2 tbsps fresh ginger, minced
375 ml sweet white wine, like a Niagara

Steps:

  • Combine wine and ginger in a saucepan and cook over medium-high heat until reduced to about half. Remove from heat and cool. Combine fruit and cooled wine syrup, toss gently to mix. Let stand for 1 hour.

1 ¼ cups dry white wine
⅓ cup white sugar
1 tablespoon chopped fresh mint
½ cantaloupe, cut into bite-size pieces
1 cup seedless green grapes, halved
1 pint fresh strawberries, hulled and halved

Steps:

  • Combine the wine and sugar in a saucepan. Place the saucepan over medium heat and bring to a boil; stirring to dissolve sugar. Remove the saucepan from the heat and add the mint; set aside.
  • Combine the cantaloupe, grapes, and strawberries in a large bowl. Pour the wine mixture over the fruit; toss together until all the fruit is covered with the wine mixture; cover and chill. Store in the refrigerator up to 8 hours before serving.

4 -6 cups fresh fruit, cut to bite size
1 cup fresh orange juice
1/3 cup Splenda sugar substitute

Steps:

  • Cut fresh fruit into bite sized pieces (I use melon, peaches, apples, plums, grapes, etc).
  • Mix the orange juice and Splenda together until the Splenda is well dissolved.
  • Pour the orange juice mixture over the fruit, cover and chill for several hours.
  • This is great for fruit that isn't quite as sweet as you like it, and is very refreshing for an addition to any meal.

This is just to die for!! I've never served this without someone wanting the recipe, but more than that, they want to take leftovers home! (That's why I always make a double batch!). It's a simple make-ahead sauce and can be used for dessert or breakfast. It's a great presentation when served in a wine or martini glass. I got this recipe from Bon Appetit magazine in 1995.

10 ounces cream cheese, room temperature
1 cup sour cream
1/2 cup powdered sugar
6 tablespoons powdered sugar
1/2 cup whipping cream
2 tablespoons Grand Marnier (I usually double this)
8 cups fresh fruit

Steps:

  • Combine first 5 ingredients and 2 tablespoons Grand Marnier in processor. Blend until smooth.
  • Taste and add more Grand Marnier, if desired.
  • Transfer mixture to bowl and refrigerate until cold, about one hour. (Can be prepared 1 day ahead. Keep refrigerated.).
  • Divide fruit among 8 stemmed goblets.
  • Top with sauce and serve.
  • Note: Use any fresh fruit in season that you like. It's especially good with strawberries, grapes, and blueberries.

6 quarter-size pieces fresh ginger
2 medium nectarines, halved, pitted, thinly sliced
2 medium peaches, peeled, halved, pitted, thinly sliced
1 1/2 1/2-pint baskets fresh raspberries
6 fresh or dried figs, quartered

Steps:

  • Combine wine, 1 1/2 cups water, sugar, and ginger in medium saucepan. Simmer over medium heat until reduced to 2 cups, about 16 minutes. Cool. Refrigerate until cold, about 1 hour. Remove and discard ginger.
  • Place fruit in large bowl. Add syrup; toss to coat. Cover; chill at least 2 hours and up to 4 hours before serving.
