This is a Taste of Home recipe. I love pistachio ice cream, but it's very hard to find around here, except for the holidays. I haven't tried this yet, but I wanted to put it here for safe keeping. :) I think I may just put this in a regular (not chocolate) graham cracker crust, and skip the hot fudge topping, but that's just me.

2 1/2 cups chocolate graham cracker crumbs
2/3 cup butter, melted
1 (1 3/4 quart) carton vanilla ice cream, softened
2 (3 1/2 ounce) packages instant pistachio pudding mix
1 cup pistachios, chopped, divided
2 tablespoons pistachios, chopped, divided
3 drops green food coloring (optional)
1 (8 ounce) carton frozen whipped topping, thawed
1 (11 3/4 ounce) jar chocolate fudge topping, warmed

Steps:

  • In a small bowl, combine cracker crumbs and butter. Press into a greased 13-in. x 9-in. baking dish.
  • Bake at 350° for 7-9 minutes or until set. Cool on a wire rack.
  • In a large bowl, combine the ice cream, pudding mixes, 1 cup pistachios and food coloring if desired. Fold in whipped topping.
  • Spread over crust. Cover and freeze for at least 4 hours.
  • Remove from the freezer 10 minutes before serving.
  • Drizzle with fudge topping; sprinkle with remaining pistachios.

I got this recipe from a friend at a gathering we had. she shared it with me and its oh so good!

pecan crust
1-1 1/2 c crushed pecans (finely chopped)
1 1/2 c butter
2-3 c flour
fillings
8 oz cream cheese
1 c powdered sugar
1 large cool whip
2 small packages of pistachio instant pudding (they don't come in large)
3 c milk

Steps:

  • 1. preheat oven to 350. melt your butter, mix with pecans and flour,(you can either add more pecans-less flour or vice versa, play with it) pat into a 9X13 baking pan and bake for 30 minutes. let cool
  • 2. mix softened cream cheese with half cool whip and 1 cup powdered sugar. spread over crust. next mix your puddings with milk and pour over cream cheese mix and allow to set up. then top with remaining cool whip.

1/2 cup reduced-fat margarine, softened
1 cup all-purpose flour
1/2 cup confectioners' sugar
1/2 cup chopped walnuts
FIRST LAYER:
1 package (8 ounces) fat-free cream cheese, softened
1 cup fat-free sour cream
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
SECOND LAYER:
3 cups cold fat-free milk
2 packages (1 ounce each) sugar-free fat-free instant pistachio pudding mix
TOPPING:
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
2 tablespoons ground walnuts

Steps:

  • In a large bowl, beat margarine until smooth. Add flour and sugar; blend until crumbly. Stir in walnuts. , Press onto the bottom of a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 375° for 10-12 minutes or until set. Cool. , In a large bowl, beat cream cheese and sour cream. Fold in whipped topping. Spread over the crust. In another bowl, combine milk and pudding mixes; beat on low speed for 2 minutes. , Spread over first layer. Carefully spread whipped topping over second layer. Sprinkle with walnuts. Chill at least 1 hour.

Pistachio nuts in a blanket of orange blossom hinted cookie batter topped with sesame seeds. These cookies have a slightly grainy texture due to the semolina.

1 cup ghee (vegetable or butter)
1 1/2 cups unbleached cane sugar
2 1/2 cups fine semolina flour
1 cup white flour
1 teaspoon baking powder
2 tablespoons orange blossom water
1 egg
2 cups shelled unsalted pistachio nuts, halved
1/2 cup sesame seeds, toasted
1 teaspoon vanilla

Steps:

  • Using a stand mixer by hand or a hand mixer, creme ghee and sugar till well blended.
  • Add vanilla and baking powder while mixer is still on.
  • Add semolina flour and blend until fully incorporated.
  • Add white flour and do the same on slow speed. If doing by hand, stir the mixture starting slowly and gradually increasing speed.
  • Stir in orange blossom water and egg. At this time the mixture will appear thin but do not be concerned it needs to be wet.
  • Preheat oven to 400 degrees.
  • On a piece of parchment paper on a cookie sheet place place 4-6 pistachio halves
  • Using a melon baller, make a ball of cookie dough and roll the top in sesame seed.
  • Place on top of the 4 pistachio nuts.
  • Bake until the cookie is golden brown about 10-14 minutes.
  • Cool and remove from cookie sheet. Enjoy!
