1 celery rib, chopped
1 small onion, chopped
1/4 cup chopped green pepper
2 tablespoons butter
4 cups chopped seeded peeled tomatoes
2 cups chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon white pepper
2 cups fresh sweet corn
1 tablespoon minced fresh basil
2 tablespoons minced fresh parsley
1 green onion, finely chopped

Steps:

  • In a large saucepan, saute the celery, onion and green pepper in butter until tender. Stir in tomatoes and broth. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Press through a sieve or food mill; return to the pan. Add the sugar, salt and white pepper. Bring to a boil. Stir in corn and basil. Reduce heat; simmer, uncovered, for 3-5 minutes or until corn is tender. Garnish with parsley and green onion.

4 corn cobs
5 cups water
3 tablespoons olive oil
1 chopped sweet onion
3 cloves garlic, chopped
1/4 cup cornmeal
2 chopped tomatoes
2 peeled, chopped potatoes
Chopped parsley

Steps:

  • Remove the kernels from the ears of corn and set aside.
  • Place the 4 stripped corn cobs in 5 cups water in a large pot (you can add a whole onion here - don't bother to peel it - or a sprig of rosemary, tarragon or oregano, if you'd like). Bring to a simmer and cook for 15 minutes, then remove cobs and any onion or herbs.
  • In a skillet, heat olive oil. Sauté sweet onion and garlic in olive oil until soft. Add 1/4 cup cornmeal and cook, stirring, about 5 minutes.
  • Add onion, garlic and cornmeal mixture to broth. Add tomatoes, potatoes and reserved corn. Cook until potatoes are fork tender. Season to taste with salt and pepper.
  • Garnish with chopped parsley and serve.

Yield Makes 8 cups

Number Of Ingredients 9

2 ounces (4 tablespoons) unsalted butter
2 medium onions, diced (2 1/2 cups)
2 teaspoons fresh thyme
Coarse salt and freshly ground pepper
10 cups fresh corn kernels (from 8 large or 10 to 12 medium ears corn)
4 to 5 cups water
3 medium tomatoes, cut into 1/4-inch dice (3 cups)
1/4 cup shredded fresh basil
3 tablespoons extra-virgin olive oil, plus more for drizzling

Steps:

  • Melt butter in a stockpot over medium-high heat. Add onions, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper, and cook until onions are translucent, about 5 minutes. Stir in corn and 4 cups water. Bring to a boil. Reduce heat, and simmer, covered, for 5 minutes.
  • Working in batches, pulse mixture in a food processor or blender until chunky (for a finer consistency, strain half of the mixture through a coarse sieve after pulsing). Thin with up to 1 cup water if desired. Reheat soup before serving. Toss together tomatoes, basil, and oil. Season with salt and pepper. Garnish soup with tomato mixture, and drizzle with oil.

Roasted Corn Guacamole
Kernels from 3 ears fresh corn, or 2 cups frozen corn, defrosted
1 tablespoon olive oil
Salt and black pepper
1 tablespoon finely chopped red onion
2 tablespoons fresh cilantro, finely chopped
1 lime, finely grated zest and juice
1 jalapeño, stemmed and seeded, finely chopped
1 avocado, pitted and chopped
Soup
Kernels from 5 ears fresh corn, or 3 cups frozen corn, defrosted
2 tablespoons olive oil
1 clove garlic, crushed
1/2 red onion, chopped
1 jalapeño, stemmed and chopped
Salt and black pepper
1 1/2 cups chicken broth
Cilantro sprigs, to garnish

Steps:

  • Roast the Corn for the Guacamole
  • Preheat the oven to 450°F. Prepare a baking sheet by lining it with parchment paper or aluminum foil.
  • Put the corn kernels on the baking sheet and toss with the oil, 1/4 teaspoon salt, and black pepper to taste. Spread the corn out evenly on the baking sheet and roast for 20 minutes, until the corn turns a golden brown. It may seem that you have left the corn in the oven for too long, but you want the corn to caramelize and get a little crunchy. Remove the corn from the oven and set aside.
  • Prepare the Corn for the Soup
  • Put the kernels (fresh or frozen and defrosted) in a blender.
  • Combine the oil and the garlic in a soup pot over medium heat. Add the onion and jalapeño. Season with salt and pepper and sauté until the vegetables are soft and translucent, about 6 minutes. Transfer the vegetables to the blender and puree until smooth. (You may need to pulse or stir the corn mixture in order to achieve a smooth consistency, but do not add any more liquid.)
  • Simmer the Soup
  • Pour the corn puree into the soup pot and place over medium heat. Stir constantly for a few minutes, until the soup begins to thicken. Slowly whisk or stir in the chicken broth. Bring to a boil, decrease the heat to a simmer, cover, and cook for 15 minutes.
  • Finish the Roasted Corn Guacamole
  • In a bowl, combine the roasted corn, red onion, cilantro, lime zest and juice, and jalapeño. Gently stir in the avocado. Season with salt and pepper.
  • Serve and Garnish
  • Ladle the soup into soup bowls. Place a generous spoonful of the guacamole in the center of each bowl. Garnish with a small sprig of cilantro placed in the center of each.

2 cups chopped ripe plum tomatoes (about 14 ounces)
1 1/2 cups V8 vegetable juice
1 cup frozen corn kernels, thawed
2 green onions, finely chopped
1/4 cup chopped green bell pepper
2 tablespoons finely shredded fresh basil or 1 teaspoon dried, crumbled
2 large garlic cloves, minced
Hot pepper sauce (such as Tabasco)
1/4 cup plain low-fat yogurt
Chopped fresh basil or parsley

Steps:

  • Combine tomatoes and juice in large bowl. Add corn, green onions, bell pepper, 2 tablespoons basil and garlic and blend well. Season to taste with hot pepper sauce, salt and pepper. Chill at least 15 minutes and up to 2 hours.
  • Ladle soup into four bowls, dividing evenly. Garnish with yogurt and chopped basil and serve.

8 cups corn kernels (cut from 10 to 14 ears)
6 cups water
1 tablespoon kosher or coarse sea salt
1/4 cup chopped fresh chives

Steps:

  • Simmer corn with salt in the water, covered, 20 minutes, or until very tender.
  • Purée soup in batches in a blender until very smooth (use caution when blending hot liquids). As each batch is puréed, pour through a coarse sieve, pressing on solids, into a saucepan if serving hot or into a metal bowl if serving cold.
  • Reheat soup, stirring, or chill it by setting bowl of soup in a larger bowl of ice and cold water and stirring. If soup is too thick, thin with water.
  • Serve sprinkled with chives.

FRESH TOMATO SOUP WITH SWEET CORN SAUCE

This cold soup is as appealing to look at as it is to eat. Serve with fresh bread and follow with a pasta salad for a light summer meal. Use really lush, ripe (even overripe is fine) tomatoes for best results.

Number Of Ingredients 15

2 tablespoons extra-virgin olive oil
2 large onions, chopped
2 cloves garlic, minced
2 large celery stalks, peeled and diced
2 cups water
2 pounds ripe tomatoes, chopped
1 medium potato, scrubbed and finely diced
2 tablespoons chopped fresh dill
1 teaspoon salt-free seasoning (see page 4 for brands)
4 large ears fresh corn
1/2 cup Silk creamer
1 1/2 to 2 cups salt-free tomato juice, as needed
1 tablespoon lemon juice, or to taste
Salt and freshly ground pepper to taste
Fresh herb or herbs of your choice (parsley, dill, oregano, etc.) for garnish

Steps:

  • Heat the oil in a soup pot. Add the onions, garlic, and celery and sauté over medium-low heat, stirring frequently, until all are golden. Add the water, tomatoes, and potato. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the potato is tender, about 15 to 20 minutes.
  • Add the dill and seasoning, and simmer for 5 minutes longer. Remove from the heat and allow to cool to room temperature.
  • Meanwhile, cook the corn until just tender, then drain and allow it to cool. When cool enough to handle, scrape the kernels off the cobs with a sharp knife. Combine the corn kernels with the creamer in a food processor and process until smoothly pureed. Place in a container and refrigerate until needed. Once the tomato mixture has cooled, puree it in batches in a food processor until smoothly pureed, then return to the soup pot. Or insert an immersion blender into the soup pot and process until well pureed.
  • Add enough tomato juice to give the soup a slightly thick consistency. Stir in the lemon juice and season with salt and pepper. Refrigerate until chilled. To serve, fill each serving bowl about three-quarters full with the tomato soup. Place a ladleful of the sweet corn sauce in the center of each bowl, and garnish each serving with a sprinkling of fresh herbs.

4 cups corn kernels, if frozen, defrosted
1 onion, chopped
3 tablespoons butter
salt
4 cups chicken stock
1 cup sour cream
6 tablespoons cottage cheese or 6 tablespoons cream cheese, chopped
2 poblano chiles, peeled, seeded and diced or 1 (4 ounce) can california green chilies, chopped

Steps:

  • Combine the corn kernals and the onion in a food processor and process to a puree. Heat the butter in a saucepan, add the puree and cook over moderate heat, stirring, for 5 minutes.
  • Stir in the chicken stock and season with salt if necessary.
  • Simmer, over low heat, for 10 minutes longer.
  • Stir in the sour cream and simmer for a few minutes longer.
  • When ready to serve, strain the soup. Have ready 4 soup bowls, each with a tablespoon of cheese and about 2 teaspoons chili, and pour the soup which should be the consistency of heavy cream.

2 teaspoons olive oil
1 cup onion, chopped
2 teaspoons curry powder
4 cups fat-free chicken broth
3 cups corn
2 cups potatoes, peeled & diced
1 1/2 tablespoons fresh lemon juice
1 teaspoon salt
1/4 cup cilantro, chopped
1/4 cup nonfat yogurt
1/4 cup tomatoes, diced

Steps:

  • Heat oil in a large saucepan. Add onion; cover and cook over medium heat, stirring occasionally, until softened, about 5 minutes. Add curry powder and cook 30 seconds until fragrant.
  • Add broth, corn, potatoes, lemon juice and salt to saucepan; bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, partially covered, until potatoes are tender, about 20 minutes; remove from heat.
  • In a blender, food processor or using an immersion blender, puree mixture (in batches if necessary), until smooth. Strain through a fine mesh sieve into a bowl, pressing on solids to extract as much liquid as possible.

4 , poblano chile kimmy
8 ears yellow corn (medium sized)
2 cups water
1 cup canned fat-free reduced-sodium chicken broth
1 medium white onion, sliced
2 tablespoons unsalted butter
1/2 teaspoon salt, or to taste
2 cups heavy cream
4 ounces Monterey Jack cheese, cut into 1/4-inch cubes

Steps:

  • 1. Roast the chiles directly over a gas flame, or under a preheated broiler, turning frequently with tongs, until charred all over, about 3 to 4 minutes. Watch carefully to prevent charring too much, or the chiles will get too soft. Put the chiles into a plastic bag, and let steam about 5 minutes. Wearing rubber gloves, peel, seed, and chop the chiles. Set aside. 2. Cut the corn kernels from the cobs over a large bowl, and scrape the cobs to get the remaining pulp. 3. In a large soup pot, bring the water and chicken broth to a boil. Add the corn kernels, corn pulp, onion, butter, and salt. Cook 5 to 6 minutes. Remove the pan from the heat. 4. In a blender jar, purée the corn mixture and the reserved chopped chiles, in batches if necessary, until smooth. Add 1 cup of the cream, and blend again, about 30 seconds. 5. Pour the blended soup back into the same soup pot, and bring to a boil, over medium heat, stirring frequently. Reduce heat to low, and stir in the remaining 1 cup of cream and cook, uncovered, stirring frequently, until steaming hot, 3 to 4 minutes. Adjust seasoning.
