FROZEN BERRIES WITH HOT WHITE CHOCOLATE



Frozen Berries with Hot White Chocolate image

1 1/4 pounds good white chocolate, coarsely chopped
2 1/2 cups heavy cream
2 tablespoons pure vanilla extract
2 1/4 pounds frozen mixed berries or frozen raspberries

Steps:

  • Combine the chocolate, heavy cream, and the vanilla in a heat-proof bowl and set it over a pan of simmering water until the chocolate melts.
  • About 5 minutes before serving, remove the berries from the freezer and place them on individual serving plates. Ladle the warm chocolate sauce over the berries and serve.
  • Yield: 8 to 10 servings
  • Note: You can either buy frozen berries, or freeze your own by placing the berries on a flat tray in layer. When the berries are fully frozen, keep them a plastic bag in the freezer. Larger berries, such as strawberries, do not freeze well.

1/2 cup hot cocoa mix (or 2 packets...we use Swiss Miss Milk Chocolate flavor)
1 1/2-2 cups crushed ice cubes
whipped cream (optional)
additional hot cocoa mix (optional)

Steps:

  • Pour milk into blender.
  • Add hot cocoa mix and ice.
  • Blend first at low speed and then high speed until ice is finely crushed and slushy.
  • Pour into tall glass and top with whipped cream and a dusting of hot cocoa mix, if desired.
  • Serve with a straw and enjoy!
  • P.S. This recipe was originally posted using small ice cubes. At our shop we have a commercial blender that has no problem getting through these. Since most people have regular blenders, I have changed it to crushed ice.

1 1/2 teaspoons each: sweetened Van Houton cocoa and Droste cocoa
1 1/2 tablespoons sugar
1 tablespoon sweet butter
1/2 cup milk
3 Godiva flavors, dark and light chocolate to taste
1/2-ounce each of the following worldclass chocolates: Callebaux, Valhrona, Lindt, Cadbury, Aston Berg, Freia, Marabo, Girardelli, Cocoa Barry
1 generous ladle of the Blend of imported chocolates
1/2 pint milk
1/2 quart crushed ice

Steps:

  • Melt the first two cocoas with sugar and butter in a double boiler, creaming to a smooth paste. Add all remaining chocolates and continue melting, slowly dribbling the milk into the mixture, stirring constantly until smooth as silk. Cool to room temperature and use for Frozen Hot Chocolate, substituting 1/2 cup milk for 1/2 pint milk;
  • In a quart blender place all ingredients; blend. As texture smoothens , add more milk or ice to achieve desired consistency. When a thick stage is reached, pour into a grapefruit bowl, top with a mound of whipped cream, sprinkle with grated chocolate. Insert two straws for sipping and an iced teaspoon for devouring.;

1 1/2 tablespoons unsweetened cocoa powder
1 1/2 tablespoons sugar
1/2 cup half-and-half
1 1/2 cups whole milk
4 tablespoons coffee liqueur or brewed espresso
1 teaspoon pure vanilla extract
4 cups ice
Sweetened Whipped Cream, for serving (recipe follows)
Grated bittersweet chocolate, for garnish
Straws, for serving
1 cup cold heavy cream (8 ounces)
2 1/2 tablespoons sugar
1 teaspoon pure vanilla extract

Steps:

  • Break the bittersweet chocolate into pieces and place it in a medium bowl set over a pot of simmering water, stirring occasionally, until just melted. Off the heat, whisk in the cocoa powder, sugar, and half-and-half and set aside.
  • Place 3/4 cup of the milk, 2 tablespoons of the coffee liqueur, 1/2 teaspoon of the vanilla, and half of the chocolate mixture in a blender. Add 2 cups of the ice and blend for several minutes, until the mixture is thick but not icy, like a frozen daiquiri. (You can add a little more milk or ice if it's too thick or too thin.) Pour into two (10-ounce) ice cream soda glasses and top each with a generous dollop of whipped cream and some grated chocolate. Repeat for the second two glasses. Serve ice cold with straws and long-handled spoons.
  • Place the cream, sugar, and vanilla in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the cream forms very soft peaks (don't overbeat or the cream will be too firm).

