BEN & JERRY'S FRESH GEORGIA PEACH ICE CREAM

The best way to capture the elusive flavour of summertime. Ben and Jerry prefer small peaches because they have more flavor and less water than the larger ones. Prep is 2hrs 15 mins which is almost all chill time. Freezing time is however long it takes for your ice cream maker to freeze it.

Number Of Ingredients 6

2 cups peaches, finely chopped
1 1/4 cups sugar
1/2 lemon, juice of
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
  • Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
  • Remove the peaches from the refrigerator and drain the juice into another bowl.
  • Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
  • Whisk in the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk and whisk to blend.
  • Add the peach juice and blend.
  • Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.
  • After the ice cream stiffens (about 2 minutes before if is done) add the peaches, then continue freezing until the ice cream is ready.
  • Makes 1 generous quart.

If you prefer a firmer ice cream, you can chill it for an extra cycle in your ice cream machine or place it in a bowl in your freezer for an hour before serving. Prep time includes the 1 hour chilling time and the 1/2 hour beat/freezing time.

1 1/2-2 cups fresh pureed peaches (about 4-6 peaches)
2/3 cup sugar
1 1/2 cups half-and-half cream
1/2 teaspoon vanilla
1/2 teaspoon almond flavoring (extract)
1 1/2-2 cups fresh pureed peaches (about 4-6 peaches)
8 (1 g) envelopes Equal sugar substitute (sugar substitute)
1 1/2 cups 1% low-fat milk
1/2 teaspoon vanilla
1/2 teaspoon almond flavoring (extract)

Steps:

  • In food processor/blender, puree peaches (peeling the peaches is optional).
  • Blend peach puree and all ingredients until very smooth.
  • Chill ice cream mix until cold, about 1-2 hours.
  • Pour mix into your ice cream machine and process according to manufacturer's directions.
  • It may be necessary to continue the"chill/beat" cycle for 15-30 minutes after the first cycle stops.
  • Note: Since fresh Peach Ice Cream is very soft, it maybe necessary to let it"ripen" in your ice cream maker for an additional 45 minutes (or place in a bowl in freezer) if you prefer a firmer ice cream.

Ice cream
1 1/2 cups whipping cream
1 cup half and half
3/4 cup sugar
5 large egg yolks
1 pound peaches, peeled, sliced
1/4 cup light corn syrup
1/2 teaspoon vanilla extract
Compote
4 large peaches, peeled, sliced
1/2 cup Essencia (orange Muscat wine) or late-harvest Riesling
1/2 cup sugar
2 teaspoons fresh lemon juice

Steps:

  • For ice cream:
  • Bring 1 cup cream, half and half, and 1/2 cup sugar just to simmer in medium saucepan. Whisk yolks in medium bowl; gradually whisk in cream mixture. Return mixture to saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 4 minutes (do not boil). Strain into bowl. Refrigerate custard until cold, about 3 hours.
  • Place peaches, corn syrup, and 1/4 cup sugar in medium saucepan. Stir over medium heat until peaches are heated through, about 4 minutes. Mash to coarse puree. Cool completely. Stir into custard along with vanilla and 1/2 cup cream.
  • Process custard in ice cream maker according to manufacturer's instructions. (Ice cream can be made 3 days ahead. Cover and freeze.)
  • For compote:
  • Mix all ingredients in medium bowl. Let stand 10 minutes and up to 1 hour, tossing occasionally.
  • Serve ice cream with compote.

1 cup sugar
2/3 cup evaporated milk
1 1/2 cups whole milk
2 eggs
1 large fresh peach, pitted, skinned, and pureed
1/2 cup peach soda (preferabley Nehi)
1 pinch salt

Steps:

  • Put sugar, evaporated milk, 1/2 cup of the whole milk, and eggs into a medium saucepan and whisk until well combined. Cook over medium-low heat, stirring constantly, until thickened, about 30 minutes. Strain the mixture through a fine-mesh sieve into a large cowl and set aside to let cool.
  • Once mixture has cooled, add pureed peach, peach soda, remaining whole milk, and a pinch of salt and stir well to combine.
  • Pour mixture into an ice cream maker and process according to the manufacturer's directions. Transfer ice cream to a sealable freezer-safe container and freeze.

8 egg yolks
1 cup sugar
1/4 teaspoon salt
2 cups milk
2 cups heavy cream
3 medium peaches, peeled, pitted, and mashed
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan whisk together egg yolks, sugar, and salt. Gradually wisk in milk. Cook over medium heat, stirring constantly until custurd thickens slightly and coats the back of the spoon, 10 to 12 minutes.
  • Pour custurd into a medium bowl set over ice. Stir in cream, mashed peaches, lemon juice, and vanilla. Let stand, stirring occasionally until chilled.
  • Churn in an ice cream maker according to manufacturers instructions. Transfer churned ice cream to a plastic container and freeze until firm.
