SHRIMP PESTO SPRING ROLLS WITH QUICK PESTO DIPPING SAUCE



Shrimp Pesto Spring Rolls with Quick Pesto Dipping Sauce image

Number Of Ingredients 23

1/2 cup fresh basil leaves
1/3 cup grated Parmesan
1 tablespoon pine nuts
1 pinch red pepper flakes
2 cloves garlic, pressed
1/3 cup olive oil
1 tablespoon lemon juice
1/2 cup mayonnaise
1/4 cup sour cream
Pinch kosher salt
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon sugar
1 clove garlic, pressed
Dash kosher salt
Dash freshly ground black pepper
8 peeled and deveined cooked shrimp (16/20 count), tails removed, halved lengthwise
1 cup shredded romaine lettuce
Four 8-inch rice paper wrappers
8 large fresh basil leaves
1/4 cup jarred roasted red bell pepper strips
1/4 cup sliced red onion
1/4 cup quartered yellow cherry tomatoes

Steps:

  • For the quick pesto dipping sauce: Add the basil, Parmesan, pine nuts, red pepper flakes and garlic to the base of a small food processor. With the processor running, drizzle in the oil and lemon juice and allow the mixture to become smooth. Scrape the sides, then add the mayonnaise, sour cream and salt and process until combined, about 1 minute.
  • For the simple lemon dressing: Add the olive oil, lemon juice, sugar, garlic, salt and pepper to a small mason jar. Secure the lid and shake to combine,
  • For the assembly: Add the shrimp to a small bowl and toss in 2 tablespoons of the lemon dressing. Set aside.
  • Add the shredded romaine to a bowl and toss with the remaining lemon dressing. Set aside.
  • One at a time, place the rice wrappers in warm water until they are soft but still hold together, about 30 seconds. Lay the wrapper flat on a plate and start by shingling 4 shrimp halves and 2 basil leaves in the center of the wrapper. Add one-quarter of the roasted peppers, onions and tomatoes. Drizzle with 2 teaspoons of the pesto dipping sauce. Finally, top with a one-quarter of the lettuce in a small line. Fold in the sides of the wrapper and roll into a tight roll. Cut in half on the diagonal. Repeat to make the other 3 rolls.
  • Dip the rolls into the pesto dipping sauce and dig in! Best if eaten within 1 hour of making.

CHICKEN WITH PESTO CREAM

1 cup fresh basil leaves
1 cup grated Parmesan cheese
3 tablespoons pine nuts
4 cloves garlic, sliced
1/3 cup extra-virgin olive oil, for pesto, plus 2 tablespoons, for chicken
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
4 tablespoons salted butter
1 small red onion, sliced
2 bunches rainbow chard, leaves torn, thick, bottom half of stalks discarded
1 lemon, juiced
1 1/2 cups heavy cream
1 cup mixed yellow and red cherry tomatoes, halved

Steps:

  • In the bowl of a food processor fitted with a metal blade, add the basil, Parmesan, pine nuts, half of the garlic, salt and black pepper and pulse to combine. With the food processor running, drizzle in the 1/3 cup olive oil until the sauce comes together and is smooth. Set aside.
  • Slice the chicken breast in half horizontally so you have 8 thinner cutlets. Sprinkle both sides of each cutlet with salt and pepper.
  • Heat 1 tablespoon each butter and olive oil in a large cast iron skillet over medium-high heat. Add half of the cutlets and cook through, 3 to 4 minutes per side. Remove to a plate. Repeat with the remaining cutlets.
  • Reduce the heat to medium and add the remaining 3 tablespoons butter and 1 tablespoon olive oil along with the red onion and remaining sliced garlic. Cook, stirring frequently, 1 to 2 minutes. Add the rainbow chard and cook, stirring, until lightly wilted, about 1 minute. Add the lemon juice and stir for an additional 30 seconds. Remove to a plate.
  • Without cleaning the skillet, add the cream and heat for 1 minute. Stir in about a third of a cup of the pesto and return the chicken to the pan. Bring to a simmer and allow to thicken, 1 to 2 minutes. (Refrigerate the remaining pesto in an air tight container for up to 5 days.)
  • Make a bed of rainbow chard on a large platter. Top with the chicken cutlets and drizzle the sauce over the top. Sprinkle with the tomatoes and serve.

