Crust
Nonstick vegetable oil spray
22 chocolate wafer cookies
3 tablespoons sugar
1/4 cup unsalted butter, melted
Filling
1 cup whole milk
Pinch of salt
3 large egg yolks
2 tablespoons cornstarch
6 ounces good-quality white chocolate (such as Baker's or Lindt), chopped
2 tablespoons unsalted butter
2 tablespoons green crème de menthe
2 tablespoons light crème de cacao
3/4 cup chilled whipping cream
Shaved white and dark chocolates

Steps:

  • For crust:
  • Spray 9-inch-diameter glass or ceramic pie dish with nonstick spray. Finely grind chocolate cookies and sugar in processor. Blend in butter. Press crumb mixture onto bottom and up sides of prepared dish. Freeze.
  • For filling:
  • Combine milk and salt in heavy small saucepan. Bring to simmer. Whisk egg yolks and cornstarch in medium bowl to blend well. Gradually whisk in hot milk mixture. Return mixture to same saucepan. Stir over medium-low heat until mixture thickens, about 6 minutes. Remove from heat. Add white chocolate and butter; whisk until smooth. Transfer custard to large bowl. Whisk in crème de menthe and crème de cacao. Set custard over another large bowl of ice water until cold and thick but not set, stirring often, about 30 minutes.
  • Whip cream in medium bowl until stiff peaks form. Stir 1/3 of whipped cream into custard. Fold in remaining whipped cream. Pour filling into crust. Freeze at least 5 hours or up to 2 days.
  • Garnish with shaved chocolates.

When I first started experimenting with cream pies, this seemed like the right recipe to create for a house of chocolate lovers. I guessed right. 1-1/4 cups chocolate wafer crumbs (about 22 wafers)
1/4 cup sugar
1/4 cup butter, melted
FILLING:
1 package (10 ounces) miniature marshmallows
1/3 cup 2% milk
1/4 cup creme de menthe
2 tablespoons creme de cacao
1/4 teaspoon peppermint extract, optional
2 cups heavy whipping cream
Maraschino cherries and additional whipped cream, optional

Steps:

  • In a small bowl, mix wafer crumbs and sugar; stir in butter. Press onto bottom and up sides of a greased 9-in. pie plate. Refrigerate 30 minutes., Meanwhile, in a large saucepan, combine marshmallows and milk; cook and stir over medium-low heat 12-14 minutes or until smooth. Remove from heat. Cool to room temperature, stirring occasionally. Stir in liqueurs and, if desired, extract., In a large bowl, beat cream until soft peaks form; fold in marshmallow mixture. Transfer to crust. Freeze 6 hours or until firm. If desired, top with cherries and additional whipped cream just before serving.

A minty green filling of whipped topping and marshmallow creme is laced with chocolate cookies in this frozen version of classic grasshopper pie.

1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed, divided
1 tsp. mint extract
4 to 6 drops green food coloring
15 thin chocolate mint wafers, chopped (about 1/2 cup)
1 chocolate cookie crumb crust (6 oz.)

Steps:

  • Beat marshmallow creme and 2 cups of the whipped topping in large bowl with wire whisk until well blended. Add mint extract and food coloring; mix well. Gently stir in chopped wafers.
  • Spoon into pie crust.
  • Freeze at least 4 hours or until firm. (Pie will be firm, but not frozen solid.) Top with remaining whipped topping just before serving. Store leftover pie in freezer.

Grasshoppers were a popular drink back in the day. This is a most luscious dessert that has all the flavors of a frozen grasshopper. This is a recipe from the former owner of what was my favorite restaurant as a kiddo. Her desserts are legendary, & yay me to have some of the recipes! :) Enjoy this one.

2/3 cup milk
24 large marshmallows
4 Tbsp creme de menthe (green)
2 Tbsp creme de cacoa (white)
1 c heavy whipping cream
1 chocolate pie crust

Steps:

  • 1. Prepare the chocolate pie crust. I bought the Oreo brand in the section w/ graham cracker crusts. I always brush w/ egg white & bake for 5 minutes on 350. Then, let the crust cool down.
  • 2. Heat milk & marshmallows & stir until thoroughly melted (about 10 minutes). Remove from heat & let cool about 15 minutes. Then pour into large mixing bowl.
  • 3. Add Creme de Menthe and Creme de Cacoa to the marshmallow mixture. Stir well.
  • 4. Whip the whipping cream until firm (you will need your mixer for this). Fold this in with everything else & stir a few times.
  • 5. Pour this into the crust & freeze overnight. Garnish w/ chocolate shavings, chips, or sauce. YUM!!!
