1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Spray a large, heavy skillet with cooking spray and set over medium-high heat. Add meatloaf slices in the skillet. Fry until browned, 2 to 3 minutes per side. Set slices aside.
  • Reduce heat to medium-low. Return meatloaf slices to the skillet. Pour mushroom soup on top. Cover and cook until soup becomes bubbly, about 5 minutes.

¼ cup ketchup
¾ cup herb-seasoned dry bread stuffing mix

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
  • Shape into loaf and fit into 9 x 5 inch loaf pan.
  • Bake, covered loosely with foil, at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until meat is thoroughly cooked.

This is a spicy, saucy, juicy meatloaf made in an air fryer. In less than an hour - but more importantly, with very little effort - you can have a delicious and tender meatloaf on the table. Serve with mashed potatoes.

½ pound ground pork
½ pound ground veal
1 large egg
¼ cup chopped fresh cilantro
¼ cup gluten-free bread crumbs
2 medium spring onions, diced
½ teaspoon ground black pepper
½ teaspoon Sriracha salt
½ cup ketchup
2 teaspoons gluten-free chipotle chili sauce
1 teaspoon olive oil
1 teaspoon blackstrap molasses

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Combine pork and veal in a nonstick baking dish that fits inside the air fryer basket. Make a well and add egg, cilantro, bread crumbs, spring onions, black pepper, and 1/2 teaspoon of Sriracha salt. Mix well using your hands. Form a loaf inside the baking dish.
  • Combine ketchup, chipotle chili sauce, olive oil, and molasses in a small bowl and whisk well. Set aside, but do not refrigerate.
  • Cook meatloaf in the air fryer for 25 minutes without opening the basket. Remove meatloaf and top with ketchup mixture, covering the top completely. Return meatloaf to air fryer and bake until internal temperature reaches 160 degrees F (71 degrees C), about 7 minutes more.
  • Turn off air fryer and let meatloaf rest inside for 5 minutes. Take meatloaf out and let rest 5 minutes more before slicing and serving.

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1/2 pound ground beef
1/2 pound ground turkey
2 slices white bread, cut into cubes
1 (28-ounce) can crushed tomatoes with basil
2 cloves garlic, minced
1 egg
1 small onion, chopped
1 tablespoon chopped sage leaves, plus 6 to 8 whole leaves, for frying
A few dashes Worcestershire sauce
A few dashes hot sauce
Salt and freshly ground black pepper
1 tablespoon oil
Vegetable oil, for frying

Steps:

  • Preheat oven to 400 degrees F.
  • Remove core and seeds from peppers. Slice into 1 inch rings and place on nonstick baking sheet. You should get about 3 rings per pepper. In a large bowl mix together beef, turkey, bread, 1/2 cup of the tomatoes, garlic, egg, onion, chopped sage, Worcestershire sauce, hot sauce, and season with salt and pepper. Press meatloaf mixture evenly into pepper rings. In a skillet over medium-high heat, add oil. Saute meatloaf rings on both sides until golden brown, about 5 minutes per side. Add remaining tomatoes to skillet and bake until cooked through, 20 to 25 minutes. Meanwhile, in a small saucepan, heat 1-inch vegetable oil until a deep-fry thermometer reaches 325 degrees F. Drop sage leaves into oil and fry until golden, 1 to 2 minutes. Garnish meatloaf rings with fried sage leaves.

1/2 teaspoon baking powder
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon cumin
1 egg
1/4 cup milk
Four 3/4-inch-thick slices cold meatloaf, such as Turkey Meatloaf
Coconut oil, for frying
8 slices raisin-pecan bread
2 tablespoons mayonnaise
Iceberg lettuce leaves, for serving
6 tablespoons Green Tomato Jam, recipe follows
1 pound green tomatoes, quartered and cored
4 cloves garlic
1 1/2 cups sugar
1/2 cup rice wine vinegar
3 tablespoons soy sauce
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger

Steps:

