1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

I make this in the summer when the berries are fresh and juicy. I have tried many strawberry pie recipes but this one is the best imo. Chill time is 4 hours.

2 tablespoons powdered sugar
1 9 inch pie shell, baked and cooled
4 cups fresh strawberries, hulled
1 cup sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
2 cups whipping cream
2 tablespoons sugar

Steps:

  • Sprinkle the powdered sugar over the cooked pie crust.
  • Fill pie crust with 2 cups of the largest berries.
  • In a saucepan, crush the remaining 2 cups berries (I use a potato masher).
  • Add in sugar and cornstarch; stir to combine.
  • Cook and stir constantly over medium heat for 8-10 minutes or until the mixture is thickened and clear.
  • Add in lemon juice; stir.
  • Remove pan from heat and cool slightly.
  • Pour berry mixture over the berries in the pie crust.
  • Cover and refrigerate for 4 hours.
  • Before you are ready to serve, prepare whipped cream as follows: Add whipping cream to a mixing bowl; whip, using an electric mixer.
  • Gradually add in sugar and whip until peaks form.
  • Spoon whipped cream over pie wedges if desired.

From a Houston Junior League cookbook, this is by far my favorite way to eat fresh strawberries. Quick, fresh, sweet and not at all gloppy. I think it's better when eaten right away than when chilled. If you purchase the red gloppy substance sold in your grocer's produce section to make strawberry shortcake or pie, please stop!!! This recipe can also be used as a quick strawberry shortcake or poundcake topping. You'll be suprised at the bright red color without food coloring, corn syrup or other nasty things that detract from beautiful fresh berries.

3 tablespoons cornstarch
1 quart fresh strawberries
1/2 cup water
2 teaspoons lemon juice
1 (9 inch) baked pie shells
whipped cream (I use 1 c whipping cream with 2 T powdered sugar)

Steps:

  • Mix sugar, cornstarch, 1/2 c of the strawberries, crushed, water and lemon juice in a saucepan. Cook until thickened. Chill.
  • Fill cooled pie shell with remaining strawberries, halved, and cover with cooked mixture.
  • Top with whipped cream. Chill.

2 ½ quarts fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
1 cup boiling water
1 (3 ounce) package strawberry flavored Jell-O®

Steps:

  • In a saucepan, mix together the sugar and corn starch; make sure to blend corn starch in completely. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature.
  • Place strawberries in baked pie shells; position berries with points facing up. Pour cooled gel mixture over strawberries.

1 ¼ cups white sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
4 cups fresh strawberries
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
  • Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.

Adopted recipe. This makes a nice, full pie. I would recommend using a higher sided pie plate to avoid any spill-over. You can make the pie shell and clean and hull the berries while the sugar mix cools to save some time.Prep. time is apprx. I forgot to time myself when I made it. oops. Cooking time is actually chilling time.My girls both loved this. It was equally good with or without the whipped cream.You could top it with whipped cream and decorate with additional strawberries if desired.

The chocolate chips are optional, but they add a bittersweet flavor that tones down the sugary coconut, especially if you use chocolate with a high cacao percentage (72 percent to 80 percent). Or, for something crunchier, use chopped pecans instead of chocolate.

Unsalted butter, at room temperature, for greasing the pan
1½ cups/188 grams all-purpose flour
2 tablespoons/25 grams granulated sugar
½ teaspoon fine sea salt
¾ cup/170 grams unsalted butter
3 large eggs
1 1/3 cups/267 grams granulated sugar
½ cup/113 grams unsalted butter, melted and cooled
½ cup/118 milliliters unsweetened coconut milk or whole milk
2 teaspoons apple cider vinegar or 1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon zest (optional)
1 teaspoon vanilla extract
½ teaspoon fine sea salt
1 packed cup/100 grams shredded sweetened coconut
1/3 cup/54 grams bittersweet chocolate chips, preferably 72 percent to 80 percent cacao (optional)

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch square pan and line with parchment, leaving some overhanging.
  • In a food processor, pulse together flour, sugar and salt. Pulse in butter until crumbs form and the dough starts to come together. Press mixture into the prepared pan in an even layer. Bake until firm on top and lightly golden at the edges, 20 to 25 minutes. Transfer to a rack. You can bake the crust up to 6 hours ahead, or use it while it's still hot.
  • While the crust bakes, using the same food processor (no need to wash it out first), pulse together eggs, sugar, butter, coconut milk, vinegar or lemon juice, lemon zest (if using), vanilla and salt until well combined. Pulse in the coconut. Use a spatula to fold in the chocolate chips, if using.
  • When the crust is baked, pour in the filling (crust can still be hot). Lower oven temperature to 325 degrees and bake until the filling is set when you jiggle it and the top is browned, 30 to 40 minutes.
  • Transfer to a wire rack to cool completely, then chill for at least 2 hours. Cut into bars and serve.
