FROSTED MEATLOAF (BEEF OR TURKEY)



Frosted Meatloaf (Beef or Turkey) image

This is dinner party fare. Looks like it stepped from a food magazine. Easy to make. All ingredients can be made ahead, then chilled & baked. If chilled allow 10 minutes more baking time. Make sure mashed potatoes are room temperature before frosting.

2 lbs lean ground beef or 2 lbs ground turkey
1 tablespoon A.1. Original Sauce
1/2 cup minced onion
1 teaspoon dried cilantro
2 eggs, beaten
1 cup crushed saltine crackers or 1 cup dry breadcrumbs
1/2 cup Catalina dressing
1/2 teaspoon white pepper
1 1/2 cups shredded cheddar cheese or 1 1/2 cups shredded colby cheese
2 cups hot mashed potatoes (3 medium potatoes boiled)
1 egg, beaten
1/2 cup Miracle Whip
1/2 teaspoon salt or 1/2 teaspoon salt substitute
paprika
1 lb broiled mushroom

Steps:

  • In large bowl mix ground meat and A-1 sauce, minced onion, cilantro. Add beaten eggs, mix well. Add crackers or bread crumbs and catalina dressing and white pepper. Mix. Add cheese 1/2 cup at a time and mix, then add another until all cheese is mixed.
  • Form into an oval loaf, place in low side baking pan. Chill if desired.
  • Bake 350* 1 hour. Allow ten more minutes if chilled. I suggest placing a pan on the rack underneath to catch any grease drips from beef or turkey and the melted cheese sometimes drips from the bottom side. I have used a sharp cheese also. When cold this makes an excellent cold meat loaf sandwich. Some family members prefer cold.
  • Cook 3 medium potatoes in water or microwave, peel and mash. Add beaten egg and miracle whip and salt. You may prepare instant potatoes if you desire. Make sure they are a little on the stiff side before adding the egg, miracle whip and salt.
  • When loaf is baked, frost with mashed potatoes. Spread on with spatula. Make peaks all over it.You can also brush melted margarine over it but watch carefully when it is broiling.
  • Broil about 5 inches away until peaks are browned. Take out of oven. Sprinkle with paprika if desired. Broil fresh mushrooms at the same time.
  • Let set ten minutes before serving. Cut in wedges. Serve on a platter with broiled fresh mushrooms surrounding the loaf and slices of lemon in between.

Another meatloaf recipe, this time with potato included and made more heart healthy by using ground turkey breast! All you need is a tossed green salad or steamed veggies for a nice basic meal!

1 (1 1/4 ounce) envelope dry onion soup mix, Lipton Beefy
1 1/2 lbs ground turkey breast or 1 1/2 lbs ground chicken breast
1 cup soft breadcrumbs
1/4 cup ketchup (I use Hunt's but any brand will do)
1/2 cup water
1/4 cup egg substitute (Egg Beaters)
1 (4 ounce) package low-fat cheddar cheese, shredded
1/4 cup bacon bits (I use generic, but any brand will do)
mashed potatoes (instant, homemade or ready-made)

Steps:

  • Preheat the oven to 350°F.
  • In a large bowl, combine soup mix, ground turkey, breadcrumbs, ketchup, water and egg substitute.
  • In a shallow baking pan, shape meat mixture into a loaf.
  • Bake in the pre-heated 350°F oven for 45 minutes.
  • Frost the loaf with the mashed potatoes; then sprinkle with the cheddar cheese and bacon bits.
  • Bake 5 more minutes in order to melt the cheese, NO browning involved; then remove from the oven and let 'settle' 5 min before serving.
  • Variation: you can also swap out the cheddar cheese for a different cheese such as monterey jack.

Mom used to make this with leftover mashed potatoes. Now I use Idahoan Instant Potatoes. I like them a lot and it makes this recipe easier.

1 large egg
1/3 c quick oats
1/3 c catsup
1/2 tsp each salt and pepper
1 1/2 lb lean ground beef
4 servings warm mashed potatoes, prepared
1/2 c shredded cheddar cheese (or more if preferred)

Steps:

  • 1. Preheat oven to 350 degrees. In a large bowl beat egg slightly. Add oats, catsup, salt and pepper and mix well. Mix in ground beef. Shape into a loaf and place in an 8 by 4 inch loaf pan. Bake for 1 hour and 15 minutes.
  • 2. Prepare mashed potatoes while meatloaf is baking. Add a bit more liquid than called for usually so potatoes will spread easily. Remove meatloaf from oven, cool a bit. Remove from pan and drain. Place on a large oven proof pie plate or serving plate. "Frost" or cover meatloaf on sides and top with mashed potatoes. Bake for 15 minutes more. Sprinkle cheese on top and return to hot oven until cheese is melted. Slice and serve.