  • You will need two 8-by-8-inch pans or similar. In the first, combine the flour, baking powder, pepper, salt and cumin. In the second, whisk together the egg and milk.
  • Dip each meatloaf slice into the egg mixture; shake off any excess. Then coat in the flour mixture; again, shake off the excess. Place on a wire rack.
  • Fill a large cast-iron skillet with 1/4 inch of coconut oil. Heat over medium heat until the oil reaches 325 degrees F. Add the dredged meatloaf; cook until golden brown on both sides, about 4 minutes per side. Drain on a wire rack and let cool.
  • Build the sandwich in this order: bread, mayonnaise, meatloaf, lettuce, green tomato jam, bread, smile! Just kidding¿a smile isn't in the recipe; however, if you make it to this step, you will surely provide the smile!
  • Add the green tomatoes and garlic to a food processor. Blend to a paste, then transfer to a medium saucepan along with the sugar, rice wine vinegar, soy sauce, cardamom and ginger. Stir to combine. Cook over medium-low heat until the mixture begins to look thick and glossy, about 35 minutes; stir frequently with a heat-resistant spatula to keep the jam from scorching on the bottom. Remove from the heat and let cool. Store, covered, in the refrigerator for up to 2 weeks.

15 ounces Italian bread crumbs
10 eggs
1 chicken bouillon cube, dissolved in 1/2 cup hot water
1/2 cup finely grated Parmesan
Chopped parsley
Salt and pepper
2 tablespoons butter
4 cloves smashed garlic cloves
2 tablespoons flour
2 (14-ounce) cans chicken stock
2 tablespoons tomato paste
1/4 cup red wine vinegar
1 (14-ounce) can whole tomatoes
Salt and pepper
1 tablespoon dried oregano
3 large Spanish onions, peeled, cut in 1/2, and thinly sliced
1 quart milk
1 pound all-purpose flour
2 quarts canola oil

Steps:

  • To make Meatloaf: Preheat oven to 350 degrees.
  • In a large bowl, mix chopped meat, bread crumbs, eggs, bouillon broth, Parmesan, and chopped parsley. Mix well with a wooden spoon until all the ingredients are well incorporated. Form into a loaf shape and place on a sheet pan coated with nonstick vegetable spray.
  • Place in oven and cook for 45 minutes, or until meatloaf has an internal temperature of 160 degrees.
  • To make Tomato Gravy: In a large saucepan, heat butter over medium-high heat. Allow butter to foam and begin to brown. Add smashed garlic and allow garlic to brown slightly. Sprinkle in flour and stir constantly, forming a roux to cook for approximately 10 to 12 minutes until golden brown. Add chicken stock and tomato paste and cook for 3 to 5 minutes.
  • Add 1/4 cup red wine vinegar and all tomatoes. Simmer for 30 minutes and finish with salt, pepper and oregano. Serve atop the meatloaf.
  • To make Fried Onions: Heat a large, deep pot of oil to 350 degrees. Soak onions in milk for a minimum of 10 minutes. When oil is hot, drain onions and dredge in flour, making sure to remove excess flour.
  • Plunge onions a batch at a time (there should be 3 batches) into hot oil and fry until extremely golden brown and crispy. Remove from fryer and place on a paper towel to drain. Serve atop dressed meatloaf.

2 lb lean hamburger
1/2 c quick oats
2 large eggs
1 medium onion ; chopped
1 Tbsp worcestershire sauce
1 1/2 tsp garlic powder

  • 1. In a large mixing bowl combine all the ingredients.
  • 2. Mix with your hands.
  • 3. Mix thoroughly until all the spices are combined together with the hamburger.
  • 4. Shape into an oblong shape in your hands.
  • 5. Place in heavy skillet and cover with a lid.
  • 6. Fry on medium heat until crispy brown and turn onto their sides ; you may need to prop them against each other to hold them on their sides , you can remove the lid at this point if so desired to so you can watch it closer so they don't burn.

