FRESH SPINACH & ARTICHOKE DIP (AKA SHEEP DIP)
Adapted from Best of the Best from Colorado, this recipe is so named, according to their description, because the recipe poster's father was a sheep rancher. This is supposedly a best selling recipe on the menu at River City Cafe in Colorado. I have not tried this yet, but since any spinach dip calling for fresh spinach appeals to me, I wanted to share it. This is very different from the usual spinach dips. I have never seen another version quite like this one. I am guessing at the cook time, which I will update once I try this. This makes enough dip for your whole herd! ;). To me, this is perfect football party food!

Steps:
- Mix all ingredients except the pita triangles in a food processor and combine until dip is mostly smooth with a few chunks of artichokes.
- Heat by placing in a micro-safe dish and microwave until warmed through (5 minutes, stir, repeat several times as needed) or place in an oven safe dish and bake at 350 F until bubbly and warmed through, about 20-30 minutes or so.
- Serve with pita triangles as dippers, or whatever you prefer.

- Spinach: Clean spinach and pat dry. Toss the garlic with the spinach. Heat a large frying pan with the olive oil and carefully add the spinach and garlic. dd the salt and red pepper flakes and toss until lightly wilted. Remove from the heat and place in a colander over a bowl to drain. Dip: Place all of the above in a food processor and process until desired consistency. Serve with your favorite crackers or veggies.
ARTICHOKE DIP WITH FRESH SPINACH

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine onions, shallots, parsley, chives, sage, garlic, ginger, and rosemary leaves in the bowl of a food processor; pulse until blended. Pour olive oil in slowly, with the processor running, until pureed.
- Transfer pureed mixture to a large bowl. Add Alfredo sauce and whisk until fully combined, about 3 minutes. Whisk in cream cheese until smooth with no lumps. Stir in Italian cheese. Add spinach and artichokes and mix until all ingredients are evenly incorporated. Transfer to a baking dish.
- Bake in the preheated oven until bubbly, about 45 minutes.

FRESH SPINACH DIP
I know there are a lot of Spinach Dip recipes out there, but I love this one because you use fresh spinach. Like everything else, the flavor is so much better when you use fresh! I like using whole spinach leaves, but feel free to chop up the spinach before cooking if you like them smaller.

- 1. Preheat oven to 375 degrees. Prepare bread bowl by cutting a circle around the top (save top piece) and hollowing out inside of bread to make a bowl. In large bowl, combine all ingredients together except mozzarella cheese. Pour into bread bowl. Replace cut out top piece of bread bowl. Wrap entire bread bowl in aluminum foil. Place on cookie sheet. Bake about 1 hour or until spinach is soft and heated through. Unwrap foil, remove bread top and sprinkle with mozzarella cheese. Serve with pieces of removed bread, tortilla chips, or crackers.
FRESH SPINACH DIP
I love spinach dips, but I don't really adore frozen spinach. This recipe calls for fresh spinach and is a welcome change. Adapted from a Beter Homes & Gardens holiday issue. Start with a large bag of fresh spinach and finely chop it - once chopped, the amount of spinach you need should fill 3 cups of volume. Prep time allows for chopping the spinach. Please plan ahead -this needs several hours chilling time.

- Saute mushrooms, garlic, and onion in olive oil in a large skillet over medium heat until tender.
- Stir in vinegar, mustard, and pepper.
- Add chopped spinach and cook while stirring just 30 seconds or until spinach wilts.
- Quickly add the cream cheese and stir until melted, then immediately remove from the heat.
- Add the sour cream, 2 Tbsp milk, and the bacon crumbles and pour into a small bowl.
- Cover and chill 4-36 hours; when ready to serve check consistency- add a little extra milk if you prefer it to be a little thinner.
AUNT KATHY'S FRESH SPINACH DIP
I got this recipe from my sister Kathy- she always makes this for her card club..and she only makes it fresh every time....I was always making it with the packaged soup mix..I always wondered how her's tasted so much better--now I know....after all these years.....

- 1. Soak spinach in a large bowl of water to remove any grit, drain and repeat if necessary.
- 2. Place spinach in a saucepan, there should be enough water on the leaves -so you won't need any oil. Place the saucepan over high heat and let the spinach wilt, tossing in the pan-so as not to scorch.
- 3. When the spinach is wilted, remove from heat and place in a strainer. Drain and let cool. When cool, gather the leaves and squeeze out as much water as possible.(you will end up with just a small handfull of spinach)
- 4. Chop the spinach and place in a mixing bowl. Heat a small saute pan over medium heat and add the oil. Add the shallots and garlic and cook for 3 -4 minutes or until the shallots are golden brown.