2 cups packed fresh basil leaves
1 clove garlic
1/4 cup pine nuts, lightly toasted (see note)
Kosher salt and freshly ground black pepper, to taste
1/2 cup finely grated parmesan cheese
1/2 cup olive oil, more for storing

Steps:

  • Add basil leaves to a food processor or blender. Throw in grated Parmesan, pine nuts, garlic, salt, and pepper. Turn on the food processor and drizzle in enough olive oil to get it to the consistency you want. To store pesto, add a thin layer of extra olive oil to the top (to prevent any air from getting to it), cover with a lid or plastic wrap and refrigerate 1 to 2 weeks. (You can also freeze up to 1 month). Uses for pesto: * Used it as a pizza sauce: just spread it on the pizza crust as you would regular pizza sauce. Especially perfect with veggie pizza or chicken pizza. Yum. * Stirred it into quiche filling. The quiche was filled with leeks, mushrooms, and Swiss cheese...a generous tablespoon of pesto completely transformed it. * Mixed it with heavy cream and poured it over pasta a fresh tomatoes. A triumph. * Stirred it into a chicken pasta salad: bowtie pasta, chicken chunks, lima beans, peas, carrots, corn, with a mayo/sour cream/half-and-half dressing. A generous addition of basil made it over-the-top irresistible. * Mixed it with mayonnaise for a perfect panini spread. Grilled chicken. Tomato slices. Chopped olives. Pesto mayonnaise. And the girl was so, so happy. * Added a generous amount to the sauce for my chicken parmigiana last night. A tablespoon wasn't enough. Two tablespoons wasn't enough. I think I wound up adding about 1/3 cup before it was all over...and the sauce was better than ever. I closed my eyes and gave thanks for basil.

6 tablespoons salted butter, melted
1 teaspoon Italian seasoning
3 cloves garlic, pressed
1 French loaf, halved lengthwise
1/3 cup marinara sauce
1 cup grated mozzarella
4 ounces pepperoni
1 green bell pepper, sliced into rings
1/3 cup prepared sausage crumbles
1/3 cup black olives
1/3 cup jarred jalapeno slices
1/3 cup grated Parmesan
1/2 cup ricotta
3 tablespoons prepared pesto
1 lemon, zested
1 small zucchini, sliced thin
1/2 cup jarred roasted pepper slices
4 asparagus spears, sliced into 1/2-inch segments
1 cup frozen roasted corn
1 cup goat cheese, crumbled
5 to 6 fresh basil leaves, torn

Steps:

  • For the base sauce: Place an oven rack in the center of the oven and preheat to 425 degrees F. Line a sheet pan with parchment paper.
  • Mix together the melted butter, Italian seasoning and garlic in a small bowl. Place the French bread on the prepared sheet pan cut-side up. Brush the butter mixture over the bread.
  • For the fully loaded pizza: Spread the marinara sauce over one half of the French bread. Sprinkle over the mozzarella, then top with the pepperoni, green pepper, sausage crumbles, black olives and jalapenos.
  • For the garden pesto pizza: Mix together the ricotta, pesto and lemon zest in a small bowl. Spread over the other half of the French bread. Lay on the zucchini slices, peppers, asparagus, corn and finally the goat cheese.
  • Bake until the cheeses melt and become bubbly, 12 to 14 minutes. Garnish the fully loaded pizza with the Parmesan and the garden pesto pizza with the basil. Slice and serve.

2/3 cup extra-virgin olive oil, divided
Kosher salt and freshly ground black pepper, to taste
1/2 cup freshly grated Pecorino cheese

Steps:

  • Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.
  • If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.
  • If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.
