RICK'S FRIED RABBIT

My dad is an avid hunter, and here is his recipe for fried rabbit. It's delicious! Tastes like chicken, only better :) You can use this recipe for any wild game such as squirrel, pheasant, quail, partridge etc. Great for frogs legs too LOL

1 rabbit, cut up
2 tablespoons salt
3 eggs, beaten
2 cups flour
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut up rabbit into pieces.
  • In a lg. pot, fill about half way with water. Add 2 T. salt, and bring to a boil.
  • Add rabbit, and parboil for 1/2 hours Drain, and let cool.
  • Beat eggs in a bowl.
  • Put flour on a plate, and mix with salt and pepper.
  • Dip rabbit pieces, one at a time, into egg, and then flour mixture.
  • Meanwhile, on high, heat 1/2" of oil in a lg. cast iron frying pan.
  • When oil is hot, turn down to med. and add rabbit pieces, one at a time into the oil.
  • When first side is golden, flip over to the other side. Cook until golden brown and crispy.
  • Drain each piece on a paper towel, to soak up grease.
  • Serve hot, with your favorite side dish.

Domestic rabbit (already cleaned and dressed) is frequently available in the frozen meats section of the supermarket for those of us that do not hunt our own meat. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 young rabbits (approximately 3 pounds each)
2 egg yolks, slightly beaten
3 cups milk
1 1/4 cups flour
1 teaspoon salt
1/2 cup butter
salt and pepper, to taste
currant jelly, for garnish
1 tablespoon parsley, minced

Steps:

  • Wash dressed rabbit with water and cut into serving pieces.
  • Combine eggs and one cup of the milk; add one cup flour gradually, then salt and beat until smooth.
  • Dip rabbit pieces into batter and fry in hot butter until golden brown, about 15 minutes.
  • Reduce heat and continue cooking until tender, 30 to 40 minutes, turning frequently.
  • Place on a heated serving platter.
  • To make gravy; add remaining flour to fat in pan, add remaining milk gradually, stirring constantly.
  • Bring to a boil, stirring constantly, and season with salt and pepper.
  • Pour over cooked rabbit pieces and garnish with jelly and a sprinkle of parsley.

BASIC FRIED RABBIT OR SQUIRREL

If you enjoy the taste of wild game as I do, and don't want to alter the taste of the meat too much except to put a nice coating on it here it is. Just the basics for the home or the camp.

1 rabbit or 1 squirrel
butter, melted,as needed for the size
corn flakes, crushed,as needed
shortening or bacon grease, as needed

Steps:

  • Remove legs from body of dressed rabbit or squirrel.
  • Split the body down the back through the breast.
  • Cut each half in two crosswise.
  • Dip meat pieces in melted butter.
  • Roll pieces into crushed corn flakes coating all around.
  • Brown meat in hot oil on each side.
  • Reduce heat to low and simmer for about 1 hour.
  • Note: Some people like to soak the meat in salted water a few hours before cooking.
  • If so cover the body with water in a pot and add 3 Tablespoons of salt.
  • Then drain, rinse, and pat the body dry before cooking.
  • I often do this especially if the animal appears to be old.

FRIED RABBIT AND GRAVY

2 young rabbits
2 egg yolks, slightly beaten
1 cup buttermilk
1 cup flour
1/4 cup yellow cornmeal
1 teaspoon salt
1/2 cup lard
1 cup milk
1 teaspoon pepper
salt

Steps:

  • Wash rabbit and thoroughly disjoint.
  • Combine yolks and buttermilk, gradually add 3/4 cup of the flour, cornmeal, and salt.
  • Beat until smooth.
  • Heat lard in a frying pan to 360 degrees.
  • Dip rabbit in batter and fry in lard, 7 minutes on each side.
  • Reduce heat to 275 degrees and cook, turning frequently, until rabbit is tender, about 30 more minutes.
  • Remove rabbit and drain on brown paper.
  • Pour off all but 2 teaspoons of lard in pan.
  • Over medium heat slowly stir remaining 1/4 cup of flour into lard, scraping up pieces of crust from bottom of pan.
  • When smooth, gradually stir in milk.
  • Bring to a boil and cook, stirring constantly, until gravy is smooth and thickened, about 3 minutes.
  • Add a little more milk if gravy seems too thick.
  • Remove from heat, add pepper, then salt to taste.
  • Serve with rabbit.

