip ice cream> Sprinkle with 1/4 cup of nuts. Top with third meringue. Freeze until firm. Coarsely chop fourth meringue round. Beat cream to stiff peaks. Combine remaining 1/2 cup nuts with remaining 1 tablespoon powdered sugar. Remove spring form. Frost top and sides of cake with whipped cream. Press chopped meringue onto sides. Sprinkle nut mixture on top. Freeze until firm. Let soften 30 minutes in refrigerator before serving.
