PASTA WITH ZUCCHINI, FETA AND FRIED LEMON



Pasta With Zucchini, Feta and Fried Lemon image

This is a less saucy, more pasta-salad-like pasta, which is to say it's best served at room temperature after being carted to an outdoor location and eaten directly from the container. The zucchini mixture should be deeply flavorful and concentrated, rather than loose or watery. If you're looking for something saucier, add more olive oil (not pasta water) as needed to coat each piece of pasta before serving.

8 ounces pasta, such as spaghetti or bucatini
Kosher salt
1/4 cup olive oil, plus more for drizzling
1/2 cup walnut pieces (optional)
2 large shallots, 1 medium onion or 1 large leek (white and light green parts), thinly sliced
1 lemon, thinly sliced, seeds removed
Freshly ground black pepper
2 tablespoons capers
1 1/4 pounds zucchini (about 2 medium), thinly sliced
2 ounces feta, crumbled (about 3/4 cup)
1 cup parsley or dill leaves, or a mix, coarsely chopped
2 tablespoons fresh oregano leaves

Steps:

  • Cook pasta in a large pot of salted boiling water until al dente. Drain and rinse pasta with cool water to stop cooking and toss with a drizzle of olive oil to prevent sticking; set aside.
  • Heat 1/4 cup olive oil in a large skillet over medium-high heat. Add walnuts, if using, and toss to coat. Cook, stirring occasionally, until walnuts are toasted and golden brown, 3 to 4 minutes. Using a slotted spoon or strainer, transfer the walnuts to a small bowl (leaving the oil behind) and season with salt; set aside.
  • Add shallots and lemon to the oil and season with salt and pepper. Cook, stirring occasionally, until both the shallots and lemons are totally softened and have begun to caramelize, 5 to 8 minutes. Add capers and stir to coat in the oil, letting them sizzle a minute or two.
  • Add zucchini and season with salt and pepper. (Do not be alarmed at the amount of zucchini in the skillet; it will cook down by about half.) Cook, stirring occasionally, until much of the water has evaporated from the zucchini and it has totally softened, become translucent and is beginning to brown at the edges, 10 to 15 minutes. (This mixture should be very flavorful and lightly saucy.)
  • Remove pan from heat and add pasta, tossing to coat. (If your skillet is very full, you can always transfer everything to a large bowl and toss to coat there.) Season with salt and pepper.
  • Transfer pasta to a large serving bowl and top with toasted walnuts, feta and herbs, finishing with a drizzle of olive oil.

SWISS CHARD, STIR FRIED, WITH FETA CHEESE

2 tablespoons pine nuts, toasted to light brown
2 tablespoons peanut oil
2 medium shallots, chopped finely
2 bunches red swiss chard or 2 bunches white swiss chard, rinsed well and torn into 2" pieces
1/4 cup crumbled feta cheese (Use your favorite Type, cow or goat)
salt and pepper

Steps:

  • In a wok heat the oil (medium heat).
  • Add shallots; stir fry 1 minute or until just beginning to brown.
  • Add Swiss Chard, toss and cover.
  • Cook 2 minutes.
  • Remove cover and cook about another minute.
  • If there is any liqiud drain it off.
  • Stir in the Feta cheese, cook 30 seconds or until it starts to melt.
  • Add Pine nuts and season.
  • Serve immediately.

1 cup vegetable oil for frying
1 cup bread crumbs
1 (16 ounce) package sliced fresh mushrooms
3 eggs, beaten
3 ounces crumbled feta cheese
3 tablespoons lemon juice
water, or as needed

Steps:

  • Heat oil in a small saucepan to 375 degrees F (190 degrees C).
  • Spread bread crumbs into a shallow dish. Dip mushroom slices in beaten egg, dredge them in bread crumbs to coat, and cook them in hot oil until golden brown, about 5 to 6 minutes. Repeat until all mushrooms are cooked; drain on a plate lined with paper towels.
  • Blend feta cheese and lemon juice in a blender. Stream water into feta mixture as it blends until you get a desirable consistency. Serve with mushrooms.

