Number Of Ingredients 12

1 cup real but­ter, soft­ened (2 sticks)
2 cups gran­u­lated sugar
6 large eggs
1/2 tsp. almond extract
2 tsp. vanilla
3 cups all pur­pose flour
1/4 tsp. bak­ing soda
1/2 tsp. salt
1/2 cup sour cream
3 cups diced fresh or frozen peaches (approx. 6-8 fresh peaches)
3 -4 Tb. butter, softened
1/4 cup granulated sugar

Steps:

  • Pre­heat oven to 350 degrees. In a 9″ - 10″ non­stick bundt pan, butter the pan well with the 3-4 Tbl covering all areas. Dust with the ¼ cup sugar, turning the pan to coat well. In a large bowl, cream the softened butter (not melted) and sugar until light and fluffy. Add the eggs one at a time, beat­ing well after each addition. Beat in the almond and vanilla extracts. In a separate bowl combine the flour, bak­ing soda and salt and mix. Add this dry mixture to batter alternately with sour cream; beating well after each addition. Fold in the peaches, careful not to break them up, but to leave them in chunks. Pour the peach bat­ter into the pre­pared bundt pan. Bake for 60-70 min­utes, or until the tooth­pick comes out almost clean. Cook­ing time will depend on oven.DSC_1971Cool for 15 min­utes before remov­ing from the pan to a serv­ing plate. This is a must at our July 4 th picnic. I have been making this cake for over 10 years and is the family favorite of all my cakes. Of this big cake I never have left overs.

1 1/2 cup(s) oil
2 cup(s) sugar
3 - eggs
2 teaspoon(s) vanilla extract
3 cup(s) self-rising flour
3 cup(s) finely chopped fresh yellow peaches
1 cup(s) chopped nuts (walnut or pecan )
1 cup(s) coconut
1 - 3oz cream cheese
5 teaspoon(s) peach juice puree
1 1/2 cup(s) powered sugar

Steps:

  • Preheat oven to 350 degrees. Mix first 8 ingredients in order. Pour into greased tube pan. Bake 1 hour. Cool 10 minutes in pan. Place on cooling rack to cool completely.
  • Mix last 3 ingredients well and spoon over cake when cooled.

This is very good! I love it when fresh peaches are in, and this makes a great dessert!

2 teaspoon(s) vanilla flavoring
3 cup(s) self-rising flour
3 cup(s) fresh peaches, peeled and diced
1 cup(s) coconut
1 cup(s) chopped nuts

Steps:

  • Mix all together in order listed. Pour into a greased 10 inch tube pan. Bake in preheated 350 degrees oven for 1 hour. Remove from oven, let stand 10 minutes. Cool completely on rack. Spoon Peach Cream Cheese Frosting on top and drizzle on sides.
  • Peach Cream Cheese Icing: 3 ounces cream cheese 6 teaspoons peach juice from 1 peach in blender 1 1/ cups powdered sugar
  • Beat cream cheese and peach juice until smooth. add powdered sugar gradually. Beat until creamy. Put on top of cake and drizzle down the sides.