That's how you make frozen chocolate "hot"! You can still make the recipe without it, but it just won't be the same.

1 (14 ounce) can sweetened condensed milk
1/4 cup milk (at room temperature)
1 (11 1/2 ounce) package milk chocolate chips
2 teaspoons vanilla
1 1/4 teaspoons ground cinnamon
1/8 teaspoon cayenne pepper
2 cups heavy cream
1 (6 ounce) package Oreo cookie pie crusts

Steps:

  • Place beaters and mixing bowl in freezer. (This is for the heavy cream.).
  • Melt chocolate chips in double boiler or microwave. (Two minutes at 50% power usually works.) Cool.
  • In separate bowl, whisk together sweetened condensed milk and milk.
  • Whisk in melted chocolate.
  • Stir in vanilla, cinnamon and cayenne pepper.
  • Take bowl and beaters from freezer. Beat heavy cream until stiff peaks form.
  • Fold in chocolate mixture.
  • Transfer 3 cups mixture to freezer-proof bowl. Cover.
  • Pour remaining mixture into crust.
  • Freeze bowl and pie 2 hours.
  • Top pie with mixture in bowl.
  • Freeze overnight.
  • Top with whipped cream and chocolate shavings, if desired.
  • The preparation time does not include the first 2 hours in the freezer.

Steps:

  • Place semisweet chocolate chips, milk chocolate chips, sugar, hot chocolate mix, and butter into the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate chips start to melt, about 5 minutes.

6 ounces white chocolate, preferably two ounces each of different brands, like Lindt, Valrhona, Callebaut, Nestle Premier, Ghirardelli or Baker's
3/4 cup milk
6 fresh mint leaves plus 1 or 2 sprigs for garnish
Maraschino cherries, candy canes or dark chocolate sprinkles, optional

Steps:

  • Whip cream and refrigerate. Chill 2 10- to 12-ounce goblets, or 1 20-ounce goblet.
  • Break up chocolate, place in heavy saucepan over very low heat and stir until melted. Remove from heat and whisk in half the milk until well-blended.
  • Place remaining milk in blender with chocolate mixture, mint leaves and 2 cups ice. Blend at high speed until smooth and frothy and ice is pulverized. Pour into goblets, top with whipped cream, mint sprigs and optional cherries, candy canes or sprinkles. Serve at once.

6 oz chopped semi-sweet chocolate
3 c whole milk, divided
1 Tbsp powdered hot chocolate
1 tsp powdered hot chocolate
3 Tbsp sugar
6 ice cubes
whipped cream

Steps:

  • 1. Place chopped chocolate and 1/4 cup of the milk in a microwave-safe container. Heat on 50% power for 1 minute. Stir.
  • 2. Heat on 50% power for 30 seconds. Stir. If necessary, continue heating in 30-second increments until chocolate is melted.
  • 3. Add hot chocolate mix and sugar. Stir.Add hot chocolate mix and sugar. Stir.
  • 4. Slowly pour in 1/2 cup of the milk. Stir, and let cool to room temperature.

  • snip the corner, and pipe into 1 or 2 oz disposible cups with lids

Boozy Frozen Peppermint Hot Chocolate image

I've created a few frozen hot chocolates in my day, but this boozy version ranks up there as No. 1-especially if you're a chocolate-peppermint lover. I totally am, especially at this time of year. But if you don't like mint with chocolate, you can add another flavor here and swap out the peppermint. Maybe a coffee liqueur? Maybe a white chocolate liqueur? Maybe even bourbon or spiced rum.

  • Heat the milk and cream in a saucepan over medium heat, just until the edges are bubbling. Stir in the chopped chocolate and turn off the heat. Stir until the chocolate melts. Remove from the heat and let cool for 10 to 15 minutes.
  • Stir in the vanilla extract, then stick the pot in the fridge to cool completely, about 45 minutes.
  • Remove the pot and add the chocolate mixture to a blender. Add the schnapps and 2 cups of ice and blend until smooth and creamy. Pour evenly between 2 glasses and top with whipped cream and crushed peppermints.