8 medium red skin potatoes, peeled & boiled
2 large onions, sliced
6-8 medium mini sweet peppers, chopped into rings
3 Tbsp olive oil
1 1/2 c crumbled feta cheese
12 oz shredded cheddar cheese, (3 cups)
1 Tbsp kosher salt
1 Tbsp granulated garlic powder
2 tsp coarse black pepper
2 Tbsp chopped dried chive
6 Tbsp wondra flour, or all purpose
3/4 stick butter(6 tablespoons)
2 large cans evaporated milk
2 can(s) milk cans filled with water
2 c french fried onion rings

Steps:

  • 1. Peel red skin potatoes and add to a large pot, cover with water, add 1 tablespoon of kosher salt, and bring to a boil and cook about 15-20 minutes, until tip of a knife can be inserted into the center and easily released.Drain in colander, set aside to cool and can be sliced as needed. MAY ALSO USE 2 % MILK INSTEAD OF EVAPORATED MILK IF DESIRED.
  • 2. While potatoes are cooling add olive oil to a large skillet then add in the sliced onions and mini pepper rings, saute until onions become translucent and begin to wilt slightly. Remove and set aside.
  • 3. Preheat oven to 350 degrees F. Spray a 9 X13 size casserole dish with non stick cooking spray. Then slice enough cooled potatoes to cover the bottom of the casserole dish. Top with 1/3 of the cooked peppers and onions, then top with about 1/3 of the feta cheese.
  • 4. To make the sauce, add the butter to a large skillet or pot, then add in the wondra or all purpose flour, and stir or WHISK till flour and butter is blended together evenly over medium high heat. Add in the milk and water, and spices, whisk until mixture begins to thicken, & will coat the back of a spoon. Pour about 1/3 of sauce over the first layer of potatoes, then top with 1 cup of shredded cheddar cheese.
  • 5. Repeat until you have used all of the cheeses, peppers and onions, sauce & potatoes to fill the casserole dish.
  • 6. Top with French Fried Onion Rings, then place in preheated 350 degree F. oven and bake for 35-40 minutes until potatoes are hot throughout, and bubbly along edges, and cheese is melted on top.NOTE: TO PREVENT ONION RINGS FROM OVER BROWNING, ADD THEM ON TOP DURING THE LAST 15 MINUTES OF BAKING IN OVEN IF DESIRED.

1 - head of garlic
1 tablespoon(s) olive oil, extra virgin
2 teaspoon(s) salt (divided)
1/2 cup(s) all purpose flour
1/4 cup(s) corn starch
2 tablespoon(s) instant potato flakes, dry
1 1/8 teaspoon(s) cayenne pepper
1 cup(s) chilled club soda
2 cup(s) panko bread crumbs
2 cup(s) vegetable oil
1 pint(s) feta cheese (crumbled)

Steps:

  • Preheat oven to 400 degrees.
  • Remove olives from the can, line a pan with papertowl, and place the olives on the pan. Dry each olive, make sure they are as dry as they can be. Then set aside.
  • Cut the top quarter off the top of the head of the garlic bulb. Place it in a pie pan and drizzle the top with the olive oil. Sprinkle with 1 tsp salt and pepper. Cover them with foil and bake until the garlic is roasted and soft, about 30 minutes.
  • Meanwhile, place panko bread crumbs in a shallow bowl and heat oil in a deep fryer or large saucepan to 350 degrees.
  • Once the garlic is done roasting, squeeze the the roasted garlic bulbs out and mix with feta in a food processor until smooth.
  • Using a pastry bag fitted with a plain large round tip, fill each olive with the garlic and feta mixture.
  • Place a toothpick width-wise through each olive. Dip each filled olive into the wet batter, then into the panko bread crumbs, and set aside until all olives are covered in the panko.
  • Deep fry each olive for about 3-5 min until the olives turn a nice golden color. Remove from oil, sprinke with salt immediately, then set aside to cool for 5 min, then serve.

My vegetarian German friends gave me this recipe. I cooked this today and really loved it, though I didn't have any feta on hand so I used a little mozzarella. Still, I love feta and I'm positive the feta can only make the recipe taste even better! The vegetarian sausages, hot dogs, or vegetarian bacon are optional, but it really make the potatoes taste more authentic and gives it great flavor. You can also add Baco bits which are vegetarian. Serve with a fresh green side salad.

