FRESH GREEN BEAN BUNDLES
A great way to fix green beans, one of my favorite vegetables. These can be prepared using French-style green beans, frozen or canned, as a substitute. Just be sure to skip the blanching step of the recipe.

Steps:
- Preheat oven to 350 degrees; line a rimmed baking sheet with heavy-duty aluminum foil.
- In large saucepan, combine beans and water to cover.
- Bring to a boil over medium-high heat; reduce heat, and simmer 3 minutes; drain; plunge beans into ice water to stop the cooking process and drain again.
- Wrap about 5 beans in 1 slice bacon.
- Place seam side down on prepared baking sheet.
- Repeat process with remaining beans and bacon.
- In small bowl, combine brown sugar, chili powder and butter.
- Spoon mixture over green bean bundles.
- Bake 30-40 minutes, or until bacon is crisp.
- Serve immediately.

I have seen alot of recipes for these with brown sugar, salad dressing, canned green beans etc. I say keep it simple. They taste great without all the added stuff.

Steps:
- 1. Preheat oven to 450 degrees. Cover cookie sheet with foil. If u have a rack to fit cookie sheet put it on top.
- 2. Prepare green beans by snipping the ends off but leave them whole. Place in saucepan and add water and salt. Cover with lid & bring to boil. Cook 5 min. Rinse with cold water until cooled off. Dry off with towel. Slice each bacon piece in half. Wrap a bundle of green beans(6-8) with a piece of bacon. Lay on rack bacon end down.
- 3. Bake for 15 minutes. Turn on broiler and broil until bacon is crispy. Turn over with tongs and broil another 5 minutes. The bacon flavors the green beans so much, you need nothing else on them. Enjoy!.
FRESH GREEN BEAN AND PIMIENTO BUNDLES

- In a large skillet, bring the water to a simmer over medium heat. Add the green onion tops and cook just to soften, about 10 seconds. Remove with a slotted spoon and reduce the heat to low. To make 12 bundles, tie 8 green beans and 3 pimiento or roasted red pepper strips together with a green onion top. Place the bundles in the water, raise the heat to medium-low, and cover. Cook until the beans are crisp tender and bright green, about 5 minutes.
