COUNTRY FRIED QUAIL
The recipe states that it serves 6, but not in my house...six quail would just be an appetizer. Of course, the recipe can be doubled easily to feed hungrier appetites.

Steps:
- Spread the quail open and pat dry with paper towels.
- Combine the 1/4 c flour, 1 t salt and 1/2 t pepper.
- Dredge the quail in the seasoned flour.
- Pour oil to 1/4" depth in the skillet and heat.
- Add the floured quail to the oil when it's hot and brown on both sides.
- Remove the quail from the skillet.
- Combine the 3 T flour, 1 c water (or milk and water), and 1/2 t salt.
- Add to the drippings in the skillet and stir to combine.
- Add the quail back in the skillet.
- Add enough water to come halfway up the quail.
- Cover and reduce the heat to low.
- Simmer for 30 minutes or until the quail is done and the gravy has thickened.

- In a large resealable plastic bag, combine the buttermilk, 1/2 teaspoon each salt and pepper. Add the quail; seal bag and turn to coat. Refrigerate for 1 hour. Drain and discard marinade., In a shallow bowl, combine the flour, onion powder, garlic powder, cayenne and remaining salt and pepper. Coat quail with flour mixture., In a large skillet, cook quail in oil in batches over medium heat for 4-6 minutes on each side or until a thermometer reads 165°. Drain on paper towels. Remove to a serving platter and keep warm., For gravy, stir flour into pan drippings until blended; cook and stir for 4 minutes or until golden brown. Gradually add the cream, broth, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened., Meanwhile, prepare grits according to package directions. Add the cream cheese, cream, salt and pepper. Cook and stir until cream cheese is melted and grits are heated through. Serve with quail and gravy; sprinkle with bacon and green onions if desired.

- To make the spicy salt and pepper, combine the ingredients and dry fry over a low heat for 2-3 minutes or until aromatic.
- Split each quail in half down the middle and clean well.
- Marinate with the teaspoon of spicy salt and pepper, sugar, soy and rice wine for 2-3 hours, turning frequently.
- Coat each quail piece in flour, dustin off the excess.
- Fill a wok to 1/4 full with oil and heat the oil to 190c.
- Fry the quail for 2-3 minutes each side then remove from the wok and drain on kitchen paper.
- Serve with the lemon wedges on the side.

CRISPY BACON AND HASH BROWN QUESADILLAS WITH FRIED QUAIL EGGS

- For the hash browns:
- Place potatoes in a medium pot of cold, salted water, bring to a boil and cook until fully cooked about 15 to 20 minutes. Drain, let cool slightly, and grate on a grater using the large holes.
- Heat 2 tablespoons oil or remaining bacon fat, in a large saute pan over medium heat and add the onions, season with salt and pepper and cook until golden brown and caramelized, stirring occasionally.
- Heat the remaining 2 tablespoons oil in a large nonstick saute pan over high heat, add the potatoes and cook until golden brown. Stir in the onions, poblano chile, ancho chile powder, paprika, and salt and pepper and cook until just warmed through.
- For the tomato relish:
- Combine the diced tomatoes, red onion, jalapeno, cilantro, lime juice, olive oil, honey, salt, and black pepper in a bowl and let sit at room temperature for at least 15 minutes before serving.
- For the quesadillas:
- Preheat the oven to 425 degrees F. Place 4 tortillas on a work surface and top with cheese, hash browns, and bacon. Cover with 4 more tortillas to make 4 2-layer quesadillas. Brush the tops with oil and sprinkle with the ancho powder.
- Transfer the quesadillas to a large baking sheet and bake in the oven until golden brown and cheese has melted, approximately 8 to 10 minutes. Remove from the oven, and cut each quesadilla into quarters.
- For the quail eggs:
- Heat 2 tablespoons of the butter in a medium nonstick saute pan until it begins to shimmer. Crack each egg into a ramekin and carefully slide into the pan (cook 4 at a time). Season with salt and pepper and cook until the white has set and the yolk is slightly firm, carefully flip over and continue cooking for another minute.
- Assembly:
- Top each quesadilla quarter with a fried quail egg and a few heaping tablespoons tomato relish and garnish with chopped chives. Arrange on a platter.
FRIED QUAIL

