I like to serve this combination of fruit, Jell-O and cream cheese as a salad with a main dish or as a light refreshing dessert.

2 (3 ounce) packages raspberry gelatin powder
2 cups boiling water
1 (8 ounce) can crushed pineapple
1 1/2 cups fresh blueberries
3 -4 medium firm bananas, sliced
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1/2 cup sugar
1/2 cup chopped walnuts

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice in a measuring cup. Add enough water to the juice to measure 1 cup; stir into gelatin mixture. Stir in pineapple and blueberries. Place bananas in a 13-in. x 9-in. x 2-in. dish. Pour gelatin mixture over bananas. Cover and refrigerate until firm.
  • In a small mixing bowl, beat cream cheese, sour cream and sugar until smooth. Spread over gelatin. Cover and refrigerate until serving. Sprinkle with walnuts.

Just in time for Christmas! Layers of red cranberry, green jello, and cream cheese in the middle. Haven't made it yet, but am planning on it! Found in Healthy Cooking from Taste of Home. It says to chill until set but not firm to help the layers from sliding apart when cut.

1 (1/3 ounce) box sugar-free lime gelatin
3 cups boiling water, divided
1 (8 ounce) can unsweetened crushed canned pineapple, undrained
1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
1 (8 ounce) package reduced-fat cream cheese, softened
1/4 cup nonfat milk
2 (1/3 ounce) boxes sugar-free strawberry gelatin
1 (16 ounce) can jellied cranberry sauce

Steps:

  • Dissolve lime jello in 1 cup boiling water and stir in pineapple. Pour into a 9x13 pan sprayed with cooking spray. Refrigerate until set but not firm.
  • Sprinkle gelatin over cold water. Let sit for 1 minute. Put in the microwave for 15 seconds on high. Stir and let stand for 1 minute or gelatin is dissolved.
  • Beat cream cheese until fluffy. Gradually add milk and gelatin mixture. Beat until it's smooth. Gently spread over the lime layer and refrigerate until set but not firm.
  • Dissolve strawberry jello in the rest of the boiling water. Whisk in the cranberry sauce until smooth. Refrigerate until partially set. Gently spread over the cream cheese layer. Refrigerate until firm.

1 package (6 ounces) lemon gelatin
2 cups boiling water
2 cups miniature marshmallows
4 large ripe bananas, cut into 1/4-inch slices
1 can (20 ounces) crushed pineapple
2 cups cold water
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup heavy whipping cream
1/2 cup chopped walnuts

Steps:

  • Sprinkle gelatin over boiling water. Remove from the heat; stir until gelatin is completely dissolved, about 5 minutes. Stir in marshmallows until melted. Stir in bananas. Drain pineapple, reserving juice. Add pineapple and cold water to gelatin mixture. , Pour into a 13-in. x 9-in. pan; chill until set. In a small saucepan, combine the sugar and flour. Gradually stir in reserved pineapple juice. Add butter; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; cool to room temperature, about 35-40 minutes. , In a small bowl beat the cream until firm peaks form; fold into pineapple juice mixture. Spread over gelatin mixture. Sprinkle with nuts. Chill for 1-2 hours.

2 cups boiling water
3/4 cup miniature marshmallows
2 cans (15-1/4 ounces each) apricot halves
1 can (20 ounces) crushed pineapple, drained
1/2 cup sugar
3 tablespoons all-purpose flour
1 egg, lightly beaten
1 teaspoon vanilla extract
2 envelopes whipped topping mix (Dream Whip)
1/4 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Add marshmallows; stir until melted. Drain apricots, reserving 1 cup juice; set juice aside. Chop apricots; add to gelatin with pineapple. Pour into an 11x7-in. dish. Chill until firm. , Meanwhile, in a small saucepan, combine the sugar and flour. Whisk in the egg, vanilla and reserved apricot juice until smooth. Bring to a boil; boil and stir for 2 minutes. Cool completely. , Prepare whipped topping according to package directions; fold in cooled juice mixture. Spread over gelatin. Sprinkle with cheese.
