2 teaspoons French mustard
8 slices bread, buttered
125 g cheddar cheese or 125 g gruyere cheese, sliced
12 slices italian salami
2 eggs
1 tablespoon olive oil
salt and pepper
oil, for shallow frying

Steps:

  • Spread the mustard evenly over the buttered side of the bread.
  • Arrange the cheese on four slices, and top with the salami and remaining bread. Press firmly together.
  • Beat the eggs and olive oil together, adding salt and pepper to taste.
  • Heat the cooking oil in a frying pan.
  • Dip each sandwich into the egg mixture, fry 2 sandwiches at a time until golden brown, turning with a spatula to crisp both sides.
  • Drain on absorbent kitchen paper and serve.

A recipe inspired by (copied from) a Sue Grafton book. I really enjoyed this simple easy to make sandwich and hope you will too. Lends its self to many modifications.

3 slices monterey jack pepper cheese
4 slices salami
1 egg
1 kaiser roll (can use hamburger bun)
butter

Steps:

  • Butter the kaiser roll and toast it face down on a hot frying pan. Remove to plate.
  • Place salami on bottom of roll and top with cheese.
  • Place prepared bottom in toaster oven. Heat until cheese is well melted.
  • While cheese is melting, fry egg, sunny side up (then flip and fry till not runny if you are worried about it - but runny is better).
  • Remove roll from toaster when cheese is melted and top with egg.
  • Apply mustard, mayo, jalapeno peppers, whatever, (or nothing) to the top of the bun and place on the egg. Mash it down and enjoy.

My mother made this for us growing up and now I make it for family! So simple, no butter or oil needed since you fry the salami in a dry pan. We use kosher beef salami. It comes packaged like a thick sausage or in slices.

1/4 cup beef salami, diced or cubed
2 eggs

Steps:

  • Beat the eggs in a bowl and set aside.
  • In a small frying pan, over medium heat, add the salami. Using a spatula, brown the salami on all sides. This won't take long.
  • Once it is browned, add the eggs to the salami.
  • Use the spatula to move the eggs around in the pan until they are set to your taste.
  • Turn out to a plate as soon as they are done and enjoy!

EMERIL'S FAVORITE FRIED EGG SANDWICH



Emeril's Favorite Fried Egg Sandwich image

Number Of Ingredients 7

1 tablespoon unsalted butter, softened
2 slices white bread
1 slice ham
1 large egg
Pinch salt
Pinch ground black pepper
Optional ingredients of your choice

Steps:

  • Spread 1/2 tablespoon of the butter on 1 side of each slice of bread (3/4 teaspoon butter per slice).
  • Heat a large skillet over medium heat and add the buttered slices, buttered side down. Push the bread to the side of the pan and add the remaining 1/2 tablespoon butter to the other side. Add the ham and egg to the buttered side of the pan, and season the egg lightly with salt and pepper. Using a spatula, pierce the egg yolk so that it runs. Cook until the egg begins to firm and the ham browns, about 30 seconds.
  • Using the spatula, flip both the ham and the egg and cook for 30 seconds. Stack the ham and egg on 1 unbuttered side of the toast and top with the other slice, buttered side up.
  • Place the egg sandwich on a plate. If desired, top with grated cheese or other toppings, and serve immediately.

CAJUN EGG SANDWICH

1 tablespoon mayonnaise
½ teaspoon Cajun seasoning
2 slices toasted whole wheat bread
2 ounces andouille smoked sausage, cut in half lengthwise
1 tablespoon vegetable oil
1 large egg

Steps:

  • Whisk mayonnaise and Cajun seasoning together in a small bowl until smooth. Spread over both slices of toasted bread.
  • Place andouille sausage in a skillet, cut-side down. Cook over medium-high heat for 2 minutes. Flip and cook for 2 minutes more. Transfer andouille to one slice of bread, leaving a small space in between the halves as a "raft" to hold the egg in place.
  • Heat oil in the same skillet for 1 minute over medium heat. Crack egg into the skillet and let cook undisturbed for 3 minutes. Flip with a spatula and cook for 2 minutes more. Place fried egg on top of the andouille and cover with the second slice of bread.