- 2. Clean and wipe thoroughly.
- 3. Salt, pepper, and dredge with flour.
- 4. Have a deep frying pan with a close-fitting lid 1/2 full of hot fat.
- 5. Put in quail.
- 6. Cook for a few minutes over high, the cover skillet and reduce heat.
- 7. Cook slowly until tender, turning the quail when golden brown.
- 8. Great served with cheese grits!
DEEP FRIED QUAIL
Once every season when we are tailgating we have a friend come and do Fried Quail for us. These tender, succulent are little birds are so good you can't just eat one or two. They are marinated over night in butter milk and then dredged in seasoned flour and fried in a chicken/fish cooker.

- 1. Rinse the quail and pat dry thoroughly with paper towels. Place in a container and cover with buttermilk and refrigerate overnight. Generously season each flour with salt and pepper and place in a zip top bag. Shake quail in flour mixture and then set on a sheet pan to allow coating to cure.
- 2. Meanwhile, in a bring enough oil for frying up to temperature in your chicken/fish cooker. Add prepared quail to the hot oil and fry turning occasionally until golden brown all over. Remove to a paper towel lined plate to drain.

THis dish calls for country ham which is salt cured to be VERY cautious with any salt you want to add. This is a dish served in Charleston by many families. and can be served for breakfast or brunch.

- Pan-fry quail in butter until done, about 3 or 4 minutes on each side.
- Remove to plate and keep warm in 200 degree oven.
- Pan-fry country ham in butter left over from quail until done, about 3 or 4 minutes on each side remove to plate.
- Prepare grits per package direction, cook for required time.
- When grits are done, add grated cheese, salt and pepper stir well until cheese is melted.
- Add half and half, a little at a time, continuing to cook and stirring until grits are creamy.
- serve Creamy Cheese Grits on plate, arrange quail on plate. Slice country ham into thin strips and place around quail.
- Garnish with thinly-sliced green onions if desired.
- REMEMBER Ham is heavily salted so becareful of how much salt you choose to add.

- Mix the 100ml buttermilk, cumin and a large pinch of salt together in a bowl. Put the quail halves in the buttermilk mix so they are completely covered, then chill for at least 6 hrs or overnight.
- To make the dressing, beat the mayonnaise, buttermilk, cheese and celery salt together - don't worry if it's not totally smooth. Keep chilled.
- When ready to cook, mix all the spiced flour ingredients together. Heat a deep-fat fryer or a deep pan with sunflower oil to 175C. Remove the quail from the fridge, then dip each half in the spiced our and carefully drop them in the fryer.
- Fry for about 6 mins until golden and crisp, then drain on kitchen paper and leave to rest for 2 mins or so. Pile onto a large serving plate, put the blue cheese sauce on the side for dipping, and scatter over the celery leaves, if you like.

FRIED QUAIL WITH SAUSAGE AND OYSTER CREAM

- Preheat the oven to its lowest setting and place a cooking rack over a sheet pan in the oven. Rinse the quail, pat dry, then dust in the flour. Do not season the flour; the sausage is very salty and spicy.
- Fry the quail in a small amount of oil or lard in a skillet over high heat until they are golden brown, turning once, about 10 minutes. Remove to the rack in the oven to keep them warm while you prepare the cream sauce.
- Drain the oysters and set aside, reserving the liquor. Put the sausage in a saucepan and cook over medium-high heat until all of the grease is rendered out and the sausage is evenly browned. Remove the sausage from the pan and allow it to drain. Pour off the grease and discard.
- Add the cream and the oyster liquor to the pan and reduce over high heat until the sauce is just shy of the desired consistency, stirring often and scraping any brown bits stuck to the bottom of the pan. Lower the heat and crumble the cooked sausage into the cream. Add the oysters, heating the sauce through until the oysters just begin to curl, just a minute or two. Remove the birds from the oven to plates. Pour the sauce over the birds, dividing the oysters and bits of sausage equally among the plates.
CHICKEN-FRIED QUAIL WITH CREAMY THYME GRAVY

