1 cup shredded Cheddar cheese
1 cup creamy salad dressing (such as Miracle Whip®)
½ red bell pepper, diced
½ green bell pepper, diced
¼ red onion, diced
milk, or as needed
ground black pepper to taste
¼ cup corn chips (such as Fritos®), or to taste

Steps:

  • Mix corn, Cheddar cheese, creamy salad dressing, red bell pepper, green bell pepper, red onion, milk, and black pepper together in a bowl. Fold corn chips into salad right before serving to retain crunch.

2 cans of corn, drained
1 medium Red Bell Pepper, diced
1 medium Green Bell Pepper, diced
1 can black beans, drained
1 cup shredded Triple cheddar cheese
2-3 cups Frito chips
1/2 cup Bacon bits
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

  • In a large bowl, combine corn, peppers, and black beans. In a separate bowl, mix together the mayo, sour cream, salt, pepper, and garlic powder. Combine with vegetables. Mix in the bacon bits and cheddar cheese. Chill at least an hour - longer is better. Mix in Frito chips immediately before serving.

I got this recipe years ago from our church bulletin. It's a great summer barbecue salad or an excellent side dish for any occasion. Very quick and easy! Cooking time is marinating time.

1 (15 ounce) can ranch style beans
1 small onion, diced
2 small tomatoes, diced
1 green bell pepper, diced
8 ounces shredded cheddar cheese
1 (16 ounce) bottle Catalina dressing
1 (9 ounce) package of original Fritos corn chips

Steps:

  • Drain Ranch Style Beans well and pour in large mixing bowl.
  • Add diced onion, tomatoes, bell pepper, cheese and Catalina, mix well.
  • Let mixture marinate in refrigerator for several hours. When you are ready to serve, add Fritos and mix well.

  • Mix all ingredients together, except don't add Fritos and dressing until just before serving.

This salad is a must have at our family get togethers and it is a great weeknight meal for a hot summer night too! Hope you enjoy.

1 lb hamburger meat
1 (1 ounce) package taco seasoning
2/3 cup water
1 head lettuce, chopped
1 pint cherry tomatoes, halved
1/2 cup red onion, diced
2 avocados, diced
1 (15 ounce) can black beans, drained
1 -2 cup frozen corn, thawed
1 -2 cup shredded cheddar cheese
1 (16 ounce) bottle Catalina dressing
4 -6 cups Fritos corn chips

Steps:

  • Brown hamburger meat in frying pan. Drain off fat and return to pan with taco seasoning and water. Simmer meat an additional 3-5 minutes until most of water is absorbed. Allow meat to cool for about 10 minutes.
  • In a separate bowl, mix lettuce, tomatoes, onion, avocados, beans, corn, cheese, and cooled taco meat.
  • Mix as much dressing and Fritos as you desire when you are ready to serve salad.
  • If you mix them in too early, the salad and Fritos will be soggy.

1 1/4 ounces taco seasoning mix
3 cups Frito corn chips
1 cup cheddar cheese, shredded
2 medium tomatoes, chopped
10 ounce package leafy romaine lettuce
6 ounces olives, sliced
1 avocado, diced
1/4 cup red onion, chopped
1 cup french dressing

Steps:

  • Brown ground beef over medium-high heat until cooked through. Drain off excess grease.
  • Add the taco seasoning mix to cooked beef according to package directions. Stir in until well combined.
  • In a large bowl combine the seasoned beef, frito chips, cheese and tomatoes.
  • Line 6 plates with the romaine lettuce.
  • Top with the meat/chip mixture.
  • Then top each salad plate with olives, onion and avocado.
  • Drizzle French dressing over each salad.

8 cups chili, served hot such as Southern Chili & Beans (I probably would not cook mine for 2 or 3 hours...I can't wait that long for Hully Gully)
1 head lettuce, shredded
5 tomatoes, chopped
1 onion, chopped
corn chips (We like Frito's - 1 to 2 bags of the small ones)
4 cups grated monterey jack cheese or 4 cups cheddar cheese
8 ounces sour cream (1 to 2 containers)
garlic powder
8 ounces salsa (1 to 2 jars)

Steps:

  • Cook your chili first.
  • While the chili is simmering, chop your lettuce, tomatoes, and onion.
  • Stir a bit of garlic salt in to the sour cream (it adds flavor and makes it more creamy).
  • Grate your cheese if it's not already grated.
  • Pop the top on your salsa and serve right from the jar if you wish.
  • Place the ingredients in separate bowls in a serving line fashion in this order: plates (big is good), chips, cheese, chili, lettuce, tomatoes, onion, sour cream, and salsa.
  • To serve: Chips go on the plate first, then the cheese. When you put the chili on top of that, the cheese will melt. Then the cold stuff on top -- lettuce, tomato, onion, sour cream and salsa.
  • I don't need to say, "enjoy" 'cuz I know you will! Kids LOVE this!

1 can Rotel tomatoes w/chiles
1 cup purple onion, finely chopped
1 cup green pepper, finely chopped
2 cups shredded cheddar cheese
1 1/2 cups mayonnaise
small bag Chili Cheese Fritos

  • Mix all ingredients and refrigerate. Right before serving mix in half bag of crushed fritos and sprinkle the remainder on top of salad.

1 (10 1/2 ounce) can Campbell's cheddar cheese soup

2 heads iceberg lettuce
1 bunch green onion
2 medium ripe tomatoes
1 can(s) ranch style beans
1 bag fritos regular style
2 c grated cheddar cheese
1 bottle catalina dressing, large

Empty the whole bottle of catalina dressing in the bottom of a huge bowl(one that has a tightly sealing lid)add the whole can of ranch style beans juice and all, cut the tomatoes into bite size pieces and drop in next, cut the green onions and add them, next cut the lettuce and put it on top, then sprinkle on the cheese,and last the fritoes. When you are ready to serve, mix from the bottom up, and ENJOY!!!

1 lb ground beef
1 small onion diced
1 tsp pureed garlic
8 oz tomato sauce
1/2 c tomato juice
1-2 Tbsp chili powder
1/2-1 tsp ground cumin
1/4 tsp oregano
1 can(s) kidney or black or pinto beans drained and rinsed
8 oz fritos or tortilla chips
shredded lettuce
diced tomato
sliced green onions
sliced radishes
grated cheese
salsa
sour cream

Steps:

  • 1. Preheat oven to 350. Grease 2 quart casserole. brown meat, then add onion and garlic. Drain. Add tomato sauce, tomato juice, seasonings. Stir in beans. Put meat in a casserole dish, then top with grated cheese and top with fritos. Cover and bake for 40 minutes
  • 2. In the meantime make salad out of lettuce, onion, and tomato. Serve frito chili on bed of salad and add grated cheese and serve with salsa and sour cream.
  • 3. Note: Notes: I use 2 tablespoons chili powder and 1 teaspoon cumin cause I like that fullness of the earthy flavors. If you would like to add some heat, then a couple of slices of diced jalapeno will do the trick. The kids do not eat salad so I just serve it to them as a casserole. For the adults I have some salad bowls that fit the bill and I put some sald in each one then top with the frito chili salad. I also love tortilla chips so I use those instead of fritos. I also like pinto beans a whole lot better than kidney beans so I use those instead.
