1 (10 ounce) package frozen corn, thawed
1 cup shredded Cheddar cheese
1 cup creamy salad dressing (such as Miracle Whip®)
½ red bell pepper, diced
½ green bell pepper, diced
¼ red onion, diced
milk, or as needed
ground black pepper to taste
¼ cup corn chips (such as Fritos®), or to taste

Steps:

  • Mix corn, Cheddar cheese, creamy salad dressing, red bell pepper, green bell pepper, red onion, milk, and black pepper together in a bowl. Fold corn chips into salad right before serving to retain crunch.

2 cans of corn, drained
1 medium Red Bell Pepper, diced
1 medium Green Bell Pepper, diced
1 can black beans, drained
1 cup shredded Triple cheddar cheese
2-3 cups Frito chips
1/2 cup Bacon bits
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

  • In a large bowl, combine corn, peppers, and black beans. In a separate bowl, mix together the mayo, sour cream, salt, pepper, and garlic powder. Combine with vegetables. Mix in the bacon bits and cheddar cheese. Chill at least an hour - longer is better. Mix in Frito chips immediately before serving.

1/2 cup chopped roasted red pepper, plus 1/4 cup for garnish
1/3 cup chopped green bell pepper
1 small jalapeno, chopped plus 1 small jalapeno cut into thin rounds
1/3 cup finely chopped red onion
2 scallions, sliced thin
1/4 cup mayonnaise
1 tablespoon adobo sauce
2 limes, juiced
3 1/2 ounces chili cheese Fritos corn chips, lightly crushed
1/4 cup cilantro leaf
1/4 cup crumbled Cotija cheese

Steps:

  • In a large bowl, stir to combine corn, roasted red peppers, green bell pepper, chopped jalapeno, chopped red onion, scallions, mayonnaise, adobo sauce, lime juice and chopped Fritos. Season to taste with salt and pepper and transfer to a serving dish.
  • Garnish with 1/4 cup chopped roasted red bell peppers, sliced jalapeno pepper, cilantro leaves and cojita cheese.

I could sooooo see this either on top of a bed of lettuce or even in a softened, small flour tortilla with salsa. Heck! You could even add avocado slices!

1/2 c red onion, diced
1/2 c celery, diced
1/2 c mayonnaise
3 Tbsp ranch dressing
1 1/2 c cheddar cheese, grated
1 bag(s) chili cheese frito chips

  • 1. In a large bowl, mix all except Chile Cheese Fritos. Allow to sit in the fridge for an hour or so to marry the flavors.
  • 2. When ready to serve, lightly crush the bag of Fritos. Add to the corn mix and serve.

1 c Miracle Whip salad dressing
1 c Mexican blend shredded cheese
1/2 bag(s) Chili Cheese Fritos (9 oz bag)
1/2 bell pepper, chopped (optional)
chopped onion, to taste (optional)

Steps:

  • 1. Mix all ingredients except Fritos. This may be mixed the night before and refrigerated.
  • 2. Just before serving, add Fritos. If they are added too early, they will become soggy.

1 can(s) white shoe-peg corn, drained
1/2 medium red bell pepper chopped
1/2 medium green bell pepper chopped

5 oz chili cheese flavor frito corn chips

Steps:

  • 1. Instead of, or in addition to, mayonnaise use sour cream and yogurt. Mix all the ingredients except the chips. Add the chips in before serving otherwise the chips will get soggy.

1 (12 oz.) bag frozen corn kernels, thawed (see notes below)
2 cups grated cheddar cheese
1 green pepper, diced
1/2 cup red onion, finely diced
1 cup mayonnaise
1 tbsp. Taco Seasoning
1 (10 1/4 oz.) bag Fritos (regular or chili cheese), crushed
pepper, to taste
Note: I like to use the frozen corn that has been thawed because I think it has more of a fresh corn taste. But 2 cans of well-drained corn will work with this too.

Steps:

  • In a large bowl, combine thawed corn, cheese, diced bell pepper and onions. Stir well. Then add in mayonnaise and taco seasoning. Stir until thoroughly combined. I like to season it with a little bit of pepper too (this is optional). Then just before serving, stir in crushed Fritos so they stay nice and crunchy. Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving. I always think it looks pretty when you have a few crushed ones on top when you serve it. Note: Go with what is easiest for you when making this. Using pre-shredded cheese in a bag works just fine. And if you don't have time to thaw out a bag of corn, then use 2 (15 oz.) cans of corn that are drained really well. Also, for a big bump in flavor, try using the chili cheese or BBQ flavored Fritos.

  • 1. Mix all ingredients except corn chips. Cover and chill for at least an hour to overnight. (Overnight is best as the flavors will blend better.)

Jalapeno Popper Corn Frito Salad- this summer side dish is full of corn, cream cheese, diced jalapenos, bacon, and crunchy Frito chips.

6 slices bacon, (chopped)
4 ounces cream cheese, (softened)
1/2 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
4 cups frozen or canned corn
2 to 3 jalapeno peppers, finely diced
1/2 red onion, (finely diced)
2 cups shredded Colby Jack cheese
1 (9-ounce) bag Frito corn chips

Steps:

  • Cook bacon until crispy.
  • In a large bowl, stir together cream cheese, mayonnaise, sour cream, chili powder, cumin, and garlic powder until cream cheese is completely mixed in.
  • If using frozen corn, cook according to pacakge directions. Drain off any water. If using canned corn, drain it well.Add corn, jalapenos, red onion, and shredded cheese. Mix.
  • Cover and refrigerate for at least 1 hour.
  • Just before serving, mix in bacon and half the Fritos.
  • Sprinkle additional Fritos on top. Note: You may want to use less than a whole bag of Fritos.
