A pecan topping gives this Pecan Crusted Salmon a sweet and savory crust while the fish is tender and flakey. It is a delicious way to prepare baked salmon!

1 large salmon (cut into portion sized sections)
2 c. milk
1 c. finely chopped pecans
1/2 c. flour ((we use Wondra flour))
1/4 c. brown sugar
1 tsp. salt
1 tsp. seasoning salt (Lawry's)
1 tsp. pepper
vegetable oil

Steps:

  • Put salmon and milk in a ziploc bag for 10 min. Take out salmon and discard milk.
  • Combine all dry ingredients in a bowl. Completely coat salmon in dry mixture.
  • Place oil in a frying pan on med-high heat. Brown both sides (about 2-3 min each side). Place salmon on a cookie sheet lined with non-stick cooking spray and bake at 400 degrees for 8 to 10 min.

2 salmon fillets (6 ounces each)
2 tablespoons mayonnaise
1/2 cup finely chopped pecans
1/3 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley
1 tablespoon butter, melted
CUCUMBER SAUCE:
1/2 cup chopped seeded peeled cucumber
1/2 cup vanilla yogurt
1/2 teaspoon snipped fresh dill or 1/8 teaspoon dill weed
1/8 teaspoon garlic powder

Steps:

  • Place salmon skin side down in a greased 11x7-in. baking dish. Spread 1 tablespoon mayonnaise over each fillet. , In a small bowl, combine the pecans, bread crumbs, Parmesan cheese, parsley and butter; spoon over salmon. Bake at 425° for 10-15 minutes or until fish flakes easily with a fork., Meanwhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.

1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons Dijon mustard
2 tablespoons butter or 2 tablespoons margarine, melted
1 1/2 tablespoons honey
1/4 cup soft breadcrumbs
1/4 cup finely chopped pecans
1 tablespoon chopped fresh parsley
lemon slice

Steps:

  • Sprinkle salmon with salt and pepper; place, skin down, in a lightly greased 11-x7-x1 1/2-inch or 9-inch square baking dish.
  • Combine mustard, butter, and honey; brush over salmon. Combine breadcrumbs, pecans, and parsley; spoon evenly across top of salmon. Bake, uncovered, at 450 for 12-15 minutes or until fish flakes easliy when tested with a fork. Garnish, if desired. Yield: 4 servings.

2 Tbsp dijon mustard
2 Tbsp butter, melted
4 tsp honey
1/4 c plain bread crumbs
1/4 c pecans, finely chopped
2 tsp fresh parsley, finely chopped
4 salmon filets, 4 - 6 ounces each
salt and pepper to taste
lemon wedges

Steps:

  • 1. Mix together mustard, butter and honey in a small bowl and set aside. Mix bread crumbs, pecans and parsley in another small bowl and set aside.
  • 2. Season filets with salt and pepper. Place in a lightly greased baking poan and brush with the mustard mixture. Spread with bread crumb and pecan mixture.
  • 3. Bake at 450 degree oven for 10 minutes per inch of thickness or until salmon flakes when tested with a fork. Serve with lemon wedges.

3 tablespoons butter, melted
5 teaspoons honey
1/2 cup fresh breadcrumb
1/2 cup finely chopped pecans
3 teaspoons chopped fresh parsley
6 (4 ounce) salmon fillets
salt and pepper
6 lemon wedges

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
  • Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
