9 graham crackers, finely crushed (about 1-1/2 cups)
2 Tbsp. sugar
1/4 cup butter, melted
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
6 cups lime sherbet
3 lime slices

Steps:

  • Combine graham crumbs, 2 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese and 1/2 cup sugar in large bowl with mixer until blended. Gradually add sherbet, mixing well after each addition. Pour over crust.
  • Freeze 4 hours or until firm. Remove rim from pan. Garnish dessert with lime slices just before serving.

12 all natural graham crackers, broken into pieces
3 T melted coconut oil
2 c raw cashews, soaked in hot water to cover for at least 4 hours or overnight and drained
1/2 c unsweetened coconut milk (not cream of coconut)
1/2 c fresh lime juice
1/3 c light colored honey or maple syrup
3 T virgin coconut oil, melted
2 T grated lime zest

Steps:

  • Line an 8x8 baking dish with foil so that it extends up the sides and over the edges. Spray with cooking spray. Crust: In a food processor, process the crackers into fine crumbles. Add the melted coconut oil and process again to combine. Pour the crumbs into the prepared pan and press down very firmly with your hands or a sheet of wax paper. Filling: Combine the cashews, coconut milk, lime juice, honey and coconut oil in a food processor and process until very smooth and creamy, scraping down the sides with a spatula as needed. This will take about 5 minutes. Add the lime zest and pulse to combine it well. Spread the filling evenly over the crust. Place the pan in the freezer and freeze until firm, about 2 hours. Lift the cheesecake from the pan using the foil and place on cutting board. Slide the foil out and cut the cheesecake into squares and put back into the freezer. Remove 30 minutes prior to serving and eat while still partially frozen.

1-1/2 cups strawberries, divided
1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.), cubed, softened
1 Tbsp. zest and 2 Tbsp. juice from 2 limes
1/4 cup sugar
1/2 cup whipping cream

Steps:

  • Place 3-oz. paper or plastic cup in each of 12 muffin pan cups. Cut each of 3 strawberries into 4 slices; place in cups.
  • Place remaining strawberries in food processor. Add cream cheese, lime zest, juice and sugar; process until smooth. Spoon into medium bowl. Beat whipping cream in medium bowl with mixer on high speed until stiff peaks form. Gently stir into cream cheese mixture. Spoon into prepared cups. Tap cups on counter to remove any air bubbles. Insert wooden pop stick or plastic spoon into center of each cup for handle.
  • Freeze 4 hours or until firm. Remove frozen pops from cups just before serving.

2 cups Graham crumbs
1/2 cup butter, melted
1/4 cup white sugar
2 250g cream cheese packages
2 cans Eagle Brand condensed milk
1 can frozen lime concentrate (minute maid)
1/2 cup sour cream
2 Eggs
cool whip
9x13 pan

Steps:

  • Line 9x13 pan with 2 cups of graham crumbs, 1/2 cup melted butter and 1/4 cup white sugar. Blend 2 packages of cream cheese with 2 cans of Eagle Brand condensed milk, 1 can of Frozen Lime Concentrate, and 1/2 cup of sour cream. Beat 2 eggs separately and blend in to cream cheese mixture. Fill crust and bake at 350 for 10 minutes. Remove and cool for 45 minutes. Cover with thin layer of cool whip and freeze it.
