CLASSIC FRIED CATFISH

Number Of Ingredients 11

1 1/2 cups buttermilk
1/4 teaspoon hot sauce
6 (4- to 6-oz.) catfish fillets
1/3 cup plain yellow cornmeal
1/3 cup masa harina (corn flour)*
1/3 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon ground red pepper
1/4 teaspoon garlic powder
Peanut oil

Steps:

  • Whisk together buttermilk and hot sauce.
  • Place catfish in a single layer in a 13- x 9-inch baking dish; pour buttermilk mixture over fish. Cover and chill 8 hours, turning once.
  • Combine cornmeal and next 6 ingredients in a shallow dish.
  • Let fish stand at room temperature 10 minutes. Remove from buttermilk mixture, allowing excess to drip off. Dredge fish in cornmeal mixture, shaking off excess.
  • Pour oil to depth of 2 inches into a large, deep cast-iron or heavy-duty skillet; heat to 360°F.
  • Fry fish, in batches, 2 minutes on each side or until golden brown. Transfer to a wire rack on a paper towel-lined jelly-roll pan. Keep warm in a 225°F oven until ready to serve.

My wife found this recipe at www.catfish.com about 10 years ago, and we haven't fixed it any other way since. This is about as simple as it gets.

4 farm-raised catfish fillets
3/4 cup yellow cornmeal
1/4 cup flour
2 teaspoons salt
1 teaspoon cayenne pepper
1/2 teaspoon garlic granules
olive oil, for pan frying
tartar sauce or lemon wedge, as accompaniment (optional)

Steps:

  • Rinse fillets, and pat dry.
  • Combine all dry ingredients in a shallow dish.
  • Dredge catfish in flour cornmeal mixture, pressing on breading so it adheres to fish, and place on waxed paper.
  • Fry catfish in a large skillet in about 1/4" of hot oil (about 350 degrees F) until golden brown on both sides, about 6-8 minutes total.
  • Drain on paper towels.
  • Serve with lemon wedges and tartar sauce.

Almost all southern recipes are what is typically called soul food. My dad was a great cook, he often cooked for his soldiers while in the war in Vietnam. He loved cooking for crowds and I remember during the catfish tournaments he would help with frying all the catfish at the fish fry's. They would serve this along with huge pots of creamed corn- which I as a child helped to shuck fresh from the owners farm that day. Lots of watermellon and coleslaw, cucmber salads and all the summer picnic foods- WOW the memories that brings back.

salt
pepper
2 eggs, beaten
1/2 teaspoon lemon juice
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 cup flour
1/2 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
peanut oil (for frying)
hot sauce or tartar sauce, for serving

Steps:

  • wash and drain well fillets.
  • season fillets with salt and pepper.
  • mix eggs with lemon juice, garlic powder, and cayenne pepper.
  • in a recatngluar type dish for dredging mix flour, cornmeal, salt, pepper.
  • dip fillet in egg then flour making sure to get a really good coating on the fish, pat the flour in to get a good seal- if desired do it twice to get a heavy coating on.
  • we use a long cast iron frying pan that covers two burners on the stove to fry but you can fry outside or in a deep fryer using peanut oil which withstands higher heats. heat your oil very hot.
  • fry a few fillets at a tme until golden brown and let drain on paper towels or brown paper bags.
  • serve with tartarsauce, lemon juice and hot sauce if sesired.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

1 quart peanut oil
1 cup stone-ground fine cornmeal
1 cup all purpose flour
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon kosher salt
1/4 teaspoon hot smoked paprika
1/4 teaspoon freshly ground black pepper
6 (7 to 9-ounce) US farm-raised catfish fillets, rinsed and thoroughly patted dry
3/4 cup low-fat buttermilk

Steps:

  • Heat the peanut oil in a 5-quart Dutch oven over high heat until it reaches 350 degrees F on a deep-fry thermometer. Adjust the heat to maintain the temperature.
  • Whisk the cornmeal and flour together in a shallow dish. Combine the seafood seasoning, kosher salt, paprika, and pepper in a small bowl. Season the catfish fillets evenly on both sides with the spice mixture. Pour the buttermilk into another shallow dish. Dip each fillet into the buttermilk, flip once to coat both sides, hold over the pan and allow the excess to drip off. Coat both sides of the fillets in the cornmeal mixture. Set the coated fillets on a cooling rack and let rest for 5 minutes.
  • Gently add the fillets, 2 at a time, to the hot oil and fry until golden brown, about 5 to 6 minutes. Remove the fried fillets to a cooling rack set over a newspaper-lined half sheet pan. Repeat method with remaining fillets. Arrange the catfish on a serving platter and serve immediately.

2 to 3 tablespoons olive oil
3/4 cup mayonnaise
2 scallions (white and tender green parts only), minced
2 teaspoons drained sweet pickle relish
1 liter canola, approximately, as needed for deep-frying
3 cups cornmeal, approximately, as needed for breading stage
2 tablespoons Irvine Spices Cajun Blackfish spice (you may need more if you use more cornmeal for breading)
Salt and freshly ground black pepper
4 pounds catfish fillets
Lemon wedges, for service

Steps:

  • In a small bowl, combine the olive oil, mayonnaise, scallions and relish to make a tartar sauce. Refrigerate until needed.
  • Heat oil in deep-fryer to 350 degrees F.
  • Combine cornmeal, Blackfish Spice and salt and pepper, to taste. Dredge catfish fillets in seasoned cornmeal. Deep-fry coated pieces in batches until they are cooked through, about 10 minutes. (For basic reference, use the manufacturer's instructions for your deep fryer for similar foods, then test the fish see that it is fork tender.) Allow to drain on paper towels and serve with tartar sauce and fresh lemon wedges (to squeeze lemon juice over the fish).

6 pan dressed skinless catfish (or other fish fresh or frozen)
2 teaspoons salt
1/4 teaspoon pepper
2 eggs
2 tablespoons milk
2 cups cornmeal

Steps:

  • Thaw frozen fish.
  • Sprinkle both sides with salt and pepper.
  • Beat eggs slightly and blend in the milk.
  • Dip fish in eggs and roll in cornmeal.
  • Place fish in a heavy fry pan which contains about 1/8" melted fat, hot but not smoking.
  • Fry at a moderate heat.