DEEP-FRIED RABBIT

1 2-pound rabbit, dressed weight, cut into serving pieces
1 1/4 cups milk
Salt to taste, if desired
3 teaspoons freshly ground pepper
1/4 teaspoon Tabasco sauce
2 cups flour
8 cups corn, peanut or vegetable oil

Steps:

  • Put the rabbit pieces in a mixing bowl and add the milk, salt, 1 teaspoon of the pepper and Tabasco. Refrigerate until ready to cook.
  • Drain the rabbit pieces but do not pat dry. Put the flour and the remaining 2 teaspoons of pepper in a brown paper bag and add the rabbit pieces. Shake well to coat thoroughly. Shake each piece to remove excess flour.
  • Heat the oil in skillet or deep-fryer to 375 degrees. Add the rabbit pieces, one at a time, to the oil. Cook until the pieces are crisp and well-browned. Drain.

KENTUCKY FRIED RABBIT (BUTTERMILK MARINATED)

Had never had rabbit before, but after watching my cooking shows and seeing them use rabbit a lot I thought I would give it a try. Decided to fry it and wow was I missing out all these years. Simply delicious.

1 young rabbit (cut into serving pieces)
2 c buttermilk
4 clove garlic (minced)
1 tsp oregano, dried
1 tsp thyme, dried
1 tsp rosemary, dried
1 tsp paprika
3 tsp cayenne pepper
1 onion (sliced)
2 c flour
1 tsp garlic powder
1 tsp onion powder
salt and pepper
oil

Steps:

  • 1. Place the rabbit in a zip-lock bag with the buttermilk, onion, garlic (minced), oregano, thyme, rosemary, paprika, and 1 tsp of cayenne. Marinate overnight in fridge.
  • 2. In another zip-lock bag mix the flour, garlic powder, onion powder, 2 tsp cayenne pepper, and season well with salt and pepper. Heat 2-3 cups of oil in a large skillet over medium heat.
  • 3. Drain the rabbit from the buttermilk. Toss pieces into the flour mixture and shake until well coated. Add the rabbit to the skillet and fry for 10 minutes until golden brown on each side. Be careful to keep the oil hot enough to fry the rabbit, but not so that it burns. When done place on wire rack to drain excess oil.

8 rabbit hindquarters
1/3 cup brown sugar

1/4 cup clarified butter, plus more for frying the polenta
1/2 cup finely diced onions
1/4 cup finely diced sweet pepper

3 cups chicken stock, plus more if needed

Steps:

  • For the black beans: Sauté the onions in some bacon fat or oil in a large pot over medium to medium-high heat until dark golden brown and caramelized, about 15 minutes. Add the red pepper and garlic and cook for another 5 minutes. Add the chili powder and paprika, then add the beans and cover with fresh water by 2 inches. Bring to a simmer and cook until the beans are tender, 1 to 1 1/2 hours. Season with salt and pepper.
  • For the braised rabbit: Preheat the oven to 325 degrees F.
  • Sauté the onions in some bacon fat or oil in a large pot over medium to medium-high heat until dark golden brown and caramelized, about 15 minutes. Add the garlic, paprika, chili powder, tandoori spice, Cajun spice, peppers, celery and jalapeños and sauté until the spices start to stick, about 5 minutes. Deglaze with the beer and reduce. Add the rabbit and brown very slightly. Cover with water and add the brown sugar and salt and pepper to taste. Bring to a boil, reduce to a simmer, cover, transfer to the oven and cook until the rabbit is just tender, about 1 hour.
  • For the polenta: Add the butter to a saucepan and heat until hot. Add the onions, peppers, garlic and chili powder and sauté until the vegetables are soft. Add the chicken stock, bring to boil, reduce to a simmer and slowly whisk in the polenta. Simmer for 6 to 8 minutes, adding more stock as necessary to get a fairly thick consistency. Season with salt and pepper. Pour into a shallow pan and let set to cut later for frying.
  • When ready to fry, cut into pieces and fry in clarified butter until golden brown.

FRIED RABBIT BUFFALO-STYLE

4 tablespoons butter
2 to 5 tablespoons Frank's Louisiana hot sauce, bottled (See note)
1 tablespoon white vinegar
Celery sticks
Blue cheese (See recipe)
1 cup mayonnaise, preferably homemade
2 tablespoons finely chopped onion
1 teaspoon finely minced garlic
1/4 cup finely chopped parsley
1/2 cup sour cream
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/4 pound crumbled blue cheese
Salt to taste, if desired Freshly ground pepper to taste

Steps:

  • For the blue cheese dressing: Combine all the ingredients in a mixing bowl. Chill until ready to serve. Yield: about 2 1/2 cups.
  • Cook the rabbit and while it is still piping hot, put the browned pieces in a mixing bowl.
  • Melt the butter in a saucepan and add the hot sauce and vinegar. Pour the sauce over the rabbit pieces and toss to coat all pieces. Serve with celery sticks and blue cheese dressing.

