This, of course, is not the real "secret" Kentucky fried chicken recipe, but it really does taste like it.

3 pounds chicken (cut into pieces)
2 to 3 eggs (beaten)
3 to 4 tablespoons oil for frying
2 cups flour
4 teaspoons paprika
2 1/2 teaspoons salt
1/2 to 1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon tarragon
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/2 teaspoon celery salt

Steps:

  • Mix together all the coating ingredients and place in a clean plastic bag. Dip each piece into beaten egg, then into the flour mixture in the bag. Coat the chicken completely with the flour mixture.
  • Place the oil in a skillet and heat. Brown the chicken in oil slowly (225ºF if you are using an electric skillet), uncovered. Cover the skillet and continue to fry at a very low heat until the chicken is fully cooked, approximately 30 minutes. Check for doneness before removing the chicken from the skillet. It may need longer to cook on slow heat.
  • Drain well on paper towels.

Adapted from a recipe found on the internet and made in my vintage sunbeam fryer/cooker. This is awesome! For the chicken pieces, make sure that they are not too big: whole drumstick, whole thigh, but the breast part should be chopped into two. Its also helpful to use the fryer cover-it helps the meat cook through properly.

1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil

2 teaspoons garlic salt
1 tablespoon celery salt
8 chicken pieces
2 beaten eggs
1 cup breadcrumbs
peanut oil

Steps:

  • Pre heat oil in deep fryer to 350°F.
  • Mix all the ingredients except the oil, breadcrumbs, eggs, and chicken in a large bowl.
  • Dip the chicken pieces in the egg and then turn them over in the breadcrumbs.
  • Roll them in the spicy flour mixture.
  • Heat the oil to 350 degrees F in a deep fryer and drop the chicken pieces in, one at a time with tongs careful not to splash hot oil.
  • Fry the chicken for 12 to 15 minutes, until it is golden brown and cooked through.
  • Drain on racks for 5 minutes.

This is another one of my Grandmother's recipes from Goose Creek Kentucky, which is where my mother lived until she was 28 then moved to Sandusky, Ohio, my mother is now 84. So, that tells you how old this recipe is! Follow as described and you will not go wrong!

1/2 cup milk
1 beaten egg
1 cup flour
2 teaspoons salt
1 teaspoon paprika
2 teaspoons black pepper
1/2 teaspoon sage
1/2 teaspoon tarragon
1 frying chicken, cut up
1/4 teaspoon oil or 1/4 teaspoon shortening

Steps:

  • Combine milk and egg and set aside. Combine flour, salt, paprika, pepper, sage and tarragon in a plastic bag. Add a few pieces of chicken to the dry mixture and shake to coat.
  • Dip the chicken in the egg and milk mixture. Shake the wet chicken and then coat a second time in the flour mixture. This can be baked in the oven at 375 to 400 for 45 minutes, made on the stove top, or in an electric frying pan on medium high heat.
  • Brown chicken on all sides then reduce heat to medium low. Continue cooking until chicken is tender (app. 35 - 45) minutes. Do not cover. Turn chicken several times during cooking and drain on a paper towel when done.
  • To deep fry heat three inches of oil to 365 in a deep fryer or deep saucepan and fry the chicken for 15 - 18 minutes. Drain on paper towels. Cooking uncovered reduces the moisture in the pan and keeps the chicken coating crispy. A splatter screen for the top of the pan is helpful in keeping down the mess.

4 quarts buttermilk
1/16 cup cayenne pepper
1/16 cup black pepper
1/16 cup salt
8 cups white flour
1 gallon peanut oil (for frying)

Steps:

  • Mix half of dry( excluding flour) ingreidents with butter milk.
  • Stir butter milk mixture well.
  • Place chicken parts in butter milk ( zip-lock bags work well) in refrigerator for one week.
  • Mix other half of dry ingrdients with flour.
  • Drain chicken in a large colander or strainer until the butter milk mixture is only dripping down at a drip drop pace, about 20 minutes.
  • Heat oil to 390 degrees in a large pan, deep fryer, or dutch oven. use a candy thermometer to maintain temperature( they cost about $6.00).
  • Toss chicken in flour like you would shake and bake stuff.
  • Shake off excess flour.
  • Deep fry chicken in hot peanut oil until a deep golden brown and cooked through.

1 dozen eggs, whipped
1 cup buttermilk
2 tablespoons Cajun spice
16 pieces fresh bone-in chicken (2 to 3 pounds)
8 cups vegetable oil
4 cups all-purpose flour
1 tablespoon kosher salt
1 teaspoon ground black pepper

Steps:

  • In a large bowl, blend the eggs, buttermilk and Cajun spice. Mix well, and then pour over the chicken pieces, mixing and coating well. After coating the chicken, cover and refrigerate overnight, or for a minimum of 4 hours.
  • Preheat the oil to 300 degrees F in a deep-fryer. Remove the chicken from the marinade and allow to sit on a baking screen for 5 minutes. This will allow any excess marinade to drip off.
  • Next, in a large bowl, blend the flour, salt and pepper, mixing well. Dredge the marinated chicken in the flour. Coat the chicken well with flour, and then tap off any excess. Add to the heated oil. Fry the chicken in batches until it reaches 165 degrees F on an instant-read thermometer, 13 to 15 minutes. Then remove from the oil and allow any excess to drip off before serving. This will allow the meat to rest before serving. Repeat the cooking process with the remaining chicken. (Hold the cooked chicken in the oven on low temperature if doing in batches.)

