Straight out of Wisconsin, fried cheese curds are a favorite at carnivals and fairs. They look like little balls of popcorn and taste like cheese! Use up to 2 pounds of cheese curds with this recipe.

1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
2 eggs, beaten
½ cup milk
1 pound cheese curds
1 quart oil for frying

Steps:

  • In a medium bowl, sift together the flour, baking powder, and salt. Stir in the eggs and milk. Mix until smooth. Add more milk for a thinner batter. Coat the cheese curds with the batter.
  • Heat the oil in a large, heavy skillet over medium heat. Fry the coated cheese curds approximately 1 minute each, until golden brown. Drain on paper towels.

Number Of Ingredients 7

1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup club soda
1 pound cheese curds
4 cups vegetable or canola oil
Marinara sauce, for serving

Steps:

  • In a medium bowl, mix the flour, baking powder and salt. Stir in the club soda and mix until smooth. Add the cheese curds to the batter and coat thoroughly.
  • Heat the oil in a large, heavy skillet or heavy-bottomed pot over medium heat until a deep-frying thermometer inserted in the oil reads 360 degrees F. Fry the cheese curds for about 1 minute, turning halfway through. Drain on paper towels. Serve the fried cheese curds with marinara or your favorite dipping sauce.

1 quart vegetable oil
1 1/2 cup buttermilk, divided
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cayenne pepper
1 pound of cheese curds (or more, or less - really as much as you are willing to eat)
1 egg
1/4 cup water
3/4 cup Panko bread crumbs

Steps:

  • Heat oil on stove over medium to medium high heat while preparing the curds. In a small bowl add 1/2 cup of buttermilk. Set aside. In a third bowl combine flour, baking powder, salt and cayenne pepper, mix well. Take curds and dip into buttermilk. Then dip into flour mixture and set aside. Do this to all of the curds. Add 1 cup of buttermilk, water and egg to the flour mixture and mix well. In another bowl add bread crumbs and set aside. Dip floured curds into liquid buttermilk batter and remove with a slotted spoon. Place curds into bread crumbs and cover. Once oil is ready {test oil with the end of a wooden spoon, if bubbles form around soon, then it's hot and ready} place battered curds into hot oil and cook 2 minutes, then flip and cook another 2 minutes until golden color. Remove and place on a plate with paper towels. As soon as they are cool enough to eat ~ DEVOUR!

SOUP
4 Tbsp butter
1 medium onion, finely chopped
2 stalk(s) celery, finely chopped
1 medium carrot, finely chopped
1/3 c all purpose flour
1 c chicken stock
12 oz pale ale
1 c milk or half-and-half
2 tsp worcestershire sauce
1 tsp dry mustard
1/2 lb (8 oz.) sharp cheddar cheese, shredded (from wisconsin if you can find it)
CHEESE CURDS
5 oz beer (same as above)
5 oz pancake mix, may use bisquick
1/2 tsp salt
1 egg
2 1/2 lb cheese curds at room temperature (may substitute 1-inch chunks of mozzarella)
oil for frying

Steps:

  • 1. FOR THE SOUP: In a large saucepan over medium heat, melt the butter. Add the onion, celery and carrots and saute until onions are translucent and soft, about 4 or 5 minutes. Sprinkle the flour over the top and cook for another 1 to 2 minutes.
  • 2. Whisk in the chicken stock and beer; bring to a boil. Reduce heat to low and simmer 5 minutes or until vegetables are cooked and tender.
  • 3. Add the half-and-half or milk, Worcestershire sauce and dry mustard. Return to simmer. Remove from heat and slowly add the cheddar cheese, stirring until it is melted and smooth. DO NOT OVERHEAT soup after cheese is added--it could curdle.
  • 4. Season with salt and pepper to taste and serve hot with sliced fried cheese curds to garnish.
  • 5. FOR THE CHEESE CURDS: In a medium-sized bowl, mix the beer, pancake mix, salt and egg. Dip cheese curds in the batter and drop, one at a time, into heated oil (425-450 degrees). Fry for about 1 minute or until golden brown. Drain on paper towels. Slice and serve as garnish on soup, or eat as an appetizer.

I am sure that like other cheese curd recipes, it is not recommended that you substitute regular cheese as it WILL make a mess. String cheese should work instead of cheese curds if necessary, though.

  • * Use enough vegetable oil to completely cover cheese curds while frying. In a deep fryer or large pot, heat vegetable oil (375 degrees to 385 degrees F). In a medium bowl, combine egg, 1 tablespoon vegetable oil, and milk or beer until well blended. Add flour, sugar, salt, and baking powder; mix until smooth. Drop cheese curds in batter. Using a spoon, turn cheese curds to coat thoroughly. A few at a time, drop the coated curds into the hot oil; fry approximately 1 minute or until brown and puffed, turning to coat all sides (do not overcook, or the cheese curds will begin to melt and ooze through the coating.