- Preheat the oven to 200°F. Line a rimmed baking sheet with a brown paper bag.
- Rinse the quail and pat dry with paper towels. Combine the buttermilk, egg, and hot sauce in a shallow bowl and whisk to mix. In a separate shallow bowl or plastic bag, combine the bread crumbs, flour, salt and black pepper to taste, and cayenne and stir or shake to mix.
- Pour canola oil 1/4 inch deep in a large skillet, add the bacon drippings, if using, and place over medium-high heat until sizzling hot (see Know-how, page 100).
- Dip each quail into the buttermilk mixture, then into the bread crumb mixture to evenly coat. Place in the skillet 3 or 4 at a time, taking care not to overcrowd the skillet. Cook for 4 to 5 minutes per side, until golden brown and crispy and the interior is slightly pink. If the quail are browning too quickly, reduce the heat slightly. Transfer the quail to the lined baking sheet and place in the oven to keep warm. Repeat with the remaining quail, and pour off all but 3 tablespoons of the oil, reserving the pan drippings.
- Gravy
- Add the shallot to the same skillet and cook and stir over medium heat for about 1 minute. Sprinkle the flour over the shallot and cook and stir for 1 minute more, scraping up all the brown bits from the bottom of the pan. Whisk in the milk, thyme, and salt and pepper to taste and cook, stirring, until the gravy is thick and creamy, 3 to 5 minutes.
- Spoon the gravy over the quail and serve warm.
- On the Side
- This chicken-fried quail is delicious with Summer Succotash (page 232), Spring Coleslaw with Fresh Herbs and Light Honey Citrus Vinaigrette (page 258), and Watercress Angel Biscuits (page 54). Or try them for breakfast over Country Ham and Hominy Hash (page 82) or with Buttermilk Waffles (page 91) in place of fried chicken.

- Southerners have long been crazy for quail, a small bird favored for eating and-perhaps especially-hunting. It was one of the few game species to flourish in the new landscape carved out by cotton farming, and the birds remain a favorite catch of hunters today.
- That was certainly true in my family, and I've been eating quail for as long as I can remember. Whenever my dad and grandfather brought them home from a hunt, Granny Foster would dust them lightly with flour and fry them in a skillet for breakfast along with pan gravy and angel biscuits. Like many Southerners, my grandfather called quail "bobwhites" for their characteristic whistle, which sounds like they are singing "bobwhite! bobwhite! bobwhite!" The meat tastes sort of like chicken, but with a lovely, nutty-sweet twang, and quail can be prepared in all the ways you'd prepare chicken-but with much shorter cooking times.
- Quail are so dainty that you will want to budget at least one, but more likely two, per person. Farmed quail can be bought from a number of online providers and usually come partially boned (see Sources, page 377).
PAN-FRIED QUAIL, COUNTRY MILK GRAVY, BUTTERMILK MASHED POTATOES RECIPE

- In a large bowl, toss the quail with the Worcestershire, Sherry, salt, and pepper. Heat 1 tablespoon of the oil to 325 degrees in a large cast-iron skillet or deep saute pan over medium-high heat. In a shallow bowl, combine the flour with the Essence. One at a time, dredge the quail in the flour, shaking to remove any excess. Reserve excess flour. Fry in batches until golden brown and cooked through, turning once, 3 to 4 minutes per side. Remove and drain on paper towels. Pour off all oil and wipe out pan with a clean towel. To make the milk pan gravy, add 1 tablespoon vegetable oil to the skillet and heat. Add the onions and cook, over medium-high heat, until soft. Add 1 1/2 tablespoons of the remaining flour and cook, stirring, for 2 minutes. Add the milk and cook, stirring constantly, until thickened, 5 to 6 minutes. Add 2 green onions, garlic, and parsley and cook for 1 minute. Remove from the heat. To serve, spoon the mashed potatoes into the center of 4 large plates, top with 2 quail and the pan gravy, and serve with asparagus. This recipe yields 4 servings.
DEEP FRIED QUAIL EGGS

- For the deep fried quail eggs boil eggs for 2 and a half minutes, then cool immediately in cold water and peel. Mix breadcrumbs and chopped macadamia nuts and coat the eggs using flour, eggs so the usual stuff. Heat a deep frier to 180°C and fry the eggs for 30 seconds
