Classic fried shrimp made with a seasoned cornmeal flour filled with wonderful flavors and fried to perfection. This dish is perfect for your next fish fry.

2/3 cup all purpose flour
1/3 cup yellow cornmeal
2 teaspoons seasoned salt
½ teaspoon black pepper
3/4 teaspoon cayenne pepper
½ teaspoon lemon pepper
¼ teaspoon paprika
1/2 cup buttermilk
1 large egg
2 teaspoons hot sauce
1 pound deveined shrimp

Steps:

  • In a brown bag or ziploc bag, add flour, cornmeal, seasoned salt, pepper, cayenne, lemon pepper, and paprika and shake together.
  • In a deep pie plate or large shallow bowl, whisk together buttermilk, egg and hot sauce.
  • Dip shrimp in beaten buttermilk mixture then add back into the cornmeal breading and shake liberally to coat well. Place coated shrimp on a baking sheet.
  • While coating sets, add 2 - 2 1/2 inches of oil to a deep pot and heat over medium high heat.
  • Fry shrimp until golden brown but don't fry too long. Shrimp doesn't take too long to cook.
  • Drain on paper towels and serve.

EASY FRIED SHRIMP AND TARTAR SAUCE

1 quart vegetable oil, for frying
1/2 cup white rice flour
1/2 cup beer
1 pound peeled and deveined large shrimp, tail-on
Kosher salt and freshly cracked black pepper
Tartar Sauce, recipe follows, for serving
3/4 cup mayonnaise
1 tablespoon minced fresh dill
1 tablespoon minced cornichons
1 tablespoon white wine vinegar
2 teaspoons chopped capers (rinsed and drained)
1 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper

Steps:

  • Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
  • In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
  • Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
  • One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
  • Serve the fried shrimp with Tartar Sauce for dipping.
  • Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.

MAC AND ERNIE'S FRIED SHRIMP WITH TARTAR SAUCE



Mac and Ernie's Fried Shrimp with Tartar Sauce image

1 quart peanut oil
1 pound all-purpose flour
2 tablespoons ground black pepper
1 tablespoon sea salt
2 teaspoons Cajun seasoning
1/2 teaspoon onion powder
2 eggs
One 12-ounce can evaporated milk
2 pounds shrimp, tails on, peeled and deveined
Tartar Sauce, recipe follows
1 cup mayonnaise
1 tablespoon dried minced onion
1 tablespoon dill relish
2 teaspoons dried dillweed
1 teaspoon ground black pepper
1 teaspoon sweet relish

Steps:

  • Fill a heavy bottomed deep pan like a Dutch oven with peanut oil. Fit with a deep-frying thermometer and heat to 360 degrees F.
  • Mix together the flour, pepper, salt, Cajun seasoning and onion powder in a bowl.
  • Beat the eggs in a separate bowl, then slowly beat in the evaporated milk.
  • Line a sheet pan with paper towels. Put a cooling rack on top.
  • Dip some shrimp into the egg/evaporated milk mixture, then toss into the seasoned flour. Shake off excess flour. Slowly lower into hot oil and fry until golden brown and delicious, about 3 minutes. Remove with a slotted spoon to cooling rack. Let oil come back to 360 degrees F. Repeat with remaining shrimp, egg mixture and seasoned flour. Serve with Tartar Sauce.
  • Mix together the mayonnaise, onion, pepper, dill relish, dillweed, pepper and sweet relish. Serve on the side with the shrimp.
