3 cups Gold Medal™ all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 package regular active or fast-acting dry yeast
1 1/4 cups very warm water (120°F to 130°F)
2 tablespoons chopped fresh parsley
2 tablespoons shortening
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried rosemary leaves, crushed
1/2 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
Butter or margarine, softened

Steps:

  • Grease bottom and sides of 9x5-inch loaf pan with shortening or cooking spray. In large bowl, mix 2 cups of the flour, the sugar, salt and yeast. Add water, parsley, shortening, rosemary and thyme. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour until completely mixed.
  • Smooth and pat batter into pan, using floured hands. Cover; let rise in warm place about 40 minutes or until dough has doubled in size.
  • Heat oven to 375°F. Bake 40 to 45 minutes or until loaf sounds hollow when tapped; remove from pan to cooling rack. Brush loaf with butter; cool.

430 g (15.2 oz/ 3 2/3 cups) plain flour/ all purpose flour (plus extra for dusting)
2 tablespoons sugar
1 teaspoon salt
2 tablespoons olive oil (plus extra for greasing)
250 ml (8.5 fl.oz/ 1 cup) lukewarm water
2½ teaspoons dry yeast ((1 package of dry yeast (7 g/ 0.25 oz)))
2 tablepoons flour ((to dust the working surface))
60 ml (2 fl.oz/ 1/4 cup) olive oil
110 g (3.9 oz/ 1 cup) grated cheese (mild)
1/2 teaspoon salt
3 garlic cloves
4 tablespoons fresh parsley (chopped)
3 tablespoons fresh chives (finely chopped)

Steps:

  • Grease the cake tin with oil, including the sides and line the bottom with parchment paper. If you're using a Bundt pan or bread pan, line the pan with parchment paper. Add 2 tablespoons flour (from 430 g (15.2 oz)), yeast, sugar to lukewarm water. Using a spoon stir well and let the mixture stand for 10 minutes.
  • Meanwhile mix the remaining flour, salt and olive oil in a bowl until well combined. After 10 minutes, pour the yeast mixture to the flour - salt mixture and knead the dough very well. I normally knead my dough like this: If I'm kneading it with the hand mixer, I knead the dough for about 8 minutes at low speed and then for 5 minutes at medium high speed. With the kitchen machine, I knead the dough for 7 minutes at low speed and for 3 more minutes at medium high speed. With the hands, I knead the dough for 10 minutes. If the dough is too sticky when kneading with your hands, just oil your hands.
  • In the meantime rinse and finely chop fresh parsley and chives. Peel and finely chop garlic cloves as well. Grate the cheese if you're using ungrated cheese. In a second bowl combine chopped herbs, garlic, cheese and olive oil. Mix well using a spoon and season with salt.
  • Lightly flour the silicone pastry mat or cutting board. Tip the dough out of the bowl onto a floured surface and carefully shape it into a long baguette form. You want to retain the air bubbles in the dough intact so that you'll have a nicely fluffy bread.
  • Cut baguette (long) loaf into approximately 10 equal rolls - cut it in the middle first. This makes it easier to cut equal rolls. Roll each dough roll in the cheese mixture and arrange it in the prepared cake tin or bread pan. If you have some cheesy herb mixture remaining, just sprinkle this on top. Cover the bread pan with kitchen towel and let rise for another 30 minutes. Preheat the oven to 200 ° C (392 °F), with both top and bottom heat.
  • Bake for 30 minutes or until nicely golden brown. If you're using a smaller bread dish, just be sure to increase the baking time. Because the smaller the baking dish, the longer the baking time. Also try to use a toothpick or a fork to check the bread for doneness

Posted in reply to a message board request. This is the recipe I used (over 40 years ago) when I made my first loaf of yeast bread. Its very simple to make, and produces a good, basic white bread for sandwiches and/or toast. If memory serves, the recipe was from the side of the Hecker's Unbleached Flour sack. Prep Time does not include the 1 to 2 hour rising time.

1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water (110°-115°F)
3 cups all-purpose unbleached white flour (or unbleached white "bread flour")
2 tablespoons soft unsalted butter
2 teaspoons salt
2 tablespoons sugar
unsalted butter, for brushing the top crust (optional)

Steps:

  • In a large bowl, dissolve yeast in warm water.
  • Stir sugar into yeast/water mixture, let mixture sit until tiny bubbles start to form.
  • Add butter, salt and half the flour.
  • With electric mixer on medium speed, beat batter for 2 minutes.
  • Add remaining flour, stirring by hand (or on low speed) until well blended and smooth (batter will be very thick, like a very soft dough).
  • Cover bowl with a tea towel, and let the batter rise in a warm draft free place for 30-60 minutes or until doubled.
  • Beat the batter by hand, about 25 strokes (the dough will deflate).
  • Spread batter evenly into a greased 8x3 or 9x4 inch loaf pan.
  • Smooth out the top of the loaf by patting it with your floured hand.
  • Cover pan, and let batter rise again (about 30-60 minutes) until dough has reached the top of the pan.
  • Bake in a preheated 375°F oven for 45-50 minutes, or until the loaf sounds hollow when the top is lightly tapped.
  • Remove from pan.
  • For a softer crust, brush the top of the hot loaf with butter.
  • Cool on a wire rack.
  • Bread slices best when it is cooled.

I got this recipe from a local newspaper 30 years ago. It was my first ever bread, and has been a consistent blue ribbon winner at the county fair. Because it takes about 2 hours, start to finish, I have "assembly lined" making large quantities. When the first loaf is in the second rising, begin the next loaf. I've made this with a mixer and dough hooks, and with a bowl and a wooden spoon.

4 cups flour
3 tablespoons sugar
3 tablespoons salt
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon thyme (leaves, not powder)
2 (2 ounce) packages active dry yeast (or 2 TBSP bulk yeast)
1 cup milk
1 cup water
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Put the milk, water and butter (or margarine) in a small saucepan over low heat to warm.
  • Butter or margarine does NOT need to melt.
  • In a large bowl, combine 1 cup flour, the sugar, salt, basil, oregano, thyme and dry yeast.
  • Stir dry ingredients to mix well.
  • Add warm liquid ingredients and beat until well blended.
  • Add flour, 1/2 to 1 cup at a time, and continue beating until well blended.
  • Cover bowl with a towel and set in a warm place to rise for about 40 minutes, or until doubled.
  • Grease a 9 x 3 x 5 inch loaf pan with butter or margarine.
  • Stir batter down and beat for about one minute, then pour into the loaf pan.
  • Let rise, uncovered, for about 30 minutes, or until doubled.
  • Bake at 375 degrees for 40 to 50 minutes.
  • When done, remove from pan, cool and slice to serve.

1 baguette

Steps:

  • Combine unsalted butter, parsley, and oregano to make the herb butter. Make a slit in the baguette 3/4 of the way through, making sure not to cut all the way through. Spread some herb butter into each of the openings between the slices.
  • Preheat the oven to 375 degrees.
  • Wrap the baguette in aluminum foil and bake it for 15 to 20 minutes.