1 tablespoon cider vinegar
1/2 teaspoon hot sauce
8 tablespoons unsalted butter
1 onion, chopped fine
3 garlic cloves, minced
1 cup whole milk
1 pound ground pork
2/3 cups cornflake crumbs
2 large eggs plus 1 large yolk
1/3 cup minced fresh parsley
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
Salt and pepper
1/2 teaspoon dried thyme
1 pound 90 percent lean ground beef
2 pounds russet potatoes, peeled and cut into 1-inch pieces

Steps:

  • 1. Adjust oven racks to upper-middle and lower-middle positions and heat broiler. Line rimmed baking sheet with aluminum foil, set wire rack in sheet, and place 14 by 6-inch piece of foil in center of rack. Whisk ketchup, sugar, vinegar, and hot sauce together in bowl; set aside glaze. 2. Melt 2 tablespoons butter in 10-inch skillet over medium heat. Add onion and cook until just softened, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Set aside off heat. 3. Combine saltines and 1/3 cup milk in large bowl and mash with fork until chunky paste forms. This is a lovely dish both in flavor and look. It can be made relatively quickly using frozen and cooked mashed potatoes, but the real deal is with homemade. Come to think of it, it could be a great way to use up leftover mashed potatoes.

  • Remove from oven & place on a baking sheet or heat-proof serving platter.
  • Combine potatoes, egg, mayo, salt, pepper, and cheese.
  • Frost the meatloaf.
  • Broil until potato topping is golden brown & puffy.
  • Garnish with tomato, olives, mushrooms, pimiento, &/or parsley as you like.

1 (10 1/2 ounce) can condensed golden mushroom soup
1 cup breadcrumbs
1/4 cup onion, chopped fine
1 egg, beaten
1/2 teaspoon salt
1/8 teaspoon black pepper
2 cups mashed potatoes
1/4 cup water

Steps:

  • In large bowl, mix beef, 1/2 cup undiluted soup, bread crumbs, onion, egg, salt and pepper until combined.
  • Shape into a firm loaf.
  • Place in a foiled-lined shallow baking pan.
  • Bake at 350 degrees for 1 hour.
  • While meatloaf is baking prepare mashed potatoes.
  • Remove meatloaf and place on an OVEN-PROOF serving plate.
  • Frost the meatloaf with the mashed potatoes (you can get fancy and pipe with an icing bag and star tip or just slap it on!).
  • Place platter in oven and bake at 350 degrees for 15 minutes or until potato"frosting" is light golden brown and crisp.

Meatloaf with a surprise. For picky eaters this is an excellent Idea to interest them in actually eating dinner with the rest of the family. When presented it looks like a frosted cake...suprise..it's meatloaf. Mashed potatoes as the frosting with a surprise in the middle.

4 slice(s) sharp cheddar(block cheese)
1 - envelope of onion soup mix
2 tablespoon(s) brown sugar

4 cup(s) stiff mashed potatoes

Steps:

  • In a skillet fry bacon until done to your likeness. Set on paper towel. In a food processor chop the saltines until fine crumbs. Preheat oven to 350^
  • In a large mixing bowl and ground chuck, onion soup mix,& cracker crumbs. In a small bowl whisk together eggs, brown sugar, and ketchup. pour into meat mixture and mash with your hands until it's mixed well.
  • In a 9x5 bread pan, fill half full with meat mixture. Pat down until smooth and firm. Lay down cooked bacon to cover the top. Lay sharp cheddar cheese on top of bacon, then another layer of cooked bacon. Put remaining meat mixture over bacon. Pat down till smooth and firm.
  • Bake for 30 minutes. Mean while make the mashed potatoes according to package directions. With a bit more potato flakes added to make a thicker texture.
  • When meatloaf is done. Remove meat from the loaf pan and cool a bit on a wire rack with paper towel underneath to catch any grease dripping from the meat.
  • Take mashed potatoes and a rubber spatula and spread mashed potatoes and frost the meatloaf top and sides. Present on a cake platter or serving dish.