2 lbs potatoes
1/2 lb feta cheese
2 -4 tablespoons canola oil
1 medium onion
salt, to taste
black pepper, to taste
1 (12 ounce) can vegetarian sausages, chopped (could also use a packet of frozen stripes, vegetarian bacon, chopped or Baco Bits which are vegetari) (optional)

Steps:

  • Boil potatoes in their skins until they are cooked, but not too soft (about 10-15 minutes), then peel and dice them.
  • In a skillet fry the onions in oil for a minute then add the vegetarian sausages or bacon if using it. Remove the sausages and onions from the skillet and set aside.
  • Fry the diced potatoes by laying the potatoes flat against the pan (you may need to use two pans if yours isn't large enough for all of them to lay flat and touch the pan) with oil and let them stand without mixing until they turn golden brown which should be after 3 or more minutes. After they turn golden brown flip the potatoes to the other side to do the same thing.
  • Once both sides are golden brown, add the onions and veggie sausage or vege bacon if using it, mix and then add the feta cheese stirring only once carefully.
  • Once the cheese has melted you are finished cooking the Bratkartoffeln.

The starting off point for this recipe is a classic Balkan cheese-stuffed pepper dish that I enjoyed frequently over the course of a long ago summer spent in Croatia. The peppers that are traditionally used for this are small, thin-skinned green peppers that taper to a single tip. These aren't easy to find locally, but I have recently found "baby bell peppers" that are the perfect size for this. I also make these stuffed peppers with Anaheims, which are spicy. The authentic filling is made with feta, herbs and egg only, but I decided to introduce some quinoa or bulgur to stretch the filling and make the peppers more substantial.

8 small sweet peppers, either baby bell or Italian peppers, about 1 pound
1 egg yolk
3 ounces feta, crumbled (about 3/4 cup)
1/2 cup cooked quinoa or bulgur
2 tablespoons finely chopped fresh parsley or mint
Freshly ground pepper
2 tablespoons unbleached all-purpose flour
2 to 3 tablespoons sunflower or grapeseed oil, as needed

Steps:

  • Roast the peppers over a flame or under the broiler until charred. Place in a bowl, cover tightly and allow to cool. Remove the skins and wipe the surface with paper towels.
  • With the tip of a paring knife, make a lengthwise slit down the middle of each pepper and carefully pull out the seeds and membranes and remove the stems and seed pods at the top. Open the peppers up on your work surface.
  • In a medium bowl beat together the egg yolk and the feta until amalgamated. Add the quinoa or the bulgur and the chopped herbs and stir together. Season with pepper (there's plenty of salt in the feta). Place a spoonful of filling down the middle of each pepper and fold the sides in over the filling, overlapping the edges.
  • Heat the oil over medium heat in a wide skillet. Place the flour on a plate. Lightly dredge the peppers in the flour. Fry the peppers gently until nicely browned, 3 to 4 minutes on each side. Use tongs to turn them. Drain on paper towels. Serve hot, warm or room temperature.

½ cup sesame seeds

  • Cut feta cheese into squares or rectangles about 1/2 inch thick.
  • Crack eggs into a bowl wide enough to fit the feta and beat lightly with a fork. Place flour on a plate. Place sesame seeds on a second plate.
  • Coat each piece of feta in flour, then eggs, and then sesame seeds. Be sure to coat well with each step, so all sides are covered.

Simple and delicious combination of bacon, cheese and chicken. I made it up myself but it goes really nicely served with 'Ainsley Harriott's' Lemon Couscous and roasted Mediterranean vegetables. A real mixture of flavours.

250 g bacon
2 chicken breast fillets
200 g feta cheese

Steps:

  • Cut the bacon - either streaky or back bacon into small 1cm cubes. (You could use diced pancetta, although it may be a bit too salty).
  • Cut the chicken fillets into thin strips.
  • Cut the feta into cubes.
  • Pan fry the bacon until well cooked, the more caramelised, sticky bits in pan the better! (You may need to add a little oil to the pan if you use back bacon).
  • Remove when cooked and set aside.
  • Do not wash the pan at this stage, keep the nice brown sticky bits in the pan and use to fry the chicken. As the chicken has been thinly sliced it wont take long to cook through.
  • Now put the bacon back in the pan on top of the chicken along with the feta cubes, lower the heat for a couple of minutes until the feta just begins to melt.
  • Be careful not to overcook or it will look a mess!
  • Serve straight away.

