2 tsp. olive oil
3/4 lb. fresh chorizo, casings removed
1 small onion, chopped
2 cloves garlic, chopped
1 (15-ounce) can Black Beans, rinsed
8 oz. Tortilla chips
10 oz. sharp Cheddar or pepper Jack cheese, grated (about 2.5 cups)
1/2 small head iceberg lettuce, shredded
3/4 c. Fresh salsa
1 avocado, chopped
fresh cilantro
pickled jalapenos
sour cream

Steps:

  • Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
  • Heat oil in a large skillet over medium heat. Add chorizo, onion, and garlic and cook, breaking chorizo into pieces with a wooden spoon, until browned, 6 to 8 minutes. Stir in beans and cook until warm, 2 to 4 minutes.
  • Spread chips on prepared pan. Spoon chorizo mixture over chips and sprinkle with cheese. Bake until the cheese is melted and chips are toasted, 10 to 12 minutes.
  • Serve topped with lettuce, salsa, avocado, cilantro, jalapeños, and sour cream.

1 tablespoon canola oil
1 cup chopped white onion (from 1 medium [8 oz.] onion)
2 large garlic cloves, minced (about 1 Tbsp.)
1 pound ground round
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 cup thick and chunky red salsa (from 1 [16-oz.] jar)
3/4 cup taco sauce (from 1 [8-oz.] jar)
1 cup beef broth
1 (15-oz.) can black beans, drained and rinsed
1/4 cup chopped fresh cilantro, plus more for garnish
Cooking spray
6 cups coarsely crushed tortilla chips (from 1 [13-oz.] bag)
2 (6-oz.) pkg.s pre-shredded Mexican cheese blend (about 3 cups)

Steps:

  • Preheat oven to 400°F with oven rack in top third of oven. Heat oil in a large skillet over medium-high. Add onion and garlic; cook, stirring often, until translucent, about 4 minutes. Add ground beef, chili powder, cumin, oregano, and paprika, and cook, stirring often, until beef is no longer pink, about 6 minutes. Stir in salsa, taco sauce, and broth; cook, stirring often, until slightly thickened, about 3 minutes. Stir in beans and cilantro.
  • Lightly coat a 13- x 9-inch, 3-quart baking dish with cooking spray. Spread one-third of the chips (about 2 cups) on bottom. Top with half of the beef mixture (about 3 cups). Spread another layer of tortilla chips over beef, and sprinkle with 1 1/2 cups of the cheese. Top with remaining half of beef mixture, and sprinkle with remaining chips and cheese. Cover with aluminum foil, and bake in preheated oven until mixture is starting to bubble around the edges, 15 to 20 minutes.
  • Uncover and continue to bake until lightly browned and bubbly, about 5 more minutes. Garnish with chopped cilantro.

I got this recipe from summer camp, and when I made them at home, my whole family was impressed. Layers of tortilla chips and salsa with the works on the side - tastes just like the nachos they serve at restaurants. Perfect for a party!

¼ cup chopped red onion
4 tomatoes, seeded and finely chopped
½ cup chopped fresh parsley
¼ cup olive oil
1 lime, juiced
1 pinch salt and black pepper
1 (8 ounce) package tortilla chips
2 cups shredded Cheddar cheese, divided
½ cup sour cream
½ cup guacamole

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix together the onion, tomatoes, parsley, olive oil, lime juice, salt and pepper in a bowl.
  • Spread tortilla chips in a single layer onto a baking sheet, and spoon about 1 teaspoon of the tomato salsa onto each chip. Spread 1 cup of Cheddar cheese over the nachos, top the chips with another teaspoon or so of salsa, and top with the remaining 1 cup of cheese.
  • Bake the nachos in the preheated oven until the cheese is bubbling, about 5 minutes. Serve hot with sour cream, guacamole, and any remaining salsa on the side for dipping the chips.

1 pound ground beef
1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
2 (16 ounce) cans refried beans
2 cups shredded Cheddar cheese
1 (15 ounce) jar salsa
1 (12 ounce) bag tortilla chips
¼ cup chopped iceberg lettuce
1 chopped green onions
1 tablespoon diced tomatoes
1 tablespoon shredded Cheddar cheese
¼ cup diced avocado
1 tablespoon sour cream
1 tablespoon taco sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan; set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef and onions. Cook and stir until the beef is crumbly and evenly browned. Drain fat. Mix in the taco seasoning, and set aside.
  • Spread the refried beans to cover the bottom of the prepared 9x13 inch pan. Layer the cooked ground beef and onions evenly over the refried beans. Pour the jar of salsa over the ground beef and spread 2 cups shredded Cheddar cheese over the salsa layer.
  • Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with tortilla chips and your choice of fresh toppings.

1 lb ground beef sirloin
1 package (8 oz) refrigerated prechopped onion
1 package (8 oz) refrigerated prechopped tricolor bell pepper mix
1 jar (16 oz) Old El Paso™ Thick 'n Chunky mild salsa
1 can (2 1/4 oz) sliced ripe olives, drained
3 cups shredded pepper Jack cheese (12 oz)
1 bag (11 oz) tortilla chips
1/2 cup unsalted butter, melted, cooled
2 cups shredded iceberg lettuce
1 cup diced tomatoes
1/4 cup sliced green onions (4 medium)
Sour cream, if desired

Steps:

  • Heat oven to 375°F. In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Add onion and bell peppers; cook about 5 minutes, stirring occasionally, until tender.
  • Add salsa, olives and 1 1/2 cups of the cheese to beef mixture; stir gently to combine. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
  • Place tortilla chips in resealable food-storage plastic bag; seal bag and crush with rolling pin or flat side of meat mallet until coarse crumbs form. Add melted butter; seal bag and shake until combined. Sprinkle over beef mixture. Top with remaining 1 1/2 cups cheese.
  • Bake uncovered 25 to 30 minutes or until thoroughly heated. Let stand 5 minutes. Top with lettuce, tomatoes and green onions. Serve with sour cream.

2 pounds ground beef
3 cups shredded Colby-Monterey Jack cheese, divided
3 cups salsa
1 package (10 ounces) frozen corn, thawed
1 cup sour cream
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
6 cups tortilla chips

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Stir in 2 cups cheese, salsa, corn, sour cream, chili powder and cumin; mix well. , Pour half into a greased 13x9-in. baking dish. Top with half of the chips; repeat layers. Bake, uncovered, at 350° for 25 minutes or until heated through. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.
