1 cup chunky peanut butter
Eight 1-inch-thick slices Pullman bread
1 cup good raspberry preserves
2 bananas, sliced thin on the bias
2 cups plain potato chips with ridges
3 large eggs, beaten
2 cups cinnamon square cereal, crushed by hand in a re-sealable plastic bag
8 tablespoons (1 stick) unsalted butter

Steps:

  • Spread the peanut butter on 4 slices of bread and the raspberry preserves on the other 4 slices. Add the bananas and a nice pile of chips on top of the peanut butter slices; sandwich with the raspberry preserve slices.
  • Place the eggs and cereal in separate shallow bowls. Heat a 12-inch nonstick skillet over medium-low heat and melt 2 tablespoons of the butter. Dip a sandwich in the eggs, then the cinnamon cereal, pressing down to make sure the cereal adheres to both sides. Repeat with the other sandwiches.
  • In batches, fry the sandwiches low and slow until golden brown, 2 to 3 minutes per side, adding more butter to the pan as needed. Cut the sandwiches in half on the diagonal and serve.

ELVIS PRESLEY'S FRIED PEANUT BUTTER AND BANANA SANDWICH

2 slices white bread
2 tablespoons butter
1 small ripe banana
2 tablespoons creamy peanut butter

Steps:

  • Place 2 pieces of white bread in the toaster on a light setting. Heat skillet over medium heat with 2 tablespoons butter. While the bread is toasting, in a small bowl, using a fork mash the ripe banana until it reaches a smooth consistency. Using a knife, take both pieces of the toasted bread and spread 2 tablespoons of creamy peanut butter, topping 1 side with the mashed banana. Place 1 slice of bread on top of the other forming a sandwich. Place sandwich in hot skillet browning each side, flipping with a spatula, about 2 minutes per side. Take out of skillet, slice on a diagonal and serve on a plate.

GRILLED PEANUT BUTTER, JELLY AND BANANA SANDWICH



Grilled Peanut Butter, Jelly and Banana Sandwich image

8 slices good quality white bread
2 tablespoons unsalted butter, room temperature
1 cup peanut butter, smooth or crunchy
1/2 cup grape jelly
2 ripe bananas, sliced

Steps:

  • Butter the bread slices on 1 side with butter and place them butter side down. Spread 4 slices with peanut butter and top with the banana slices. Spread the remaining slices with jelly and put them, jelly side down, on top of the bananas. Press them gently to flatten them slightly.
  • Place each sandwich on a preheated panini press and grill until the bread is toasted, about 5 minutes. Alternately, preheat a dry cast iron or non stick pan. Place the sandwich in the pan and weight it down with another pan or a clean brick wrapped in foil. Grill 5 minutes, turn the sandwich over, re-weight it, and grill for another 5 minutes. Serve immediately.

4 slices bread, sturdy home style
1/3 cup peanut butter
1 large banana, ripe
2 cups pancake batter, sweet and thin
oil, for frying
1/4 cup prepared chocolate pudding
1/4 prepared chocolate icing
2 tablespoons seedless raspberry jam

Steps:

  • In a bowl, combine peanut butter and banana, mashing the banana coarsely into the mixture; don't mix it till it's smooth, you want some texture from the banana.
  • Spread two slices of bread with the mixture, dividing evenly. Sprinkle with chopped salted peanuts, if desired. Top with the other bread slices to make two sandwiches. Cut each in half diagonally.
  • Dip each half sandwich into the pancake batter, letting excess drip off. Fry each sandwich in hot oil (325 F) till golden brown, about 4 minutes total, turning if necessary. Drain on paper towels and cool slightly.

This is definitely comfort food! My kids and I love this sandwich. I love to eat it right out of the pan all hot and yummy! I love the texture of the crunchy peanut butter. The cinnamon sugar on the top makes all the difference! Enjoy!

3 ripe bananas
8 slice of bread, white, wheat, etc...
3/4 c of crunchy peanut butter
1/4 c honey
1 1/4 tsp cinnamon
4 Tbsp butter
TOPPING
1/4 c sugar
1 Tbsp cinnamon

Steps:

  • 1. In a small bowl mix together peanut butter, honey and cinnamon. Slice bananas into 1/4 thick slices. Spread the peanut butter mixture on four slices of bread and cover with banana slices.
  • 2. In frying pan melt 2 tablespoons of butter - make sure butter does not burn. I cook mine in 2 batches so I divide the butter. The slice of bread that doesn't have the peanut butter mixture on it, I spread with margarine or spreadable butter and put the peanut butter and banana slice of bread, bread side down in the melted butter in the pan. Place the buttered slice of bread on top, butter side out.
  • 3. Grill sandwiches in frying pan until each side is golden brown.
  • 4. For topping, combine sugar cinnamon in shallow plate. Coat grilled sandwiches with mixture. Cut diagonally and serve hot.
