1 medium ear fresh or frozen sweet corn, thawed and quartered
1 small zucchini, quartered
1/4 small red onion, halved
4 cherry tomatoes
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the corn on a microwave-safe plate. Cover with waxed paper. Microwave on high for 2 minutes. , On two metal or soaked wooden skewers, alternately thread the corn, zucchini, onion and tomatoes. Lightly coat vegetables with cooking spray. In a small bowl, combine the seasonings; sprinkle over vegetables. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill vegetables, covered, over medium heat or broil 4 in. from the heat for 6-12 minutes or until vegetables are tender, turning frequently.

Grilled Tofu and Vegetable Skewers image

Tofu and vegetable kebabs are a fast and delicious summer grilling go-to. Using a variety of seasonal vegetables and a zesty herb marinade that does double-duty as a dressing makes this a colorful, crowd-pleasing dish for a cookout or other warm weather meal.

One 14-ounce block extra-firm tofu, drained
1 medium zucchini (about 1/2 pound), cut into twelve 1/2-inch-thick rounds
1 medium yellow squash (about 1/2 pound), cut into twelve 1/2-inch-thick rounds
1 medium red onion, cut into twelve 1 1/2-inch pieces
1 red bell pepper, cut into twelve 1 1/2-inch pieces
2/3 cup lightly packed Italian parsley leaves, chopped
2 teaspoons dried oregano
2 tablespoons finely chopped shallot
2 teaspoons minced garlic
2 teaspoons honey
6 tablespoons red wine vinegar
2/3 cup extra-virgin olive oil, plus more for the grill grates
Kosher salt and freshly ground black pepper
1/2 cup toasted pine nuts (about 2.5 ounces)
Warm naan or pita, for serving

Steps:

  • If using wooden skewers, soak them in water for 30 minutes.
  • Cut the tofu into 12 equal pieces by making 2 cuts through the short side of the block and 3 on the longer side; each piece will be a 1 1/4-by-2-inch rectangle. Place the tofu pieces on a paper towel lined-plate, top with another paper towel and press gently to dry.
  • To assemble the skewers, thread a piece of tofu vertically onto a skewer, then top with a piece of zucchini, yellow squash, red onion and bell pepper. Repeat twice more, ending with a bell pepper. There should be 3 pieces of each ingredient per skewer. Repeat with remaining tofu and vegetables and place the skewers on a rimmed baking sheet or large platter.
  • To make the marinade and sauce, stir together the parsley, oregano, shallots, garlic, honey, vinegar, oil, 2 teaspoons salt and 1/4 teaspoon black pepper in a medium bowl. Pour 2/3 cup of the marinade into a small bowl and stir in the pine nuts; set it aside for serving.
  • Spoon the remaining marinade over the skewers and use a pastry brush to coat all sides of the tofu and vegetables. Season the skewers with salt and pepper.
  • Prepare a grill for medium-high heat. Brush the grill grates with oil and grill the skewers, covered, turning them occasionally, until the tofu has grill marks and the vegetables are cooked through and a bit charred on the edges, 16 to 20 minutes.
  • Transfer the skewers to a platter and spoon the pine nut and herb sauce over them. Serve with warm naan or pita.

Grilled Vegetable Skewers with a Honey Soy Glaze image

1/4 cup honey
1 tablespoon low-sodium soy sauce
1 tablespoon apple cider vinegar
40 pearl onions, peeled
4 scallions, cut into thin rounds
Zest and juice from 1 large lemon
Kosher salt
3 large red bell peppers, seeded, quartered and cut into bite-size pieces (about 20 pieces per pepper)
3 large zucchini, halved lengthwise and cut into 1/2-inch pieces (about 20 pieces per zucchini)
3 tablespoons extra-virgin olive oil
Sesame seeds, for garnish

Steps:

  • Make the glaze: Cook the honey in a medium saute pan over medium heat until golden brown and bubbly, 2 to 3 minutes. Remove the pan from the heat. Add the soy sauce, vinegar, pearl onions, scallions and lemon zest and juice. Return the pan to the heat, add 1/4 cup water and a pinch of salt and cook until the onions are tender and the sauce is reduced, 5 to 8 minutes. Remove the onions and let them cool. Keep the sauce warm.
  • Skewer the vegetables: Start each skewer with a pearl onion followed by alternating 3 pieces pepper with 3 pieces zucchini and finishing with another pearl onion. Arrange the skewers in a single layer on a baking sheet.
  • Cook the vegetables: Preheat the grill for cooking at medium-high heat.
  • Brush the skewers with the olive oil and sprinkle with salt. Place the skewers in a single layer on the hottest part of the grill. Cook for 2 to 3 minutes, then turn them on the other side and move them to a slightly cooler part of the grill if they are getting overdone. Cook until the vegetables are tender, an additional 3 to 5 minutes.
  • Transfer the skewers in a single layer to a large serving platter and spoon the glaze over them. Sprinkle with the sesame seeds and serve.

1 1/2 pounds boneless, skinless chicken thighs (about 5), cut into 1 1/2-inch-wide strips
3 tablespoons extra-virgin olive oil, divided, plus more for dressing
Coarse salt and freshly ground pepper
2 medium zucchini, cut crosswise into 1-inch-thick rounds
16 medium cipollini onions (about 10 ounces), peeled
16 medium cremini mushrooms (about 8 ounces), trimmed
1 lemon, zested and juiced
1/2 cup coarsely chopped fresh flat-leaf parsley leaves

Steps:

  • Soak ten 12-inch wooden skewers in water 30 minutes; drain. Preheat grill over medium-high heat. Meanwhile, toss chicken with 1 tablespoon oil; season with salt and pepper. Toss vegetables with remaining 2 tablespoons oil; season with salt and pepper. Divide chicken among 4 skewers. Skewer vegetables separately, using 2 skewers for each vegetable.
  • Place onion skewers on grill; cook 5 minutes. Add chicken and zucchini skewers; cook, turning occasionally, 5 minutes. Add mushroom skewers; cook until chicken and vegetables are cooked through and charred in places, about 10 minutes. Dress with lemon zest and juice, oil, and parsley. Skewers can be assembled and refrigerated up to 3 hours ahead; let sit at room temperature 30 minutes before grilling.

1/2 cup olive oil
3 tablespoons balsamic vinegar (or red wine vinegar)
1 1/2 tablespoons chopped fresh oregano (or substitute other fresh herbs that are available, basil and marjoram are good choices)
1 tablespoon Dijon mustard (or other spicy mustard)
2 Japanese eggplants, cut into 1 inch rounds
2 zucchini, cut into 1 inch rounds
2 yellow squash, cut into 1 inch rounds
1 pint cherry tomatoes
8 -10 wooden skewers

Steps:

  • Soak wooden skewers for at leat 30 minutes in water.
  • Whisk dressing ingredients (oil- mustard) in a jar and set aside.
  • Alternate vegetables (eggplant, zucchini and summer squash) with tomatoes on skewers. Each skewer should hold approximately 6 vegetables (2 of each eggplant, zucchini and summer squash rounds) and 6 tomatoes.
  • Arrange skewers on baking sheet while you complete all 10 skewers. Brush skewers with dressing. (If making ahead refrigerate for up to 8 hours- refrigerating dressing and skewers separately) Prepare barbecue (or preheat broiler).
  • Brush skewers with dressing, sprinkle with salt and pepper (if desired).

3 tablespoons olive oil
1 tablespoon garlic, chopped
1 teaspoon paprika

1/4 teaspoon ground ginger
1 pinch cayenne
1 pinch turmeric
1 lemon, juice of
1 zucchini, cut into 1 inch thick rounds
1 yellow squash, cut into 1 inch thick rounds
1/2 large red bell pepper, seeded, cut into chunks
3 fresh pineapple, 1 inch thick rings, cut into quarters
12 asparagus, cut into 3 inch lengths

Steps:

  • Soak 12" wooden skewers in water for at least 30 minutes.
  • Combine parsley, oil, garlic, seasonings, and lemon juice in a bowl.
  • Add vegetables and pineapple to the marinade. Let stand at least 10 minutes before skewering.
  • Thread vegetables and pineapple onto soaked skewers.
  • Preheat grill to medium-high; spray grates with nonstick spray.
  • Lightly coat both sides of vegetables with nonstick spray.
  • If using a gas grill, turn off one side; on a charcoal grill, push the coals to one side.
  • Lay the skewers on the grate with the vegetables over the hot side, handles over the cooler side.
