FRIED CINNAMON SWEET POTATO CHIPS



Fried Cinnamon Sweet Potato Chips image

I made this up after I could only find baked sweet potato chips on Allrecipes. (Those are great, too, but I was already frying fish and wanted some nice crunchy chips.) These are crisp, delicious, and easy. Don't sweat the measurements. I just eyeballed it, and you can too. Mix the seasoning to your own taste.

2 sweet potatoes, thinly sliced
½ cup milk
½ cup all-purpose flour
1 tablespoon white sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon salt
1 quart vegetable oil for frying
1 teaspoon white sugar, or to taste
½ teaspoon ground cinnamon, or to taste
¼ teaspoon salt, or to taste

Steps:

  • Mix sweet potatoes and milk together in a bowl. Mix flour, 1 tablespoon sugar, 1 teaspoon cinnamon, ginger, and 1/2 teaspoon salt together in a separate bowl. Remove a few sweet potato slices at a time, allowing excess milk to drip offl; dip the slices into the flour mixture. Place the coated sweet potatoes on a plate. Repeat with remaining sweet potatoes.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Combine 1 teaspoon sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt in a small bowl.
  • Fry the coated sweet potatoes, working in 2 to 3 batches, until crisp, 5 to 7 minutes. Drain chips on a paper towel-lined plate. Sprinkle with cinnamon-sugar mixture.

6 tablespoons vegetable oil or 6 tablespoons vegetable oil cooking spray
3 russet potatoes, potatoes (baking, about 1 1/2 lb)
1 1/2 teaspoons dried thyme, crumbled

Steps:

  • Preheat oven to 400°F Brush 2 large baking sheets with some oil or spray with PAM*.
  • Peel the potatoes and slice very thin, using a mandoline or slicer. Immediately arrange potatoes in a single layer on baking sheets. Brush with remaining oil or spray with PAM*.
  • Bake in the center of the oven until golden, 12--15 minutes.
  • Transfer to wire racks while still hot.
  • Sprinkle chips with thyme and salt to taste.
  • Cool completely.
  • Chips may be stored for up to 3 days in an airtight container at room temperature.

1 tablespoon crushed cumin seed
1 tablespoon crushed mustard seeds
1 tablespoon kosher salt
1 tablespoon cracked black pepper
1 (1 1/2 lb) beef tenderloin
2 tablespoons canola oil
1 garlic clove
1 teaspoon kosher salt
1 teaspoon Dijon mustard
1 egg
1 cup olive oil
1/2 lemon, juice and zest of
kosher salt and cracked pepper
3 yukon gold potatoes, very thinly sliced
2 tablespoons kosher salt
1/4 cup small caper
vegetable oil, for frying
4 cups Baby Spinach
3 tablespoons extra-virgin olive oil
kosher salt and cracked pepper
1 tablespoon minced fresh chives

Steps:

  • For the beef carpaccio:.
  • In a small bowl, mix the spices together. Completely coat the beef with the spice mix. In a pan, heat the oil over medium-high heat and sear the beef on all sides until golden brown and crusted, about 2 minutes on each side.
  • Wrap the tenderloin in plastic wrap and place in the refrigerator until ready to slice.
  • For the aioli:.
  • With the back of a knife, crush the garlic. Place in a bowl with 1 teaspoon salt and the Dijon mustard. Add the egg and whisk to blend. Slowly whisk in the oil, a little at a time, until all the oil is mixed in and the aioli emulsifies and becomes thick and creamy. Add the lemon juice and zest. If you need to thin the sauce, add water until you get the consistency you like. Season with salt and pepper. Keep refrigerated until ready to use. (Use within 24 hours.).
  • For the chips and capers:.
  • Rinse the potato slices under cold water and put them in a large bowl with the salt. Rinsing the potatoes will ensure they don't change color and will remove some of the starch. Add cold water to cover and set aside. (The longer the potatoes stay in the water, the crispier they will be when you fry them.).
  • Drain the potatoes from the water and pat dry between paper towels. Dry off the capers with a paper towel and set aside.
  • Using a deep fryer, heat the oil to 350 degrees F. Working in small batches, fry the potato chips, stirring a few times, until golden, about 2 minutes. Transfer the potato chips to paper towels to drain excess oil. Sprinkle with salt and reserve.
  • Fry the capers until golden, 30 to 45 seconds. Reserve on paper towels to drain.
  • Take the beef out of the refrigerator. Using a very sharp knife, cut slices as thinly as you can.
  • Mix the baby spinach with the olive oil. Season with salt and pepper.
  • To serve:.
  • Plate the beef slices on individual plates, spoon the lemon aioli on the beef, garnish with the seasoned spianch, the potato chips, fried capers and chives.

1/2 teaspoon salt
1/2 teaspoon garlic powder
1 lb potato, scrubbed, thin sliced
2 -3 sprays cooking spray

Steps:

  • In a small bowl: mix cheese, salt and garlic.
  • Place sliced potatoes in a large bowl.
  • Spray a light coating of cooking spray,toss and coat both sides.
  • Sprinkle tops with the cheese mixture.
  • Toss potatoes to season both sides.

CAJUN OVEN-FRIED POTATO CHIPS

This recipe comes from a Gourmet magazine way back in the 80's, and I still make them often my family loves these! If you want you can omit the Cajun seasoning! If you are lucky enough to own a mandoline, then use it to slice the potatoes. Your oven must be at 500 degrees to create a crispy potato slice! You could reduce the recipe to half if desired but why would you want too, you won't be able to stop eating these, they are that good, so better make the full amount!!!

  • 1. First washing and peeling the potatoes, then slicing the peeled potatoes into potato chips.
  • 2. Then put the sliced potatoes into hot water for a few minutes to filtering the starch, making the fried potato chips a bright color.
  • 3. Then fish our the chips to drain off the water. You can put the left chips into refrigerator for next time use.
  • 4. Use kitchen paper to remove the surface water of the chips for the following frying process
  • 5. Add oil to the frying pans, when the oil becomes 6 into hot, put the de-watered chips for frying. When the potato chips color turns yellow, fish them out and add some salt, some other seasoning if you like.

DEEP-FRIED SWEET POTATO CHIPS WITH MOZZARELLA

Although you could slice these by hand a mandoline is recommended for this, it is a lot easier as the sweet potatoes have to be sliced paper thin. I have made these using Gorgonzola cheese also, and sprinkled them with seasoning salt, you can really use any kind of cheese that you desire. Of course you can use more than 5 sweet potatoes. These are really good.

5 lbs sweet potatoes or 5 lbs yams, peeled
peanut oil (for deep frying, you can use vegetable oil in place of peanut oil)
coarse salt
black pepper (optional)
3 cups mozzarella cheese, shredded (or use any cheese for this)

Steps:

  • Using a mandoline slice the sweet potatoes into 1/16-inch thick slices, and pat them dry with paper towels.
  • In a deep fryer heat enough oil to measure about 3 inches; heat oil to about 380 degrees (can be a little less).
  • Fry the sweet potato slices in batches until they are golden brown.
  • Transfer the chips to a paper towel to drain fat.
  • Place on a baking sheet and sprinkle with coarse salt and black pepper if desired.
  • Set oven to broil heat.
  • Sprinkle the shredded cheese evenly on top of the fried sweet potatoes.
  • Broil for about 4 minutes, or until the cheese melts.
  • Place onto a serving dish.
  • Delicious!
