FROZEN COCONUT SMORES
If you love coconut and you love sweet things then you really need to give this a try. My family loved it and i even took one to work with me and they all loved it.They said i out did myself.

Steps:
- Line the bottom of a 9 inch square pan with parchment paper, leaving an over hang on 2 sides. Place graham crackers in the bottom of the pan cutting them to fit as necessary.
- Heat 1/3 cup of the cream in a small saucepan until it barely begins to simmer; remove from heat. Add the chopped chocolate and stir until the chocolate is melted and the xture is smooth. Spread the chocolate mixture evenly over the graham crackers. Freeze for 10 minutes
- Meanwhile, using an electric mixer beat the egg whites in a large bowl until frothy. Gradually add the sugar and beat until stiff, glossy peaks form; set aside. In a seperare large bowl using the electric mixer beat the cream of coconut and the remaining cup of cream until you get the stiff form. Fold the egg whites into the coconut cream mixture until fully incorporated
- Spread the coconut mixture evenly over the chilled chocolate and freeze covered for atleast 6 hours. when ready to serve use the parchment over hang to lift and transfer the smore onto a cutting board cut into 32 bars top with shaved chocolate or shaved coconut your choice. Enjoy
FROZEN S'MORES

- Preheat the broiler to high.
- Spray a rimmed baking sheet with nonstick cooking spray. Spread the marshmallows on the baking sheet and broil until deep brown, about 30 seconds. Remove from the oven and set aside for 5 minutes to cool.
- In a stand mixer with the paddle attachment, beat the ice cream on medium-low speed until just soft. Add the toasted marshmallows and the chocolate chips and mix on low until just combined. Working quickly, scoop about 3 tablespoons of the ice cream mixture onto half of the graham crackers. Top with the remaining graham crackers and place in the freezer. Freeze until firm, at least 2 hours.

- Line a 9×13-inch baking dish with parchment paper, leaving extra parchment hanging over, so you can easily pull them out.
- In a medium bowl, whisk together the pudding mix, milk, and 1/2 cup Cool Whip until smooth and creamy.
- Lay half of the graham crackers evenly in the bottom of the baking dish. Spread pudding mix into an even layer over the top and chill.
- In a medium bowl, beat together the cream cheese and marshmallow creme until smooth. Fold in remaining 2 cups Cool Whip and a pinch of salt.
- Spread cream cheese mixture evenly over the chocolate layer. Place remaining graham crackers over the top. Cover with foil. Freeze 6 hours, or until firm enough to cut through.
- Pick up the overhanging parchment to remove the frozen filling. Place on a cutting board, using the graham crackers as a guide, slice the layers into 12 squares. Trim away any excess of the frozen filling.
- Enjoy while softened or store in the freezer in a zip top bag. If frozen, allow sandwiches to soften at room temperature 15 minutes before eating.

AIR FRYER COCONUT, CARAMEL, PEANUT BUTTER S'MORES
We were knee deep in Girl Scout Cookie season when I developed this recipe, and my partner and I had a lot of conversations regarding what are our favorite cookies. I like peanut butter-flavored Do-Si-Dos and he likes the combination of coconut, chocolate and caramel in Samoas. Thus a marriage between the two inspirational cookies was born in the form of a s'more.

- Preheat an air fryer to 400 degrees F.
- Place the marshmallow inside and set the timer for 3 minutes. Meanwhile, place the graham cracker squares hole-side down on a plate. Place the coconut chips on one graham square, then carefully center the chocolate on top. Spread the peanut butter on the plain graham square. After 2 minutes, open the air fryer and place the graham squares inside. Roll the marshmallow onto the peanut butter-topped square and cook 1 minute more.
- Transfer the graham squares to a plate with a spatula (you may have to pick up some coconut chips that have blown around and put them back on the square). Drizzle the caramel sauce on the square with the chocolate and coconut chips, then sandwich the halves and eat while the s'more is still warm and gooey.

Pop quiz: What's the most summery way to get your caffeine fix on? Nope, it's not iced coffee. Presenting frozen s'mores lattes (no campfire necessary). The secret ingredient is toasted marshmallow syrup, made by mixing charred marshmallows into a super-quick simple syrup. Whir it up in a blender with instant coffee, ice and whole milk. And don't forget the graham crackers and chocolate syrup.

- Dissolve the instant coffee in 1 tablespoon warm water; add to a high-powered blender. Add the ice, milk and Toasted Marshmallow Syrup to the blender and blend until smooth and creamy.
- Squirt whipped cream in the bottom of each of 2 tall, wide glasses and drizzle them with chocolate syrup. Divide the frozen latte between the glasses. Top each with whipped cream, chocolate syrup, graham cracker crumbs and 1 toasted jumbo marshmallow.
- Thread the marshmallows onto 2 disposable chopsticks and cook over the open flame of a stove until toasted all over, about 2 minutes. (Alternatively, line the baking sheet of a toaster oven with foil coated in nonstick spray, add the marshmallows and broil, flipping once, until golden brown, about 2 minutes per side.)
- Combine the sugar and 1 cup water in a medium saucepan. Bring to a boil and simmer over medium heat until the sugar is dissolved, about 3 minutes.
- Reduce the heat to low and add the toasted marshmallows to the saucepan. Cook, stirring continuously and turning down the heat if the mixture starts to bubble up around the edges of the saucepan, until the marshmallows are completely dissolved into an opaque mixture, 5 to 7 minutes.
- Strain the mixture through a fine-mesh strainer and whisk in the vanilla extract and salt. Cool completely Store in the refrigerator in an airtight container for up to 1 month.

- In small pan, heat 1/3 cup cream until it barely begins to simmer. Remove from heat. Add chopped chocolate and stir until chocolate is melted and mixture is smooth. Spread chocolate mixture evenly over graham crackers. Freeze 10 minutes.
- Meanwhile, in a large bowl with electric mixer, beat egg whites until frothy. Gradually add sugar and beat until stiff, glossy peaks form. Set aside. In another large bowl with electric mixer, no need to clean beaters, beat cream of coconut and remaining cup cream until stiff peaks form. Fold egg whites into coconut cream mixture until fully incorporated.
- Spread coconut mixture evenly over chilled chocolate and freeze, covered, at least six hours or up to two days. When ready to serve, use parchment overhang to lift and transfer s'mores to cutting board. Cut into 32 bars and top with shaved chocolate if desired. Makes 32 bars.