FRIED RABBIT (HEARTY CHICKEN STYLE)

1 rabbit, cut into serving pieces
1 pkg bacon
1/3 c all purpose flour
1/2 tsp salt
1/8 tsp black pepper
1/8 tsp cayenne pepper
3 Tbsp all purpose flour
1 1/2 c chicken broth
brown bouquet sauce
paprika
salt and pepper

Steps:

  • 1. In a large skillet or pan, fry up the bacon to use the grease for cooking...save the bacon for other meals once cooked.
  • 2. while the bacon is frying, mix the 1/3 cup flour, 1/2 tsp salt, 1/8 tsp cayenne pepper and 1/8 tsp black pepper into large zip-lock bag
  • 3. add rabbit pieces to bag and shake to coat...allow the pieces to sit out at room temp for 30 minutes and dry...also, once coated, lay in dish or pan and reapply shake mix as needed for a good coat
  • 4. Add the coated pieces to the fry pan with bacon grease and brown on all sides over medium high heat
  • 5. sprinkle a generous amount of paprika on the pieces in the pan...do not be shy on the paprika!
  • 6. reduce heat and cover tightly. Cook over low heat until tender about 20-25 minutes, turning pieces once half way through
  • 7. When you turn the pieces in the pan, reapply another generous sprinkly of Paprika! Do not be shy!
  • 8. After 20-25 minutes, remove pan cover and cook another 5 minutes
  • 9. Remove pieces and place on paper towell to dry
  • 10. For gravey, blend in 3 tbsp's of flour into the pan grease and add the broth (be sure to remove any large crisps from the rabbit that may be in the grease) and cook over medium heat, stirring constantly until thick and bubbly. Add salt, pepper and brown bouquet in the sauce/gravey to taste
  • 11. Serve the rabbit, with gravey...we like it over rice with lots of gravey!!! Add biscuits and veggies and you are set.

CRISP-FRIED RABBIT WITH HERB MAYONNAISE

1l sunflower or vegetable oil
100g plain flour
50g parmesan , finely grated
2 x 50g sachets panko breadcrumbs (we used Waitrose)
2 eggs
1 wild rabbit , jointed and each leg also jointed into a drumstick and thigh
lemon wedges, to serve
2 garlic cloves , roughly chopped
1 heaped tbsp capers in vinegar, drained
285g jar chargrilled artichokes , drained
small pack curly parsley , leaves only
5 tbsp good-quality mayonnaise
zest and juice 1 lemon

Steps:

  • Heat oven to 160C/140C fan/gas 3 and have ready a large baking tray with a wire rack placed over it. Heat the oil in a large, deep saucepan (or use a deep-fat fryer) until the oil reaches 140C. Meanwhile, put the flour on a plate and season. Mix the Parmesan and breadcrumbs on another, and beat the eggs in a bowl.
  • Coat a piece of rabbit in flour, tap off the excess, then dunk into the beaten egg. Drain off, then coat in the crumbs. Repeat with a couple more pieces. Lower into the fat and fry for about 12 mins for larger pieces, 9 mins for smaller, until deep golden and cooked through. Don't overcrowd the pan as this can cause the temperature of the oil to drop. Lift out with a slotted spoon and drain on the rack in the oven while you do the next batch. Never leave the pan unattended.
  • To make the herb mayonnaise, put everything except the mayo and lemon juice in a processor and pulse until chopped. Stir in the mayo and juice, and season to taste. Serve the rabbit with the mayonnaise for dipping, a sprinkling of flaky salt and plenty of lemon wedges.

1 yellow onion, halved
1 garlic clove, smashed
1/2 bunch fresh flat-leaf parsley
2 bay leaves
1 fresh thyme sprig
Kosher salt and freshly ground black pepper
1 teaspoon whole black peppercorns
Two 3-pound rabbits, each cut into 8 pieces, rinsed
1 quart buttermilk
1 tablespoon Habañero Hot Sauce (page 244) or store-bought hot sauce, such as Tabasco, plus more for serving
3 cups all-purpose flour
1 tablespoon garlic powder
2 teaspoons sweet smoked paprika
Canola oil, for deep-frying
Blue Cheese Sauce (recipe follows)
Blue Cheese Sauce
1 cup sour cream
1 cup crumbled Danish blue cheese
2 tablespoons buttermilk
Kosher salt and freshly ground black pepper
(makes 1 1/2 cups)

Steps:

  • Fill a large pot with water and add the onion, garlic, parsley, bay leaves, thyme, 2 tablespoons salt, and the peppercorns. Bring to a rapid boil and cook for 5 minutes to infuse the water with the aromatics. Add the rabbit and bring back up to a boil; this should take roughly 5 minutes. Strain the rabbit pieces, transfer to a baking dish, and set aside to cool to room temperature.
  • Pour the buttermilk over the rabbit, turning the pieces so they are well coated. Add the hot sauce. Cover with plastic wrap and refrigerate for at least 6 hours. If you have the time, marinate the rabbit for up to 2 days-the buttermilk tenderizes the meat.
  • Spread the flour on a large shallow platter. Add the garlic powder and paprika; season with lots of salt and pepper. Mix the seasoned flour with your fingers until all the ingredients are thoroughly incorporated. Remove the rabbit pieces from the buttermilk, discarding the buttermilk. Roll the pieces in the flour, a few at a time, until well coated, tapping off the excess. Let the rabbit sit in the flour and dry out while you heat the oil; this will help the crust stay on better. The buttermilk will keep absorbing the seasoned flour, which then fries up to form a crunchy crust.
  • Heat 3 inches of oil to 375°F in a countertop electric fryer or deep pot. (I like to start with very hot oil because as soon as the rabbit is added, the temperature drops significantly.) If you don't have a deep-fry thermometer, a good way to test if the oil is hot enough is to stick the end of a wooden spoon or chopstick in it. If bubbles circle around the end, then you're good to go.
  • Working in batches, carefully add 3 or 4 pieces of rabbit at a time. Fry until the rabbit is golden and crisp with even color, turning halfway through cooking, about 10 minutes total. Transfer to a platter lined with paper towels and repeat with the remaining rabbit pieces.
  • To serve, arrange the fried rabbit on a large platter. Serve with hot sauce and the blue cheese sauce on the side for dipping.

  • In a small bowl, combine the sour cream, cheese, and buttermilk; season with salt and pepper. Mash the ingredients with a fork; the sauce should remain somewhat lumpy.

SPICY FRIED RABBIT

1 rabbit, Cut into good sized chunks
200 -250 ml buttermilk
1 teaspoon salt
200 g plain flour
chili powder (to taste)
green chili, slices into rings (to taste)
1 teaspoon fennel seed

Steps:

  • Get a bowl and put in your flour, fennel seeds and chili powered. Then put your milk into another bowl.
  • Dip the meat in the milk and roll it in the flour mix. Make sure you push all the meat into the flour and get it nice and covered. Then bury the meat in the flour and leave in the fridge for 8 hours to let it soak inches
  • Using a medium hot pan filled with oil, lay you rabbit chunks in and cook for about 10 mins each side untill they are brown.
  • Place the meat onto pieces of kitchen paper to let the oil drain. Once dry, dish up with your sliced chillies onto and enjoy!

BUTTERMILK FRIED RABBIT



Buttermilk Fried Rabbit image

If you are using wild cottontails, I highly recommend you brine your rabbits before frying. A simple brine of 1/4 cup kosher salt to 4 cups water will do - the rabbit is going to get plenty of seasoning later. Submerge your bunny in this brine for up to 12 hours. This process keeps them moist. Domesticated rabbits don't really need this, but if you want to brine them, do so for no more than 4 hours.

2 to 4 cottontails, cut into serving pieces
2 cups buttermilk
2 tablespoons Italian seasoning, or mix together 1 1/2 teaspoons oregano, 1 1/2 teaspoons thyme and 1 tablespoon dried parsley
1 tablespoon paprika
1 tablespoon garlic powder
2 teaspoons cayenne, or to taste
1 1/2 cups flour
1 heaping teaspoon salt
About 2 cups vegetable oil

Steps:

  • Mix the buttermilk with the all the spices except the teaspoon of salt and the flour. Coat the rabbit with the mixture and set in a covered container overnight, or at least 8 hours.
  • When you are ready to fry, pour the oil into a large pan - a big cast iron frying pan is ideal - to a depth of about an inch. The general idea is you want the oil to come halfway up the side of the rabbit. Set the heat to medium-high.
  • Meanwhile, take the rabbit out of the buttermilk and let it drain in a colander. Don't shake off the buttermilk or anything, just leave it there.
  • Let the oil heat until it is about 325°F; this is the point where a sprinkle of flour will immediately sizzle. When the oil is hot, pour the flour and salt into a plastic bag and shake to combine. Put a few pieces of rabbit into the bag and shake to get it coated in flour.
  • Set the coated rabbit pieces in one layer in the hot oil so they don't touch. Fry for about 8 to 12 minutes. Fry gently - you want a steady sizzle, but nothing raging, and you definitely don't want the rabbit to just sit in oil. You might need to adjust the heat. Turn the rabbit pieces and fry for another 10 minutes or so, until they are golden brown. The forelegs will come out first, followed by the loin, and the hind legs will come out last. You will probably need to fry in batches, so just leave the uncooked rabbit pieces in the colander until you are ready to flour them up and fry them. Don't let the floured pieces sit.
  • When the rabbit is good and fried, let them rest on a rack set over a paper towel to drain away any excess oil. If you are cooking in batches, set this in a warm oven.