Steps:

  • Combine 1 tablespoon salt with 3 quarts water in a large bowl or container. Add chicken, cover and refrigerate 8 hours or overnight. Drain, rinse with cold water and pat dry.
  • Stir together remaining 1 teaspoon salt and the black pepper. Sprinkle half the mixture evenly over chicken.
  • In a large sealable plastic bag, combine remaining pepper mixture and flour. Add 2 pieces chicken to bag and shake well to coat. Remove chicken pieces, shaking off extra flour, and set aside. Repeat with remaining chicken.
  • Take a large (10- or 12-inch) cast-iron skillet or chicken fryer, for which you have a lid, and fit with a candy or deep-frying thermometer. Add oil and bacon drippings and heat to 360 degrees over medium heat; the oil will ripple and possibly give off a few wisps of smoke.
  • Using tongs, immediately add chicken pieces, skin side down (work in batches if necessary to avoid crowding pan). The oil will drop to about 325 degrees, where it should stay; adjust heat so that oil is bubbling gently around the pieces. Cover and cook 6 minutes; uncover and cook 9 minutes. Turn chicken pieces; cover and cook 6 minutes. Uncover and cook another 5 to 9 minutes, depending on size of pieces. If necessary for even browning, turn pieces over a few times toward the end.
  • Drain on paper towels or paper bags. Let cool at least 20 minutes before serving.

Steps:

  • Fill large skillet almost half full with oil.
  • Heat to 350°F.
  • Season chicken with salt and pepper.
  • Mix milk, eggs, and chili sauce together in a shallow bowl.
  • In a separate bowl place flour.
  • Dip chicken in milk mixture coating all of the chicken.
  • Let excess mixture drip off chicken.
  • Dredge chicken in flour coating the whole piece.
  • Place chicken in heated oil dark meat first.
  • Turn chicken over to ensure even cooking.
  • Cook until golden brown and juices run clear.
  • Serve with my roasted garlic mashed potatoes.
  • Tips- Don't let chicken sit after coating it with flour because the coating will turn out soggy. Make sure you turn the chicken often to avoid burning. Your dark meat will take longer to cook than your white meat. When buying the chili sauce, look in the international foods isle. The chili sauce I prefer is on the Japanese shelf. Careful, that stuff is HOT.

1 (3 pound) whole chicken, cut into 6 pieces
2 eggs, beaten
1 (12 fluid ounce) can evaporated milk
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 ½ cups all-purpose flour
1 ½ cups vegetable oil for frying

Steps:

  • In a medium size bowl mix together the eggs and milk. Add ALMOST all of the salt, pepper, garlic powder, and onion powder (reserve a dash of each for seasoning the chicken pieces). Set aside.
  • Sprinkle a dash of the remaining salt, pepper, garlic powder and onion powder onto both sides of the chicken pieces.
  • In a large skillet, heat the oil over medium heat. Put the flour in a plastic bag. One piece at a time, dip the chicken into the egg/milk mixture then add to the plastic bag. Shake the bag so that the flour is covering each piece of chicken.
  • You can check to see if the oil is hot enough by sprinkling a little flour in the skillet. If it fries, it's hot enough! Place the chicken pieces in the skillet. After about 5 minutes, turn the chicken over. Let chicken fry for about 15 minutes or until the meat is cooked through and the juices run clear. Enjoy!

1/2 cup plus 1 teaspoon coarse salt
1 chicken (3 pounds), cut into 8 pieces
1 quart buttermilk
2 pounds lard
1 cup (2 sticks) unsalted butter
1/2 cup country-ham pieces, or 1 thick slice country ham cut into 1/2-inch strips
1 cup all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, mix together 1 gallon of water and 1 cup salt; stir until salt is dissolved. Add chicken pieces and let stand, refrigerated, 8 to 12 hours.
  • Drain chicken and rinse out bowl. Return chicken to bowl and pour over buttermilk. Cover bowl and refrigerate 8 to 12 hours. Drain chicken on a wire rack set over a parchment paper-lined baking sheet, discarding buttermilk.
  • Meanwhile, place the lard, butter, and country ham into a large heavy skillet. Cook over low heat, skimming as needed, until butter has stopped foaming and country ham is browned, 30 to 45 minutes. Using a slotted spoon, remove ham and discard. Increase heat to medium-high and heat fat until it reaches 335 degrees on a deep-fry thermometer.
  • In a shallow bowl, mix together flour, cornstarch, remaining 1 teaspoon salt, and pepper. Gently squeeze chicken to remove any excess buttermilk. Dredge chicken pieces thoroughly in the flour mixture, shaking off any excess.
  • Working in batches, gently place chicken pieces in the heated fat. Cook until chicken is golden brown and cooked through, 8 to 10 minutes. Transfer to a wire rack set over a parchment paper-lined baking sheet or crumpled paper towels. Serve fried chicken hot, warm, room temperature, or cold.