2 -3 chicken breasts, halved
salt and pepper
2 tablespoons olive oil
8 ounces pasta (any kind you like)
1 cup fresh basil
1/2 cup feta cheese
lemon wedge

Steps:

  • Boil salted water in a saucepan for the pasta. Cook until done. About 4 minutes for fresh, and 8 minutes for dried pasta. Drain and set aside.
  • While pasta is cooking, rub salt and pepper on the chicken breasts. (This is optional, but I like the extra flavoring.) Heat olive oil in a large skillet.
  • Cook the chicken in the oil about 3 minutes on each side or until juices run clear.
  • Remove the chicken from the pan, and shred. Mix chicken and feta with the pasta.
  • Add a little more oil to the pan and fry the basil. Remove when it is crispy. (Don't worry, once it's past the wilted stage, it will crisp up. Believe me!).
  • Top pasta with the fried basil and serve with lemon wedges.

6 ½ ounces dry pizza crust mix
½ cup hot water
5 tablespoons olive oil
8 ounces crumbled feta cheese
1 red onion, thinly sliced
1 tablespoon chopped fresh thyme
½ tablespoon butter
4 apples, cored and chopped
ground black pepper to taste

Steps:

  • In a medium bowl, combine contents of the pizza dough package and 1/2 cup hot water. Stir vigorously, about 25 strokes. Set the bowl in a warm place (about 85 degrees F, or 35 degrees C) for 5 minutes. Turn dough onto floured board, divide the dough into 8 small sections. Knead the dough and shape it into rounds.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a large skillet, heat the olive oil. Add the dough and fry until the dough is lightly browned, flipping once to brown on both sides. Once cooked, place the circles on a cookie sheet. Sprinkle the feta, red onion, and thyme on top of the circles.
  • Bake the pizzas until the feta begins to brown, about 10 to 12 minutes.
  • While the pizzas bake, in the previously used skillet, heat 1/2 tablespoon of butter and a few sprigs of thyme. Mix the apples into the skillet, and cook until the apples are soft and golden. Lay the apples on top of the pizzas, season with pepper, and serve.

2 eggs
1 teaspoon Paprika
1 teaspoon Freshly ground pepper
3 ounces Flour to coat feta
2 ounces Sesame seeds
7 tablespoons Olive oil for frying
4 tablespoons Honey

Steps:

  • Cut feta into little blocks
  • Beat eggs in a bowl. Put flour in another bowl with the paprika and pepper and mix.
  • Put sesame seeds in a third bowl.
  • Roll each little piece of feta in the egg, then in the flour, then in the sesame seeds so that all sides are covered.
  • Hear 6-7 Tbsps oil in a frying plan (just enough to cover the bottom of the pan) and fry the feta on all sides until nicely colored.
  • Remove feta with a slotted spoon to paper towels to drain.
  • Warm honey in microwave until liquid and drizzle over the feta. Serve with french bread.

1 egg, beaten
50 g flour
1 cup breadcrumbs
mixed salad greens or vegetables
2 tablespoons olive oil
1 tablespoon raspberry vinegar
handful mint, chopped

Steps:

  • Cut he feta slices into two triangles.
  • Roll them first through flour, then through the egg, and finally cover with breadcrumbs.
  • Put in the fridge for two hours.
  • Fry the feta slices in hot oil, about two minutes per side.
  • Arrange the vegetables on a plate with the feta.
  • Beat the vinegar and oil together and drizzle over the vegetables.
  • Sprinkle with mint.

5 tablespoons olive oil (divided)
1/2 lemon, juice only
2 teaspoons fresh oregano, chopped
1 pinch sugar
pepper
12 plum tomatoes, sliced
1 small red onion, sliced thinly
1/2 ounce arugula leaf
20 black Greek olives
7 ounces Greek feta cheese
1 egg
3 tablespoons flour

Steps:

  • Whisk together 3 tbsp olive oil, lemon juice, oregano, sugar, and pepper in a small bowl. Set aside.
  • Divide and arrange the tomatoes, onion, arugula, and olives on four plates.
  • Cut the feta cheese into 1" cubes. Beat egg in a small bowl and put the flour on a plate. Toss the cheese into the egg and shake off excess. Toss the egg coated cheese in the flour on the plate.
  • Heat 2 tbsp olive oil in a large skillet. Add the cheese and fry over medium heat, turning until all sides are golden brown.
  • Scatter the fried feta over the salad. Whisk the dressing again and spoon over the salad. Serve while the feta cheese is still warm.