1/2 lb ground beef
1/2 lb ground veal or, ground chicken or turkey

1 can(s) 28 oz crushed tomatoes with basil

1 egg
1 small onion choppped
1 Tbsp dried sage
1 tsp worcestershire sauce
1 dash(es) red pepper flakes
1 tsp hot sauce

1 tsp smoked paprika
left over tops and bottoms of peppers
2 c cheddar cheese, shredded
1/4 c parmigiano-reggiano, grated
olive oil

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Wash peppers. Cut top and bottom of each pepper off and set aside. Remove core and seeds.
  • 3. Cut each peppers into 3 (1") rings, place aside.
  • 4. In large bowl, add all ingredients (except crushed tomatoes - only put in 1/2 cup in bowl and set the rest aside.) Add pepper tops & bottoms (chopped)in bowl.
  • 5. Heat about 1-2 tbsps of olive oil in frying pan. (Must be a pan that can be put in oven at 400 degrees)
  • 6. Take one ring of pepper and stuff with meat. Continue till all rings are stuffed.
  • 7. Add to heated oil and cook for 5 minutes on each side till browned. All rings should fit in this pan.
  • 8. Put in remaining crushed tomatoes now and bring to boil.
  • 9. Add salt & pepper. (If sauce too thick, add a little water) Do not want soupy
  • 10. Put in oven covered for 20-30 minutes till heated thru and cooked
  • 11. Serve over mashed potatoes, rice, or pasta.
  • 12. If reheating as leftovers, you may want to add a 14 oz can of diced or crushed tomatoes

FRENCH'S FRIED ONION MEATLOAF WITH CHILI SAUCE



French's Fried Onion Meatloaf with Chili Sauce image

This is yummy and I am not a meatloaf fan. Just enough spice to make it interesting.

FOR THE MEATLOAF:
1 1/2 lb ground beef
1 egg
1 medium onion, chopped
1 c milk
1 c dried bread crumbs
salt and pepper to taste
1/2 tsp garlic powder
2 Tbsp brown sugar
2 Tbsp prepared mustard
1/3 c ketchup
FOR THE BREADING:
1/2 c all purpose flour
1 egg
1 c panko bread crumbs
salt and pepper to taste
1 to 2 c canola or peanut oil for frying

Steps:

  • 1. FOR THE MEATLOAF: In a large bowl, combine the beef, egg, onion, milk, bread crumbs, and garlic powder. Season with salt and pepper to taste and place in a lightly greased 5x9-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • 2. In a separate bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • 3. Bake in a preheated 350-degree oven for 1 hour. Let it cool and then refrigerate for 2 hours or more.
  • 4. TO FRY: Set three wide, shallow dishes in a row on the counter. Put the flour in the first dish. Crack the egg into the second dish and beat it lightly with a fork. Put the panko in the third dish and toss with salt and pepper.
  • 5. Cut the cold meatloaf into slices and set aside.
  • 6. Dredge a slice of meatloaf in the flour and then in the egg. Lay the slice in the crumbs and make sure you cover every part of it. Set aside and repeat step with all of the slices. When all are coated, refrigerate for an additional ten to fifteen minutes to let the bread crumbs set.
  • 7. When ready to cook, pour oil into a heavy duty sided pan. Heat the oil over medium-high heat until it immediately and vigorously bubbles.
  • 8. With a slotted metal spatula, carefully slip the breaded meatloaf into the oil. Fry until golden brown on both sides, about 1 minute per side, using the spatula to carefully turn the slices. Transfer to a plate with paper towels, sprinkle lightly with salt, and let sit briefly to drain excess oil. Serve hot.

  • Cut the meatloaf into 1 inch thick slices, once thawed.
  • Beat the egg and barbecue sauce together.
  • Crush the Cheez-Its in a plastic bag with your rolling pin.
  • Dip each slice of meatloaf into the egg and barbecue mixture and then into the cheez-Its.
  • Fry them in a hot skillet with the vegetable oil.
  • Cook on each side, approximately 3 minutes, until browned on each side, and hot all the way through.
  • Top with swiss cheese. And throw em on a bun, and enjoy!

