Number Of Ingredients 8

2 cups milk
1 1/2 cups quick oats
1 cup flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
2 eggs, slightly beaten
1/3 cup butter, melted

Steps:

  • Pour the milk over the oats and let stand 5 minutes.
  • Stir the flour, baking powder, sugar and salt together.
  • Add the beaten eggs to the oat and milk mixture. Add the melted butter.
  • Mix the dry ingredients into the wet ingredients just until moistened.
  • You may keep this in the refrigerator for several days or make immediately.
  • Fry on griddle until brown. These are thick and take a little longer to cook than regular pancakes.
  • Serve warm with your favorite toppings.

This is one of our favorite camping recipes. It's so easy to prepare the night before, and you can fix it multiple ways! Leave the flour out and microwave each individual serving, bake it as a breakfast casserole, or put it in a slow cooker overnight. :)

Number Of Ingredients 12

2 c old fashioned oats, uncooked
1/2 c brown sugar, firmly packed
1/2 c flour (omit for microwave, casserole, or slow cooker)
1/2 c golden raisins
1/4 c chopped walnuts
1 tsp baking powder
1 tsp ground cinnamon
1/4 Tbsp ground nutmeg
1 1/2 c almond or coconut milk
1/2 c applesauce
2 Tbsp butter, melted
1 large egg, beaten

Steps:

  • 1. Combine all ingredients and cook like pancakes (I use oil)...OR
  • 2. Combine all ingredients, except flour. Store in a container until ready for microwave, oven, or slow cooker. Add more milk for preferred consistency.
  • 3. MICROWAVE: 2 minutes for individual servings OVEN: Spray oil in 8x8 pan, fill with mixture, bake at 375 for 20 minutes. SLOW COOKER: Low heat overnight.

½ cup all-purpose flour
1 teaspoon baking powder
1 ½ cups rolled oats
1 egg, beaten
½ cup evaporated milk
2 tablespoons water
2 tablespoons applesauce
1 tablespoon butter, softened

Steps:

  • In a medium mixing bowl, sift together flour and baking powder. Add the remaining ingredients and stir to combine.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each cake. Cook until bubbles form in the cakes. Flip and cook the other side. Serve warm with syrup or jam.

We grow our own veggies so they are the freshest, most organic possible. Can be wrapped and eaten out-of-hand for a mid-morning snack or even served as a side dish for dinner.

1 cup whole oats, cooked
1 baby summer squash, grated (about 1/4 cup)
1 tablespoon red bell pepper, chopped
1 tablespoon sweet onion, chopped
2 -4 tablespoons white whole wheat flour
1/8 teaspoon baking soda
1 egg
1/2 teaspoon coconut oil, organic food grade
salt, to taste
pepper, to taste

Steps:

  • Mix all ingredients together adding just enough flour to make a light batter.
  • Heat large cast iron frying pan over medium to low heat.
  • Drizzle pan with coconut oil and wipe around with a paper towel.
  • Spoon into pan making 3" pancakes.
  • Lightly brown, turn & brown the 2nd side.
  • Serve with fresh Greek yogurt and sliced tomatoes.

  • 1. The night before, prepare oatmeal as directed on package, pour into a bread pan that has been lightly sprayed with cooking spray. refrigerate overnight.
  • 2. In the morning invert onto plate and slice loaf into 1-2 inch slices, melt 2 Tbsp of butter on to griddle, Then fry each slice of Oatmeal until lightly browned and crisp turn over and repeat. serve with brown sugar, maple syrup or your favorite topping
