2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

1 (28 ounce) can crushed tomatoes
1 (14 1/2 ounce) can diced tomatoes
5 tablespoons fresh basil, roughly chopped
1/4 teaspoon sugar
table salt
1 lb fusilli
8 ounces fresh mozzarella balls, mini, drained and cut in half
1/3 cup parmesan cheese, grated

Steps:

  • Bring 4 quarts water to boil in large pot.
  • Meanwhile, heat 2 tablespoons oil, garlic, and pepper flakes in medium saucepan over medium heat until fragrant but not brown, about 2 minutes. Stir in crushed and diced tomatoes, bring to simmer, and cook until slightly thickened, 15-20 minutes. Stir in 3 tablespoons basil, sugar and 1/2 teaspoons salt.
  • Add 1 tablespoons salt and pasta to boiling water. Cook until al dente. Reserve 1/4 cup cooking water, drain pasta, and transfer back to pot. Stir in sauce and remaining tablespoons oil, and cook over medium heat until heated through (adding reserved water if pasta seems dry), about 1 minute. Stir in mozzarella and season with salt. Serve, sprinkling with remaining 2 tablespoons basil and Parmesan.

Steps:

  • In 12-inch skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is crisp-tender. Stir in tomatoes. Heat to boiling. Reduce heat; simmer uncovered 20 to 25 minutes, stirring occasionally, until thickened. Stir in basil.
  • Meanwhile, cook and drain pasta as directed on box.

1/2 cup sun-dried tomatoes
1/3 cup olive oil
1/4 cup red wine vinegar
2 Tbsp. drained capers
1 garlic clove, minced
1 Tbsp. sugar
1 lb. fusilli, rotini or the like
1 cup packed fresh basil leaves, shredded
4 oz. fresh mozzarella (fresh mozzarella is packed in liquid - you can find it at Trader Joe's marketed as ovolini. Four oz. is about one mozzarella ball. If you want a really cheese-a-licious pasta and aren't afraid of the added fat, feel free to toss in another mozzarella ball's worth of cheese as well.)
1/2 cup grated parmesan
1/2- 3/4 cup canned black olives, kalamata olives, or mixture

  • Soak the sun-dried tomatoes in warm water for 20 minutes or so, until softened. Drain. Toss all the ingredients into a food processor or blender until the tomatoes are good and chopped up and you have a chunky sort of dressing. assembling the pasta salad along with the parmesan.   • Remove and discard fresh thyme sprig, if used. Add basil and drained pasta; toss until heated.

1 (16 ounce) package bow tie pasta
1 lb fresh asparagus
1 cup bottled lemon vinaigrette
1 (1 ounce) package fresh basil, chopped
1 pint grape tomatoes, halved
salt and pepper

Steps:

  • Cook pasta according to package directions, adding asparagus, cut into 2" pieces, during the last 2 minutes of cooking time. Drain and rinse under cool water.
  • Stir together 1 cup bottled lemon vinaigrette and chopped basil. Pour 3/4 cup of dressing over pasta mixture. Stir in tomatoes, and salt and pepper to taste. COver and chill 1 hour. Toss with remaining dressing just before serving. Garnish with additional freshly basil.

Steps:

  • Heat the oil in a large, deep frying pan. Fry the meatballs until cooked all the way through. Set aside, leaving the juices and remaining oil in the pan.
  • Add the chopped onion to the pan and cook for 3-4 minutes or until soft. Add the garlic and cook for another minute. Pour in the red wine and cook until reduced by half.
  • Stir in the chopped tomatoes, chili and fresh basil and season generously with salt and pepper. Stir the meatballs into the sauce and cook on a moderate heat for 10 minutes.

We were, so we came up with this simple spin in which fresh mozzarella tempers the heat of spicy chili flakes. Here's what we discovered: Test Kitchen Discoveries Combine canned crushed and diced tomatoes for a rich flavor and thick texture. Flavor the sauce simply with red pepper flakes and minced garlic. Cook the pepper flakes along with the garlic in extra-virgin olive oil to intensify their flavor. Use fresh mini balls of mozzarella. If you can't find the small balls, larger balls can be cut into small cubes. Low-moisture mozzarella, the shrink-wrapped stuff, won't taste nearly as good in this dish. Liberally season the water in which the pasta is cooked; otherwise the pasta will taste bland. We recommend 1 tablespoon of salt per gallon of water. 1/2 cup fine semolina flour
1/4 cup finely chopped fresh basil
2 tablespoons finely grated parmesan cheese
2 tablespoons finely grated pecorino romano cheese
Kosher salt
3/4 cup whole milk
2 large eggs
2 tablespoons extra-virgin olive oil
1 large eggplant (about 1 1/2 pounds), cut into 1-inch chunks
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
5 cloves garlic, smashed
Pinch of red pepper flakes
1 28-ounce can whole peeled Italian tomatoes, crushed with your hands
1 tablespoon chopped fresh basil, plus 1/2 cup torn leaves
8 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
Grated pecorino Romano cheese, for topping

Steps:

  • Make the pasta: Whisk both flours, the basil, both cheeses and 1 teaspoon salt in a large bowl. Whisk the milk, eggs and olive oil in a separate bowl, then pour into the flour mixture and stir with a fork until the dough comes together. Knead the dough on a floured surface with floured hands until smooth and elastic, about 5 minutes, adding more flour as needed so the dough is soft but not sticky. Wrap in plastic wrap; let rest at room temperature for 2 hours.
  • Cut the dough into quarters. Working with one piece at a time (keep the rest wrapped in plastic), roll the dough through a pasta machine on the thickest setting. Continue rolling the dough through progressively thinner settings, dusting with flour as needed, until it is about 1/8 inch thick. Using a knife, cut the sheet of dough into 4-by-1/4-inch noodles. Dust the noodles with more flour, then scatter on a parchment-lined baking sheet. Repeat with the remaining dough. Cover the pasta with a kitchen towel and set aside until ready to cook or refrigerate up to 4 hours.
  • Make the sauce: Preheat the oven to 450 degrees F. Toss the eggplant, 1/4 cup olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl. Spread on a baking sheet and roast, stirring once or twice, until tender and browned, 35 to 40 minutes. Remove to a plate and set aside.
  • Meanwhile, heat 2 tablespoons olive oil with the garlic and red pepper flakes in a medium saucepan over medium heat. Cook until the garlic is tender and golden, about 4 minutes. Add the tomatoes, then add 1 cup water to the empty can and add to the saucepan. Bring to a simmer and cook, stirring occasionally, until the sauce is thickened, 35 to 40 minutes. Remove from the heat, stir in the chopped basil and season with salt and pepper.
  • Bring a large pot of generously salted water to a boil. Add the pasta and cook until it floats to the top and is tender, 3 to 4 minutes. Reserve 1/2 cup cooking water; drain the pasta and return to the pot. Add the sauce and cook over medium heat, stirring, until coated, about 1 minute. Remove from the heat and stir in the remaining 2 tablespoons olive oil, three-quarters of the eggplant, the mozzarella and 1/4 cup torn basil. Add the reserved cooking water as needed to loosen. Transfer to a large shallow bowl. Top with the remaining eggplant and 1/4 cup torn basil; sprinkle with pecorino.

1/2 lb prosciutto, cut into shreds
1 onion, chopped
2-3 garlic cloves, minced
3-4 large tomatoes, sliced into thin wedges
1/2 c fresh basil leaves, chopped (or more, if you like basil)
1 Tbsp dried parsley
1/2 c dry red wine (merlot, burgundy, etc.)
1 lb spaghetti, cooked al dente

Steps:

  • 1. In a large frying pan, toss prosciutto in butter until browned.
  • 2. Add onion and garlic and sauté briefly, until just tender.
  • 3. Add sliced tomatoes, basil, parsley and wine and simmer for 15-20 minutes.
  • 4. Pour over pasta, toss, and serve!

3 ripe tomatoes, chopped
1/3 cup thinly sliced fresh basil
1 Tbsp. olive oil
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
8 oz. rotini pasta, uncooked
3/4 cup KRAFT Reduced Fat Parmesan Style Grated Topping

Steps:

  • Mix tomatoes, basil, oil, garlic, salt and pepper.
  • Cook rotini as directed on package; drain.
  • Toss rotini with tomato mixture and grated topping. Serve immediately.

1 tablespoon olive oil
1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic whole peeled tomatoes, undrained, cut up
1/4 cup chopped fresh basil leaves
3 cups uncooked rigatoni, penne or ziti pasta (8 oz)
8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
1/4 cup pine nuts, toasted

Steps:

  • In 12-inch skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is crisp-tender. Stir in tomatoes. Heat to boiling. Reduce heat; simmer uncovered 20 to 25 minutes, stirring occasionally, until thickened. Stir in basil.
  • Meanwhile, cook and drain pasta as directed on box.
  • Stir pasta into sauce. Cook until thoroughly heated. Into large serving bowl, pour pasta and sauce. Gently stir in cheese and pine nuts.

QUICK TOMATO-BASIL PASTA WITH FRESH MOZZARELLA image

3 tablespoons extra virgin olive oil
4 cloves garlic , minced
1/4 teaspoon red pepper flakes
1 can (28 ounces) crushed tomatoes
1 can (14 1/2 ounces) diced tomatoes
5 tablespoons roughly chopped fresh basil
1/4 teaspoon sugar
Table salt
1 pound campanelle or fusilli pasta
8 ounces fresh mini mozzarella balls, drained and cut in half
1/3 cup grated Parmesan cheese

Steps:

  • 1. Bring 4 quarts water to boil in large pot. 2. Meanwhile, heat 2 tablespoons oil, garlic, and pepper flakes in medium saucepan over medium heat until fragrant but not brown, about 2 minutes. Stir in crushed and diced tomatoes, bring to simmer, and cook until slightly thickened, 15 to 20 minutes. Stir in 3 tablespoons basil, sugar, and 1/2 teaspoon salt. 3. Add 1 tablespoon salt and pasta to boiling water. Cook until al dente. Reserve 1/4 cup cooking water, drain pasta, and transfer back to pot. Stir in sauce and remaining tablespoon oil, and cook over medium heat until heated through (adding reserved water if pasta seems dry), about 1 minute. Stir in mozzarella and season with salt. Serve, sprinkling with remaining 2 tablespoons basil and Parmesan.