My husband made a very bland tasting meatloaf. The next day I cut the loaf into slices, dipped them in an egg and then seasoned flour and fried them as you would a chicken fried steak. Tasted pretty good with a white or brown gravy.

4 slices meatloaf
1 egg, well beaten
3/4 cup flour, seasoned
vegetable oil
1 tablespoon butter

Steps:

  • Dip each slice of meatloaf in egg mixture then coat with flour mixture. Heat over medium heat a little vegetable oil and the butter. Fry each slice until brown, turning once. Serve with your favorite gravy. Prep time and cooking time are approximate.

Sherry-Mushroom Gravy:
1/2 cup all-purpose flour
1 large egg
1 cup panko or fresh breadcrumbs
Kosher salt and freshly ground black pepper
Four 1/2- to 3/4-inch-thick slices cold leftover meatloaf
1 to 1-1/2 cups canola or peanut oil for frying
1 cup lower-salt beef or chicken broth; more as needed
2 Tbs. extra-virgin olive oil
2 slices center-cut bacon, minced
6 oz. cremini (baby bella) or white mushrooms, cleaned and sliced about 1/8 inch thick (2 packed cups)
1/2 cup minced yellow onion
Kosher salt and freshly ground black pepper
3 Tbs. dry sherry
3 Tbs. all-purpose flour

Steps:

  • Set three wide, shallow dishes (such as pie plates) in a row on the counter. Put the flour in the first dish. Crack the egg into the second dish and beat it lightly with a fork. Put the panko or crumbs in the third dish and toss them with 1/2 tsp. salt and 1/4 tsp. pepper. Working with one slice at a time, dredge the meatloaf first in the flour and then in the egg, coating it on all sides and shaking gently after each dip to knock off the excess. Lay the meatloaf in the crumbs, scatter some crumbs on top of the slice, and press gently to adhere. Flip and repeat once or twice with the crumbs to coat really well; be sure to get the edges as well. As you finish each slice, set it on a tray. When all are coated, refrigerate for at least 5 minutes and up to 1/2 hour to let the breading set up. Save some of the leftover crumbs for testing the frying oil temperature and discard the remaining breading ingredients. When ready to cook, pour about 1/3 inch of oil into a heavy-duty 10-inch straight-sided sauté pan. Have ready a paper-towel-lined tray or plate. Heat the oil over medium-high heat until it immediately and vigorously bubbles when you gently flick a few leftover crumbs into it. With a slotted metal spatula, carefully slip the breaded meatloaf into the oil. Fry until golden brown on both sides, about 1 minute per side, using the spatula to carefully turn the slices. Transfer to the paper towels, sprinkle lightly with salt, and let sit briefly to drain excess oil. Serve hot. Sherry-Mushroom Gravy: Combine the broth with 1 cup of hot water. Heat the oil in a 12-inch skillet over medium-high heat. Add the bacon and cook, stirring to break apart the pieces, until just starting to crisp, 1 to 2 minutes. Add the mushrooms, onion, 1/2 tsp. salt, and 1/2 tsp. pepper. Cook, stirring often, until the mushrooms have cooked through and start to brown the bottom of the pan, 5 to 8 minutes. Add the sherry and stir to release the browned bits from the bottom of the pan, about 1 minute. Sprinkle in the flour and stir constantly until the mixture has browned and is slightly dry and crumbly, about 30 seconds. Whisk in half of the broth mixture and continue whisking until the liquid is absorbed into the flour, about 30 seconds. Whisk in the remaining broth mixture and bring the gravy to a boil. Reduce the heat and simmer, stirring occasionally, until thickened, 5 to 10 minutes. Season to taste with salt and pepper and thin with water or broth if necessary. Transfer to a small saucepan, cover, and keep warm. Reheat the gravy if necessary before serving. This gravy can be made up to 1 day ahead and reheated over medium-low heat.
