1 package (8 ounces) cream cheese, softened
2 large eggs
1/3 cup sugar
2-1/3 cups fresh, frozen or canned sweet corn
1 can (14-3/4 ounces) cream-style corn
1 package (8-1/2 ounces) corn bread/muffin mix
1 cup whole milk
2 tablespoons butter, melted
1 teaspoon salt
1/2 teaspoon ground nutmeg

Steps:

  • In a small bowl, beat the cream cheese, eggs and sugar until blended. Stir in the remaining ingredients. , Transfer to a greased 13x9-in. baking pan. Bake at 350° for 45-50 minutes or until a thermometer reads 160°.

2 large eggs
1 cup sour cream
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1/2 cup butter, melted
1 package (8-1/2 ounces) cornbread/muffin mix
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in cornbread mix just until blended. Pour into a greased 3-qt. baking dish. Sprinkle with paprika. , Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve warm.

½ cup butter
2 eggs, beaten
2 teaspoons salt
2 tablespoons white sugar
ground black pepper to taste
2 cups milk
¾ cup all-purpose flour
2 cups fresh corn

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in a 9x13 inch baking pan and set in oven to melt.
  • In a medium bowl, whisk together eggs, salt, sugar, pepper, milk and flour. When mixture is smooth, stir in corn. Remove pan from oven when butter is melted. Pour butter into corn mixture and stir well. Pour corn mixture into baking pan.

1/2 onion, diced fine
1-ounce unsalted butter
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 (15-ounce) can creamed style sweet corn
1 cup heavy cream
2 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal, whole grain, stone ground
1/2 cup shredded Parmesan cheese
1 teaspoon kosher salt
Ground black pepper to taste
2 cups French bread, cubed

Steps:

  • Heat oven to 350 degrees. Sweat onions with butter and herbs in an oven safe skillet until translucent.
  • Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

This dish transforms frozen corn into a decadent and richly flavored dish with just a bit more work than setting a pot of water to boil.

4 poblano peppers
1 cup milk
½ cup heavy whipping cream
3 eggs
⅓ cup white sugar
¼ cup all-purpose flour
¼ cup butter, melted and cooled

This recipe is based on another parmesan peppercorn ranch recipe I found. I realized I was eating it so much that I should really try to make it healthier. So I fiddled with the ingredients until I came up with this version. It isn't quite as amazing as the original, but it is good enough for daily use (and I'm pretty picky). It really works well for all kinds of things besides salad. Left thick it makes a great dip for fried zucchini and I like to add some extra lemon juice to it and then toss chopped chicken in it to make a ranch flavored chicken salad to stuff in pita pockets. Try it for yourself! :)
