GRANDMA'S CANDIED YAMS

Steps:
- Preheat the oven to 375 degrees F.
- Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
- In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
- Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
- Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!

Steps:
- Preheat the oven to 350 F.
- Wash the yams.
- Peel, then chop the yams ( make sure that they are about 1/2 inch thick.)
- Place the yams into a 9x13 bake dish.
- Place the butter into a medium sized pot, then melt it over medium heat.
- Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
- Turn the stove off, mix the ingredients, then add in the vanilla extract.
- Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
- Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
- Remove the yams from the oven, and baste them with the candied mixture.
- Cover the yams, and bake them for another 15-20 minutes.
- Remove the yams from the oven, and let them sit for about 10 minutes before serving.
- Enjoy!
YAM FRIED CHICKEN
Steps:
- Put sweet potatoes and 6 cups water in a saucepan or stockpot on high heat. Cook until still slightly firm, 12 to 15 minutes from the time the heat is ignited. Pour off all water, reserving 2 cups.
- Return potatoes, butter, sugar and the 2 cups reserved water to the pot over high heat. Cook until the liquid starts to caramelize, about 15 minutes.
- Remove potatoes, leaving the caramelized liquid. Cook the yam sauce an additional 5 minutes on high heat. Add Fried Chicken. (Eat the potatoes. They are delicious.)
- For Florence's fried chicken seasoning: Stir together the flour, salt, pepper, baking powder and cornstarch in a medium bowl.
- For the chicken: Sprinkle chicken with salt and pepper. Melt shortening in a heavy skillet or Dutch oven on medium heat. Cover chicken in Florence's fried chicken seasoning.
- Drop in skillet. Cook in two batches (white and dark separately), turning halfway through, until internal temperature reads 165 degrees F in the thickest part of the meat (not touching the bone), approximately 20 minutes.
SOUTHERN CANDIED YAMS
Candied yams is a old fashioned side dish that's slow cooked in a candied mixture on the stove-top with warm spices, sugar and butter.

- Scrub, peel and slice your yams into 1/2 inch rounds. In a medium pot over medium high heat, combine the sweet potatoes and the rest of the ingredients. Stir the sweet potatoes until coated in the sugar and butter mixture.
- Let it come to a boil. Cover then simmer for about 50 minutes or until the yams are nice and tender when slightly pierced with the tines of a fork or taste. If the yam is still a bit hard. Let it cook a bit longer.
- Remove the top then set stove to medium. Let the cooking liquid come to a boil. Stirring occasionally until the cooking liquid reduces about 10 minute or until the syrup coats the yams. Remove the pot with the candied yams from the stove and place them into the oven until you are ready to serve them. These taste best warm. Please share this recipe, so other people can enjoy it!
FRIED SWEET POTATOES OR YAMS
A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels".

Steps:
- Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
- Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
- Place on paper towels and salt immediately.
- Serve and enjoy!
