Avocado fries are made with sliced avocado, coated with crispy panko breadcrumbs and air fried until crisp and golden. So easy to make, if you don't have an air fryer you can also bake them!

8 ounces 2 small avocados, peeled, pitted and cut into 16 wedges
1 large egg (lightly beaten)
3/4 cup panko breadcrumbs (I used gluten-free)
1 1/4 teaspoons lime chili seasoning salt (such as Tajin Classic)
1/4 cup 0% Greek Yogurt
3 tablespoons light mayonnaise
2 teaspoons fresh lime juice
1/2 teaspoon lime chili seasoning salt (such as Tajin Classic)
1/8 teaspoon kosher salt

Steps:

  • Preheat the air-fryer 390F degrees.
  • Place egg in a shallow bowl. On another plate, combine panko with 1 teaspoon Tajin.
  • Season avocado wedges with 1/4 teaspoon Tajin. Dip each piece first in egg, and then in panko.
  • Spray both sides with oil then transfer to the air fryer and cook 7 to 8 minutes turning halfway. Serve hot with dipping sauce.
  • Preheat the oven 425F, follow directions above and bake on a sheet pan until golden and crisp, 10 to 15 minutes.

4 medium white potatoes
Cooking spray
1 teaspoon Cajun seasoning
1/2 cup fat-free sour cream
2 tablespoons barbecue sauce

Steps:

  • Heat gas or charcoal grill. Cut each potato lengthwise into 8 wedges; pat dry with paper towels. Spray potato wedges thoroughly with cooking spray. Sprinkle with Cajun seasoning. Place in grill basket (grill "wok").
  • Place grill basket on grill rack over medium heat. Cover grill; cook 30 to 40 minutes, stirring every 10 minutes, until potato wedges are tender.
  • In small bowl, mix sour cream and barbecue sauce. Serve with potato wedges.

2 eggs, lightly beaten
1 cup flour
2 cups panko breadcrumbs
salt, to taste
cayenne pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Slice each avocado in half, then into wedges. Scoop out of the peel.
  • Mix panko breadcrumbs with salt and cayenne.
  • Dip each avocado wedge in flour, then eggs, then panko, then place on a parchment-lined baking sheet.
  • Bake 12-15 minutes, flipping once.
